The influence of different enzymatic preparations and skin contact time on aromatic profile of wines produced from autochthonous grape varieties Krstac and Zizak

AB  - This study aimed to show aromatic profile of wines produced from two autochthonous grape cultivars Krstač (K) and Žižak (Z). During the wine production two enzymatic preparations (EP) Lallzyme cuvee blanc (CB) and Lallzyme enzymatic preparation β (EB) and different time of skin contact (4 and 8 h) were applied. Aromatic compounds were detected by GC/FID–MS analysis. Significantly higher content of total detected aromatic compounds compared to appropriate controls (168.54 and 161.72 mg L-1 ) was observed for K EB4h (176.33 mg L -1 ) and Z CB4h (177.29 mg L -1 ) wines. Skin contact and usage of EP mostly increased content of 2-phenylethyl and isoamyl alcohols. Wines from both varieties showed higher content of hexanoic and octanoic acids compared to the control. It is interesting to emphasize that content of esters that are responsible for fruity aroma of wine which is important for plea- sant taste (isoamyl acetate – banana, ethyl hexanoate – ripe banana, 2-phenyl- ethyl acetate – powerful fruity rose like) were increased in all samples com- pared to the controls. The highest grades, after sensory evaluation, were obtained for K EB 8h (18.0 out of 20.0) and Z CB 8h (18.2 out of 20.0).
AB  - Ова студија је имала за циљ да прикаже профиле ароматичних једињења вина про- изведених од аутохтоних сорти грожђа Крстач (K) и Жижак (Z). Током производње вина од обе сорте коришћени су ензимски препарати (EP): Lallzyme cuvee blanc (CB), Lall- zyme enzymatic preparation β (EB) и различито време контакта покожице (4 и 8 h). Аро- матична једињења су анализирана GC/FID–MS техником. За вина K ЕВ4h (176,33 mg L -1 ) и Z CB4h (177,29 mg L -1 ) уочава се значајно већи садржај укупних ароматичних једињења у поређењу са одговарајућим контролним винима (168,54 and 161,72 mg L -1 ). Вина обе сорте су показала већи садржај хексанске и октан- ске киселине у односу на контролна вина. Занимљиво је поменути да је у свим узорцима повећан садржај естара који су одговорни за воћну арому вина, која је заслужна за при- јатан укус (изоамил-ацетат – банана, етил-хексаноат – зрела банана, 2-фенилетил-аце- тат – јак воћни мирис руже), у поређењу са контролним винима. Највише оцене, након сензорног оцењивања, добијене су за K EB 8h (18,0 од максималних 20,0) и Z CB 8h (18,2 од максималних 20,0).

Similarities and differences in the nutritional composition of nuts and seeds in Serbia

AB  - Nuts and seeds are an indispensable part of the plant-based diet, which is becoming increasingly popular due to the evidence of their health benefits and contribution to sustainability and planetary health. Since the health effects of consuming nuts and seeds directly depend on their nutritional composition and consumed amount, it is essential to know the exact chemical composition of each nut and seed so that appropriate dietary interventions can be adequately planned. The present study aimed to examine the chemical composition of nuts and seeds obtained from the Serbian market and to highlight the similarities and differences in their nutritional composition. In twenty-four samples of nuts and seeds, the content of total lipids, including fatty acid profile, total proteins, including amino acid profile, total carbohydrates (sugars and fibers), phytosterols, and minerals were determined. Content of selected nutrients in grams (g) or milligrams (mg) of nuts and seeds was expressed in one portion (28 g) and as a percentage of contribution of Reference Intakes (% RI) and Dietary Reference Value (% DRV) for macronutrients and minerals, respectively. Some of the seed representatives appeared to be rich sources of essential omega-3 fatty acid, α-linolenic acid (ALA) (flax seed vs. walnut, 6.50 vs. 0.56 g per portion, respectively), dietary fibers (chia seed vs. raw almond, 10.6 vs. 3.4 g per portion, respectively), calcium (black sesame seed vs. almond roasted, 32.4% NRV vs. 8.1% NRV per portion, respectively), magnesium (hemp seed vs. Brazil nut, 38.3% NRV vs. 27.8% NRV per portion, respectively), and zinc (hemp seed vs. pine nut, 21.4% NRV vs. 17.6% NRV per portion, respectively). Our results highlighted the crucial role of seeds in the diet, especially as a better source of nutrients compared to nuts. Furthermore, it was seen that nuts and seeds are different and complementary in their composition. Thus, in order to meet the needs for certain nutrients for which nuts and seeds are used as dietary sources (essential fatty acids, minerals, dietary fibers), it would be beneficial to combine both nuts and seeds as a part of a healthy dietary pattern.

