AB - The aim of this study was to identify the bioactive phytoconstituents present in the aqueous extract of Nigella sativa and also, to evaluate the antioxidant and antihyperlipidemic activity in Wistar rats. The LC-MS/MS analysis was assessed for the determination of different bioactive compounds present in N. sativa extract. Total phenolic and flavonoid content were determined by using validated Folin-Ciocalteu and Aluminum chloride colorimetric methods, respectively. The in-vitro antioxidant and in-vivo antihyperlipidemic activity in Wistar rats were also evaluated. Preliminary phytochemical screening of the extract showed the presence of alkaloids, flavonoids, phenols, glycosides, and amino acids in the aqueous extract. The bioactive compounds of the aqueous extract were identified through LC-MS/MS analysis. The in-vitro antioxidant activity of N. sativa showed the highest free radical scavenging capacity in DPPH, H2O2, and OH radical scavenging assays with IC50 values 11.916 ± 2.828, 30.294 ± 13.790, and 12.048 ± 2.828 µg/mL, respectively. Evaluation of antihyperlipidemic activity of extract in Wistar rats showed that a high dose (800 mg/kg) of extract significantly decreased total cholesterol (TC) 71.76 ± 6.91 mg/dL, TG 83.6 ± 8.09 mg/dL, low-density lipoproteins (LDL-c) 33.86 ± 6.05 mg/dL, very low-density lipoproteins (VLDL-c) 16.72 ± 1.61 mg/dL level in blood. However, the HDL-C level was significantly improved (21.18 ± 1.80 mg/dL) as compared to HFD-induced control rats (11.76 ± 1.14 mg/dL) after 28 days of treatment. Also, at the same dose, animal body weight was also decreased to 162.6 ± 16.40 g compared with control 184.4 ± 10.24 g. The aqueous extract of N. sativa was found to be an effective natural source of antioxidant and hypolipidemic agents. This activity was attributed to the presence of diverse bioactive compounds in it. © 2023 The Authors. eFood published by John Wiley & Sons Australia, Ltd on behalf of International Association of Dietetic Nutrition and Safety.

AB - A well-balanced diet provides many compounds with antioxidant properties, such as
vitamins, minerals, provitamins (e.g., β-carotene), and phytochemicals (e.g., carotenoids,
polyphenols, organosulfur compounds). In addition to direct antioxidants, foods indirectly
support the endogenous defense system, by providing substrates for the synthesis of glutathione,
antioxidant defense enzymes, metal-binding proteins, or modulators of redox-dependent signaling
pathways. Epidemiological studies indicate that higher intakes and circulating concentrations of
vitamins C, E, carotenoids, and flavonoids reflect a lower risk of chronic diseases and all-cause
mortality, suggesting the importance of optimal intakes of these substances. However, unlike
antioxidant micronutrients, phytochemicals have no defined recommended intake levels. A diet
should be based on consuming various plant foods (fruit, vegetables, legumes, whole grains,
seeds, nuts), antioxidant-rich beverages, and a moderate intake of animal food products to fully
exploit the health-promoting effects of dietary antioxidants.
provitamini (npr. β-karoten), i fitohemikalija (npr. karotenoida, polifenola, organosumpornih
jedinjenja).
redoks osetljivih signalnih puteva.
napitaka bogatih antioksidansima, uz umereno konzumiranje namirnica animalnog porekla, kako

AB - Herb-induced liver injury (HILI) caused by herbal supplements, natural products, and products used in traditional medicine are important for differential diagnoses in patients with acute liver injury without an obvious etiology. The root of Withania somnifera (L.) Dunal, commonly known as ashwagandha, has been used in Ayurvedic medicine for thousands of years to promote health and longevity. Due to various biological activities, ashwagandha and its extracts became widespread as herbal supplements on the global market. Although it is generally considered safe, there are several reported cases of ashwagandha-related liver injury, and one case ended with liver transplantation. In this paper, we review all reported cases so far. Additionally, we describe two new cases of ashwagandha hepatotoxicity. In the first case, a 36-year-old man used ashwagandha capsules (450 mg, three times daily) for 6 months before he developed nausea, pruritus, and dark-colored urine. In the second case, a 30-year-old woman developed pruritus after 45 days of using ashwagandha capsules (450 mg). In both cases, serum bilirubin and liver enzymes (aspartate transaminase (AST), alanine transaminase (ALT), and alkaline phosphatase (ALP) were increased. The liver injury pattern was hepatocellular (R-value 11.1) and mixed (R-value 2.6), respectively. The updated Roussel Uclaf Causality Assessment Method (RUCAM) (both cases with a score of seven) indicated a “probable” relationship with ashwagandha. Clinical and liver function improvements were observed after the discontinuation of ashwagandha supplement use. By increasing the data related to ashwagandha-induced liver injury, these reports support that consuming ashwagandha supplements is not without its safety concerns.

AB - Apart from traditional medicine use, the fruit of Lycium barbarum L., known as red goji berry or wolfberry, is recognized and consumed as a functional food. Beyond nutritional properties, goji berry exerts many biological activities and health-promoting effects due to wide-range phytochemicals. Rising global popularity and high demand have spread the production of goji berries from traditional Asian regions into various parts of the world. In addition, other native species, as Lycium ruthenicum Murr., or black goji berry, also have been started to generate attention by the scientific community as a valuable source of nutritional and functional components. This chapter reviews data on nutritional value and bioactive compounds of red and black goji berries from different regions, highlighting the influence of many pre-harvest and post-harvest factors that affect their chemical compositions, sensory quality, and bioactivities.

AB - This study aimed to characterize mixtures of goat milk proteins and Agaricus blazei Murrill (ABM) extracts (aqueous, AE and polysaccharides, PE). The mixtures showed stable particles with ζ-potential more negative than −41.1 mV. The addition of AMB extracts to goat milk did not result in a significant particle size change, whereas their addition to heated goat milk significantly increased mean particle diameter (from 194 nm to 225 nm). Fourier Transform Infrared Spectroscopy (FTIR) showed that ABM extracts provoked changes in the secondary structure of goat milk proteins and interactions between polysaccharides and milk proteins predominantly via hydrogen and/or glycoside bonds and hydrophobic interactions. The milk protein profiles revealed proteolytic activity in mixtures with AE resulting in the formation of five new polypeptides. The different microstructures of mixtures with AE and PE were found by Scanning Electron Microscopy (SEM). A schematic representation of possible milk proteins-ABM extracts interactions has been given.

abstract = "This study aimed to characterize mixtures of goat milk proteins and Agaricus blazei Murrill (ABM) extracts (aqueous, AE and polysaccharides, PE). A schematic representation of possible milk proteins-ABM extracts interactions has been given.",

AB - In recent years, many preclinical studies have provided evidence that polyphenol compounds
and their metabolites exert prebiotic-like effects by selectively stimulating intestinal bacteria
growth and/or activity [1]. In this study, we investigated the chemical composition,
antioxidant capacity, and prebiotic potential of methanol extracts obtained from Prunus
spinosa L. (blackthorn) and Lycium ruthenicum Murray (black goji) fruits. Polyphenolic
profiles were characterized by using HPLC-DAD-ESI-MS and antioxidant capacity was
estimated with DPPH•, ABTS•+, and FRAP assays. The influence of plant extracts (0.312-5
mg/L) on the growth of three probiotic lactobacilli, probiotic yeast (Saccharomyces
boulardii), and two probiotic mixtures was examined. Studied plant extracts were
characterized by different phenolic compound patterns. Hydroxycinnamic acid derivatives,
quercetin glycosides and anthocyanins were detected in blackthorn extract, while black goji
extract was characterized by the presence of hydroxycinnamic acid derivatives and acylated
anthocyanins. The blackthorn fruit extract showed higher antiradical and reduction activity
than those obtained from black goji fruits. Both extracts have influenced the growth of all
tested probiotics in a concentration-dependent manner, especially of yeast, S. boulardii. The
black goji extract had more stimulatory effects, possibly due to higher anthocyanins content.
When the black goji extract was added to the growth medium at the concentration of 5
mg/mL, about 2-fold stimulation of the growth of S. boulardii was observed. In conclusion,
extracts of the black goji and blackthorn fruits promote the growth of probiotics in vitro.
Further studies are still needed to assess the prebiotic potential of these plant extracts.