Extraction Kinetic of Some Phenolic Compounds During Cabernet Sauvignon Alcoholic Fermentation and Antioxidant Properties of Derived Wines

AB  - In this study, we estimated the usage of Cabernet Sauvignon in microvinifications, obtaining wines with increased phenolic compound content. Kinetic extraction of phenolic compounds during alcoholic fermentation was affected by maceration time (3, 5, 7, 14 and 21 days) and the addition and kinetics of enzyme preparations (EP). The highest extraction rates were observed for catechin (EXV EP – EXV en-zyme preparation and CP EP – Color plus enzyme preparation) and p-hydroxybenzoic acid (Car EP - Ca-ractere enzyme preparation). According to extraction time of the analyzed phenolic compounds, maximal values (ellagic acid, ferulic acid, chlorogenic acid, caffeic acid, naringenin, p-hydroxybenzoic acid, p-coumaric acid, protocatechuic acid, trans-resveratrol, syringic acid, vanillin, and vanillic acid) were ob-tained on day 15 of maceration with addition of CP EP, with exceptions of gallic acid, catechin, and my-ricetin. Prolonged maceration times, up to 21 days, showed the most potent DPPH free radical scavenging activity with Car EP and the highest Ferric Reducing Ability of Plasma (FRAP) values with CP EP.

Fatty acids, sterols, and triterpenes of the fruits of 8 Heracleum taxa

AB  - Fatty acids (FAs), sterols, and triterpenes of dichloromethane extracts of the fruits of 8 Heracleum L. taxa (Apiaceae) from southeastern Europe were investigated by gas chromatography with flame ionization detector and gas chromatography with mass spectrometry. In order to analyze the FAs, their volatile methyl esters were obtained by saponification and subsequent esterification of oily supernatants of the fruit extracts. Dominant was petroselinic acid (42.8%-56.5%), followed by linoleic (20.3%-33.3%) and oleic acids (12.3%-13.7%). Sterols and triterpenes were analyzed as volatile derivatives obtained by the silanization of residual unsaponifiable fractions. Among them, the most abundant was β-sitosterol (44.9%-56.9%), followed by stigmasterol (15.7%-25.0%), Δ7-stigmastenol (6.6%-12.5%), and campesterol (5.2%-8.1%). The quantity of petroselinic acid was also determined by the external standard method (298.8-433.4 mg/g of oily supernatant). The obtained results show that the investigated plants are potential valuable sources of the compounds utilized in different industries.

AB  - Ethnopharmacological relevance: Meadowsweet (Filipendula ulmaria (L.) Maxim.) and dropwort (Filipendula vulgaris Moench) are herbaceous perennials employed in folk medicine for their antirheumatic, antipyretic and antiulcer properties. Aim of the study: To assess ethnomedicinal claims through investigation of antioxidant, anti-inflammatory and gastroprotective effects of F. ulmaria and F. vulgaris lyophilized flower infusions (LFIs) as well as the F. vulgaris isolated flavonoids spiraeoside, kaempferol 4'-O-glucoside, astragalin 2'-O-gallate, mixture of hyperoside 2'-O-gallate and isoquercitrin 2'-O-gallate, and a tannin tellimagrandin IL Materials and methods: Free radical scavenging activity of the tested samples was determined by examining their ability to neutralize DPPH and OH radicals in vitro, whereas reducing properties were assessed in Ferric Reducing Antioxidant Power (FRAP) assay. Anti-inflammatory activity was studied ex vivo in human platelets by monitoring the effect on eicosanoid biosynthesis.. Gastroprotective action was estimated in animal model of acute gastric injury induced by ethanol. Results: LFIs and spiraeoside exerted activities comparable to those of positive control in DPPH-radical scavenging and FRAP antioxidant assays, whereas notable hydroxyl radical scavenging ability was demonstrated only for spiraeoside (IC50 = 5.1 mu g/mL). Among tested samples, astragalin 2 ''-O-gallate (IC50 = 141.1 mu g/mL) and spiraeoside (IC50 = 4.69 mu g/mL) the most markedly inhibited production of pro -inflammatory prostaglandin E-2 and 12(S)-hydroxy-(5Z,8Z,10E,14Z)-eicosatetraenoic acid in human platelets, respectively. Examination of LFIs (100-300 mg/kg, p.o.) gastroprotective action in rats revealed their capacity to preserve mucosal integrity. In addition, spiraeoside (50 mg/kg, p.o.) and tellimagrandin II (40 mg/kg, p.o.) showed ulcer preventive ability. Conclusion: Current study supports documented traditional use of investigated herbs and indicates that flavonoid and tannin components are partially responsible for the demonstrated pharmacological activities.