AB - Lycium ruthenicum Murray (Solanaceae), also known as black goji or black wolfberry, has
been used for centuries in traditional medicine and nutrition in Asian countries [1]. In recent
years, black goji berries have been gaining attention as one of the most valuable sources of
anthocyanins with many health-promoting effects [2]. Therefore, this study aimed to
investigate the phytochemical composition and in vitro biological properties of black goji
berry cultivated in southeastern Serbia. The total phenolics, flavonoids, anthocyanins, and
tannins content were determined spectrophotometrically. HPLC-DAD-ESI-MS analysis was
used to identify the phenolic compounds. Methanol extract from black goji berry was
screened for in vitro antioxidant (DPPH∙, ABTS∙+, FRAP, CUPRAC, and β-carotene bleaching
methods), antimicrobial, and hypoglycemic (α-amylase, α-glucosidase) potential.
Phytochemical screening of the extract confirmed the dominant presence of anthocyanins and
hydroxycinnamic acid derivatives, with petunidin 3-p-cumaroylrutinoside-5 glucoside as the
main phenolic compound [3]. The total phenolic content was 18.13 ± 0.15 mg gallic acid
equivalents/g freeze-dried sample. A high correlation is found between the total phenolic
content and the antioxidant activities using different in vitro antioxidant assays. The
antimicrobial activity of the black goji berry extract against eight laboratory control strains
was not pronounced (MIC > 2 mg/ml). The IC50 values were 6.55 ± 0.38 mg/mL and 7.37 ±
0.02 mg/ml for α-amylase, and α-glucosidase inhibition activity, respectively. Overall,
obtained results suggest that the black goji berry cultivated in Serbia should be considered a
valuable source of bioactive compounds for further use in the food, nutraceutical, and
cosmetic industries.

AB - The blackthorn is widespread across temperate Europe and also occurs in the Near East and Africa. The fruit is traditionally used in the treatment of digestive, respiratory and kidney disorders. The aim of the study was to investigate composition and the antibacterial activity of methanol extract of blackthorn fruit, and potential prebiotic effect on selected probiotic microorganisms. The blackthorn fruit is a rich source of vitamin C (5.3 mg/100 g, determinated by titration) as well as Ca, Mg and P (106.7; 42.0 and 43.2 mg/100 g, respectively, determinated by ICP-OES). The total phenolic content was 1,235 mg gallic acid/100 g (FC method). Hydroxycinnamic acid derivatives (caffeoylquinic and feruloylquinic acids), flavonoids (glycosides of quercetin, methylquercetin and kaempferol) and anthocyanins (glycosides of cyanidin and peonidin) were tentatively identified by LC-DAD-ESI-MS. The antimicrobial activity on eight laboratory control strains of bacteria was not pronounced (MIC 1.25->5 mg/ml). On the other hand the extract (0.3-5.0 mg/ml) exhibited significant prebiotic effect on investigated probiotic strains of Lactobacillus spp., Saccharomyces boulardii and their mixtures. The stimulation of growth was in the range 4.0-52.8% in concentration dependent manner. In conclusion, significant prebiotic activity of blackthorn fruit confers new insight in blackthorn health benefits.

AB - Fruits of Lycium barbarum L. (Solanaceae), known as wolfberries or goji berries, have
been long used in traditional medicine and nutrition in Asian countries. However, in recent
years, they have become popular in Europe, including Serbia. However, there are limited
data on the chemical composition of goji berries cultivated in our country. This study aimed
to estimate and perform a comparative analysis of the mineral content of goji berries from
six locations in Serbia. After microwave digestion, macro- (K, Na, P, S, Mg, Ca) and
microelement (Fe, Zn, Cu, Cr, Mn, Mo) contents in analyzed samples were determined by the
optical emission spectrometry with induced coupled plasma (ICP-OES). As expected, mineral
concentrations varied significantly among goji berry samples from different locations (p <
0.05). In general, the decreasing orders of minerals in goji berries were: K > P > S > Na > Mg >
Ca > Zn > Fe > Cu > Mn > Cr > Mo. According to the Recommended Daily Allowance (RDA)
values, dried goji berries (30 g) provide a rich source of Cr and Cu, while their contribution
to the daily intake of other minerals was below 15% RDA.
dugu istoriju upotrebe u tradicionalnoj medicini i ishrani stanovnika azijskih zemalja, a
poslednjih godina su sve popularniji u Evropi, uključujući i Srbiju.
Nakon prethodne mikrotalasne digestije, sadržaj makro- (K, Na, P,
S, Mg, Ca) i mikroelemenata (Fe, Zn, Cu, Cr, Mn, Mo) u ispitivanim uzorcima suvih plodova
jedne porcije plodova godži dnevnom unosu ostalih mineralnih materija ispod 15% NRV.

AB - Blackthorn (Prunus spinosa L.) fruit is bluish-black wild fruit traditionally used in nutrition and medicine. It is recently gaining attention as a functional food and an underutilized source of bioactive compounds for application in the food and pharmaceutical industry. This study aimed to assess the health-promoting potential of blackthorn fruits from Serbia by examining their chemical composition and in vitro biological activities. Phytochemical analysis of the blackthorn fruit extracts was performed using LC-DAD-ESI-MS. The total phenolic (TPC), total flavonoid (TFC), total anthocyanin (TAC) content, antioxidant capacity, and enzyme inhibitory activities were determined spectrophotometrically. The antimicrobial and prebiotic properties were tested using the broth microdilution method. Twenty-seven phenolics belonging to the classes of hydroxybenzoic and hydroxycinnamic acids derivatives, flavonoids, and anthocyanins were identified, with caffeoylquinic acid as the most abundant compound. Blackthorn extracts were characterized by notable TPCs, TFCs, and TACs, and free radical scavenging and reducing ability. The enzyme inhibitory effects (IC50 = 0.43–2.16 mg/mL) were observed towards α-amylase, α-glucosidase, acetylcholinesterase, and tyrosinase. Blackthorn fruit extracts in a concentration-dependent manner (0.3–5 mg/mL) stimulated the growth of several probiotic microorganisms and their mixtures, especially the yeast Saccharomyces boulardii. Obtained results support further evaluation of the functional food potential of blackthorn fruit.

AB - Besides iodine deficiency, autoimmune Hashimoto thyroiditis is the leading cause of
hypothyroidism globally, characterized by the increased titer of thyroid autoantibodies and
destruction of thyroid cells. Graves' disease is the most common etiology of hyperthyroidism
worldwide. Patients with thyroid dysfunction often require dietary modifications. Popular
interventions include supplementation with certain vitamins and minerals, as well as trace
elements such as iodine and selenium. The intake of food containing goitrogens should be limited.
Goitrogens are substances of plant origin that interfere with the production of thyroid hormones,
increasing the risk for goiter and hypothyroidism. The primary dietary sources of goitrogens are
cruciferous vegetables, soy products, starchy plants, and some fruits. Beyond essential nutrients,
there has been an increasing interest in using specific nutraceuticals, including myoinositol, L-
carnitine, melatonin, and resveratrol, as potential preventive and therapeutic agents in thyroid
diseases. Even though current evidence promotes some beneficial outcomes of these
nutraceuticals, further investigations are needed to clarify dose-dependent effects, duration of
supplementation, combination in different clinical settings, and the exact mechanism of their
action in thyroid disorders.

AB - Scope: Epidemiological evidence associates the consumption of cruciferous vegetables with reduced risk of several cancers, including renal cell carcinoma. Erucin can be generated by in vivo reduction of sulforaphane or by enzymatic hydrolysis of glucoerucin. Contrarily to sulforaphane, only limited studies have addressed the anticancer properties of erucin. This study aims at evaluating the impact of erucin on renal cell biology. Methods and Results: The effects of erucin were assessed in 786-O and Vero-E6 cells, representative of human renal cancer and non- cancer kidney cells, respectively. Erucin induced a concentration-dependent decrease in cell viability and cell cycle arrest at G2/Mitosis. In Vero-E6 cells erucin modestly reduced intracellular reactive oxygen species levels while in 786-O no effects were detected. After erucin treatment, both cell lines revealed altered morphology, with a concentration-dependent change from an elongated shape towards a smaller round conformation. Moreover, erucin affected cell adhesion and strongly altered the tubulin network structure and specifically microtubule polymerization. These results are in line with the observed decrease in collective and single cell migration and G2/Mitosis arrest. Conclusions: Overall, erucin may have a beneficial impact in reducing the motility of renal cancer cells. Our results contribute to explore possible dietary approaches for secondary/tertiary renal cancer chemoprevention.

AB - A considerable interest has been developed over the years for fruits and vegetables
consumption due to their potential biological and health promoting effects. This effect is
attributed to antioxidants. Among the most important natural antioxidants are secondary
plants metabolites, polyphenols. Epidemiological studies indicate that an increase in the
consumption of fruits and vegetables is associated with a decrease in the incidence of
various diseases. The aim of this work was to estimate the intake of polyphenols in the adult
population of the Republic of Serbia based on literature data on polyphenol content in
certain foods and intake data obtained from the Bulletin - Household Budget Survey, 2019
(Statistical Office of the Republic of Serbia), as well as literature data on intake. Based on
literature data on the content of polyphenols in different food groups, it was determined that
the following food groups can be sources of polyphenols in the diet of the Serbian adult
population: vegetables, fruits, coffee, tea, cacao, chocolate, wine, nuts, and fruit juices. Using
the Statistical Office of the Republic of Serbia data, as well as the literature data on the
content of polyphenols in foods that are the major sources of polyphenols in the diet of the
adult Serbia population, the polyphenol intake was estimated. The daily intake of
polyphenols in the adult population of Serbia is about 500 mg. It is necessary to increase the
daily intake of polyphenols in the adult population in Serbia.

AB - The rising popularity of dietary supplements as a part of self-care practice increases interest
in monitoring their usage in the general and specific population groups. This study investigated
the prevalence and patterns of dietary supplement use among Belgrade University undergraduate
students and its variations across different academic study fields. Of the 914 online survey students,
55.7% used dietary supplements during the past year. Female gender, eating behavior, and academic
field were significant predictors of dietary supplement use. For all students, the most commonly used
dietary supplements were vitamins and minerals, alone or in combination. Magnesium, vitamin C,
and B vitamins were the most frequently supplemented micronutrients. The reasons for using, place
of purchase, and source of information regarding dietary supplements significantly varied among
students of different fields of study. Adverse effects related to dietary supplement use, including
gastrointestinal symptoms, skin flushing, dizziness, and heart palpitation, were reported in 4.5% of
students. Insufficient knowledge about these products was self-reported by 16.5% of users, more
common among non-medical students. Thus, public health interventions are needed to improve
students’ knowledge regarding rational and safe dietary supplement use.

AB - Due to the presence of many nutrients and bioactive compounds, fruits of Lycium species (Fructus Lycii, goji berries) are recognized as a “superfood,” which regular consumption might exert many beneficial health effects. Therefore, in addition to China and other Asian countries, the cultivation of Lycium species has become widespread throughout Europe. This study investigated the total phenolics (TPC), total flavonoids (TFC) and polysaccharides content, as well as biological properties of goji berry (Lycium barbarum L.) cultivated in the Belgrade region, Serbia. The HPLC method was used for the identification of individual phenolic compounds (rutin, quercetin-diglucuronide, chlorogenic acid and caffeic acid). Antioxidant properties of goji berry extracts with different solvent were evaluated for radical scavenging (DPPH, ABTS), reducing power (CUPRAC, FRAP), and β-carotene/linoleic acid bleaching inhibition capacity. Additionally, goji berry extracts were screened for their anti-diabetic (α-amylase, α-glucosidase), anti-tyrosinase, and anti-acetylcholinesterase activities. Methanol was identified as the most effective solvent for the extraction, resulting in the highest contents of TPC (3.76 mg GAE/g dry weight), TFC (0.65 mg CE/g dry weight), as well as superior antioxidant activity evaluated by all assays. Also, the methanol extract of goji berry inhibited all tested enzymes in concentration-dependent manners. The highest enzyme inhibitory activity was shown for tyrosinase (IC50 of 1.4 mg ± 0.01 mg/mL). The IC50 values were 4.66 ± 0.25 mg/mL, 10.68 ± 0.07 mg/mL, 7.07 ± 0.1 mg/mL for α-amylase, α-glucosidase and acetylcholinesterase inhibition activity, respectively. Overall, obtained results suggest that goji berry cultivated in Serbia is a valuable source of bioactive compounds that can be use in the food, nutraceutical, and cosmetic industries.

AB - The blackthorn, Prunus spinosa L. (Rosaceae) is a continental shrub widespread in Europe. The fruit is used in traditional medicine in the treatment of respiratory disorders, as well as diuretic, spasmolytic and anti-inflammatory agent. The aim of this study was to investigate the phenolic profile and in vitro biological activities: antioxidant, anti-diabetic, anti-tyrosinase, and anti-acetylcholinesterase. Furthermore the effect of blackthorn fruit extract on probiotic microorganisms was also studied. The blackthorn fruits were collected from two localities in Serbia and extracted with water, methanol and ethanol (50% V/V) at room temperature. The total phenolic contents was analysed by the Folin-Ciocalteu assay and was the highest in methanol extracts (321.36±9.13 and 217.04±17.99 mg GAE/100 g). On the contrary ethanol extracts contained the highest total flavonoids content (67.88±1.05 and 39.70±3.19 mg CE/100 g). Hydroxycinnamic acid derivatives (caffeoylquinic acid, caffeoyl hexoside) and quercetin glycosides (rutin, quercetin pentosyl-hexoside, isoquercitrin, quercetin pentoside) were detected in methanol extracts of both samples by LC-MS. Blackthorn ethanol extracts showed pronounced ferric reducing activity in FRAP test (2.80±0.07 and 1.89±0.01 mmol Trolox /100 g) and highest ability to neutralise ABTS radical (41.02±0.77 and 45.84±1.01 mmol Trolox /100 g). On the other hand methanol extract of both samples exerted significant DPPH radical scavenging activity (3.38±0.1 and 2.61±0.17 mmol Trolox/100 g) and highest activity in β-carotene/linoleic acid bleaching test (20.89±2.28 and 21.16±2.43%). Methanol extract of both samples inhibited the enzimes: α-amylase (IC50 2.05±0.05 and 1.26±0.04 mg/ml) α-glucosidase (IC50 0.63±0.02 and 0.43±0.06 mg/ml), tyrosinase (IC50 1.0±0.07 and 0.57±0.02 mg/ml), and acetylcholinesterase (IC50 0.56±0.28 and 2.16±0.56 mg/ml). In addition the methanol extracts of both samples markedly stimulated the growth of investigated probiotic microorganisms.
The blackthorn fruit represents a rich source of biologically active compounds and although it is almost forgotten it should be used again in human nutrition to maintain health.

energy supply, precursors for biosynthesis and regulatory
molecules. Numerous vitamins and minerals play a crucial
role in supporting body’s immunity and fighting against
viral infections. Other bioactive compounds like omega-3
fatty acids, probiotics and antioxidants (alpha-lipoic acid,

VID-19 may develop mild symptoms to severe damage of
the respiratory epithelium followed by a cytokine storm.
Many studies show that vitamin C, vitamin D, zinc and selenium are critical in defending against SARS-CoV-2 infection.
Intestinal dysbiosis is a feature of many infectious diseases, including COVID-19, so dietary approaches to establishing a
healthy microbiota are essential for improving immune function. This paper reviews the data on the roles and potential
effectiveness of selected nutraceuticals in the prevention and treatment of COVID-19.

stema usled infekcija praćena je povećanim metaboličkim

odgovoru.

AB - Telomeres are DNA-protein structures located at the ends of eukaryotic chromosomes. Since
their shortening is a natural process, which repeats with each cell division, telomere lengths
have been proposed as a biomarker of aging. Also, there is evidence that telomere shortening
and dysfunction can be accelerated by oxidative-stress and unhealthy lifestyle factors,
including physical inactivity and inadequate nutrition, Thus, we aimed to evaluate the
association of redox status and selected lifestyle factors with telomere length. The study
included 94 apparently healthy adults, both genders with average age 46±12 years. Before
anthropometric measurements and venous blood sampling, participants were asked to complete
a lifestyle questionnaire. Serum antioxidant defense markers (total sulfhydryl groups,
paraoxonase activity and total antioxidant status) and prooxidants and products of its activity
(malondialdehyde, superoxide anion and total oxidant status) were determined. The
Prooxidative score, Antioxidative score and Oxy score were calculated from measured redox
status markers by using z-score statistics. Telomere length was determined by qPCR method
using genomic DNA from peripheral blood leukocytes. A positive relation was found among
telomere length and a moderate level of physical activity, intake of fruits and vegetables,
especially for females. Increasing abdominal fat, alcohol and fried food intake, as well the Oxy
score (difference between Proxidative and Antioxidative scores) were inversely associated with
telomere length. Overall, these results support the impact of healthy lifestyle on healthy aging
and redox control in the term of prevention of major age-related diseases.

AB - Since the fruits of Lycium L. species (Fructus lycii, goji berries) are promoted as a “superfood”
with plenty of health benefits, there is extensive research interest in their nutritional and phytochemical
composition. In the present study, the nutritional value, minerals, fatty acid composition, and bioactive
compounds of L. barbarum L., red, yellow, and black goji berry (L. ruthenicum Murray.) cultivated
in Serbia were investigated. Antioxidant and antimicrobial properties of their methanol extracts
were assessed. Red goji berry had the highest content of fats, dietary fiber, iron, total carotenoids,
and 2-O- -d-glucopyranosyl-l-ascorbic acid (AA-2 G). The yellow goji berry extract showed the
highest level of flavonoids and the most prominent antimicrobial (especially against Gram-negative
bacteria) properties. The highest total phenolic content and the most potent antioxidant activity were
observed for the extract of black goji berry. Therefore, all goji berries could be a valuable source of
bioactive compounds in the food and pharmaceutical industry.

AB - Grape seeds contain a wide range of phenolic compounds responsible for its health promoting
effects. Interest for grape seed utilization has increased significantly along with a growing
recognition that present biologically active compounds were not completely isolated during the
extraction process. Numerous studies have been conducted in order to achieve the best
extraction recovery. Nevertheless, there is still a question concerning the pretreatment of grape
seeds. The aim of the present study was to investigate the impact of defatting process on total
polyphenol content and antioxidant activity of grape seed extracts. For that purpose seeds were
obtained from eight different grape varieties. Extraction with 70 % ethanol was performed on
both, crude and defatted seeds (lipid fraction was removed by Soxhlet method of extraction).
Determination of total phenolic content (TPC) was done using Folin-Ciocalteu assay.
Antioxidant activity was investigated through four different tests (FRAP, CUPRAC, DPPH and
ABTS) and obtained results were combined in unique Antioxidant Composite Index (ACI). TPC
values ranged from 50.48 to 121.06 and from 38.04 to 108.17 mg GAE/g dry weight for crude
and defatted grape seed extracts, respectively. Higher phenolic content determined in extracts
obtained from crude seeds could be explained by the presence of lipophilic biologically active
compounds in non-removed lipid fraction. Discrepancies between varieties are presumably
present due to different morphological properties of seeds, environmental and agricultural
conditions. Concerning antioxidant activity, all tests were significantly correlated with TPC,
suggesting the strong contribution of phenolic compounds to this biological activity.

AB - Due to the presence of numerous bioactive compounds, including polysaccharides and polyphenols, mushroom-based food supplements are claimed to have many beneficial health effects. Despite their popularity, concerns have been raised in recent years over the quality of mushroom products, particularly regarding their non-standardized chemical composition. In this study, the β-glucan and total phenolic contents, as well as the antioxidant potential of mushroom-derived supplements available on the Serbian market were analyzed. The obtained results, revealing considerable differences in β-glucan and total polyphenol contents among these products, reflect variations in mushroom species, forms and recommended dosing regimens. A correlation between the total phenolic content and antioxidant activity was observed. The presence of other active ingredients, such as vitamin C, has contributed to antioxidant variability among the analyzed products. The obtained results indicate the need for the standardization of mushroom-derived food supplements to ensure their claiming effects.

AB - A large number of epidemiological studies have linked cruciferous vegetable consumption to
a reduced risk of various types of cancer, including renal cell carcinoma. Organosulfur
compounds from cruciferous vegetables, glucosinolates and their metabolic breakdown
derivatives, isothiocyanates and indole-3-carbinol, rise scientific interest by exerting unique
anticancer properties. Erucin (ER) is an isothiocyanate that is generated by enzymatic
hydrolyzes of glucoerucin, a glucosinolate predominant found in rocket species, or by in vivo
reduction of sulforaphane, its structural oxidized analog. In the present study, the inhibitory
effects of ER on renal cancer cell viability, migration and invasion were investigated. The 786-
O human renal cancer cell line and the Vero normal-like cells were treated with different
concentrations of ER (10-100 μM). Cell viability was determined using the MTT and PI assays.
The intracellular level of reactive oxygen species was evaluated using
dichlorodihydrofluorescein diacetate. The collective cell migration and
chemotaxis/chemoinvasion were studied by a wound healing and transwell assay, respectively.
ER induced a concentration-dependent decrease in cell viability, with more cytotoxicity for
786-O cells than against Vero cells. Non-cytotoxic concentration of ER significantly reduced
cell migration rate, chemotaxis and invasiveness potential of 786-O cells. The observed
favorable anticancer potential of ER against human renal carcinoma in vitro requires further
investigation.

AB - Amaranth (Amaranthus sp., Amaranthaceae), quinoa (Chenopodium quinoa, Amaranthaceae)
and canihua (Chenopodium pallidicaule, Amaranthaceae) are pseudograins originating from
South America. They are widely used in the diet as well as chia seeds (Salvia hispanica,
Lamiaceae) from South America and wheat (Triticum aestivum, Poaceae) and millet (Panicum
miliaceum, Poaceae), characteristic for our climate. The aim of the study was to determine the
nutritive characteristics, phenolic content and antioxidant activity of commercial samples of
pseudograins (аmaranth, quinoa and canihua) from our market, as well as a comparative
analysis to chia seeds, common and khorasan wheat and millet. Basic nutritive value
parameters and mineral contents were assessed for pseudograins and chia seeds. The content
of total phenolic compounds (TPC) and total flavonoid compounds (TFC), antioxidant
activity by DPPH and FRAP tests were determined for all samples. The results of the nutrient
composition indicates that analyzed pseudograins are good sources of proteins (13.39%) and
unlike chia seeds are characterized by relatively low fat content (5.97%). Analyzed
pseudograins contain calcium, magnesium, zinc and iron in a significant amount. The highest
TPC content was observed in chia seeds (395.7 mg GAE/100 g), following canihua (327.4 mg
GAE/100 g), quinoa (161.9 mg GAE/100 g), common wheat (61.8 mg GAE/100 g), Khorasan
wheat (51.1 mg GAE/100 g), while the lowest content was identified in millet (32.9 mg
GAE/100 mg). TFC content was in a range from 0.001 % (common wheat, khorasan wheat)
to 0.099 % (canihua). Antioxidant properties of pseudograins were lower compared to chia
seeds, but similar to common wheat and khorasan wheat while even higher comparing to
millet.

Osnovni cilj ovog rada jeste
šeg tržišta, kao i komparativna procena njihove antioksidativne aktivnosti.
polifenolnih jedinjenja (Total Polyphenol Content, TPC), kao i sadržaj fl a-
vonoida (Total Flavonoid Content, TFC) određen je spektrofotometrijskim
metodama. Procena antioksidativnog potencijala izvršena je korišćenjem
tri različita testa (FRAP, DPPH, ABTS). Na osnovu dobijenih rezultata, račun-
skim putem određene su vrednosti antioksidativnog kompozitnog indeksa
(ACI).
(cimet). U pogledu antioksidativnog potencijala, sva tri testa su pokazala
konzistentne rezultate. Utvrđena je statistički značajna povezanost između
sadržaja TPC i ACI vrednosti (r= 0,976; p< 0,01).
izvor polifenolnih jedinjenja i poseduju izražen antioksidativni potencijal.
AB - Spices are aromatic parts of herbs with characteristic smell and taste. They
are added to food in order to achieve the appropriate organoleptic proper-
ties, as well as to extend their shelf life. Since they are sources of natural an-
tioxidants, spices are considered as functional food ingredients. The main
goal of this research was determination of total polyphenol and fl avonoid
content in selected spices from our market and comparative assessment
of their antioxidant activity. The study was conducted on ten different
commercial samples of herbs. After extraction with ethanol, total polyphe-
nol content (TPC), and total fl avonoid content (TFC) were determined by
spectrophotometric methods. Evaluation of antioxidant potential was
carried out using three different tests (FRAP, DPPH, ABTS). Based on these re-
sults, values of antioxidant composite index (ACI) was determined by com-
putation. The highest content of polyphenolic compounds was found for
cinnamon (61.3±3.1 mg GAE/g), followed by rosemary (30.2±3.6 mg GAE/g)
and oregano (21.0±0.8 mg GAE/g), while the lowest content showed shallot
(4.3±0.0 mg GAE/g). The content of total fl avonoids ranged from 3.2 μmol
CE/g (cumin) to 133.7 μmol CE/g (cinnamon). When it comes to antioxidant
potential, all three tests showed consistent results. A statistically signifi cant
correlation was fi gured out for total polyphenol content and ACI values (r =
0.976, p<0.01). Based on obtained results, it can be concluded that cinna-
mon, rosemary and oregano are the rich sources of polyphenol compounds
and have conspicuous antioxidant potential.