AB  - Modern consumers are much aware of potential health benefits of food and food ingredients. The food industry has been constrained to develop new products with improved sensory, nutritive and functional characteristics. In this work a potential use of English (Quercus robur) and Turkish oak (Quercus cerris) kernels as functional food components was estimated. Volatiles from native and roasted kernels were isolated using continuous hydro distillation with CH2Cl2 and analyzed with GC/MS. Coffee-like beverages were prepared from roasted kernels of both species and a sensory assessment was conducted. In the native samples the main compounds were beta-eudesmol and palmitic acid (39.9 and 24.9%, respectively) in Q. robur, and palmitic acid (53.8%) in Q. cerris. In the roasted samples the main compounds were furans: furfural (51.7 and 60.6%) and 5-methyl-furfural (8.6 and 9.4%, respectively). Coffee-like beverages from roasted oak samples were evaluated for sensory properties gaining high scores for appearance, with satisfying taste and fullness. The presented results, along with previous findings on substantial antioxidant and antiradical activities of English and Turkish Oak kernels, draw attention to these easy available, cheap, but neglected native raw materials as valuable functional food components. Further investigations on this matter are warranted.

AB  - Cytoprotective compounds such as amifostine play an important role in chemo-and radiotherapy due to their ability to reduce the side effects of these treatments. Our work was initiated with the intention to design, synthesise and test a new class of heterocyclic compounds that would have an antioxidative profile with the potential to be further developed as cytoprotective agents. The design was based on the privileged tetrahydrobenzazepine scaffold found in many natural products with a wide range of biological properties. This structure was further functionalised with moieties known to possess antioxidative features such as tertiary amine and styrene double bond. A series of eight tetrahydrobenzazepine derivatives of isoquinoline, 3,4-dihydro-beta-carboline and pyridine were synthesised employing the Heck reaction as a key transformation. Some of the prepared compounds were tested for their in vitro effects on chromosome aberrations in peripheral human lymphocytes using the cytochalasin-B blocked micronucleus (MN) assay. Three tetrahydrobenzoazepine derivatives showed significant cytoprotective properties, comparable or even better to those of the radioprotective agent amifostine.

AB  - Procedure for isolation of pyrrolizidine alkaloids (PAs) from Rindera umbellata Bunge plant species was optimised. Different extraction media (methanol, ethanol and sulphuric acid), concentration and volume of sulphuric acid, pH of PA solution for alkaline extraction, extraction time and techniques (maceration, ultrasonic and overhead rotary mixer assisted extraction) were investigated. The yields of six PAs (7-angeloyl heliotridane, 7-angeloyl heliotridine, lindelofine, 7-angeloyl rinderine, punctanecine and heliosupine) were monitored by GC-MS/FID. The best results for the isolation all of six PAs were obtained when the extraction was performed with 1M sulphuric acid (30mL per 1.00g of dried sample) by overhead rotary mixer during three days. Optimal pH value for alkaline extraction of PAs with CH2Cl2 was 9, and the extraction should be performed with four portions of 30mL of CH2Cl2. This procedure could be also useful for a plant sample preparation for GC and LC analyses of PAs.

AB  - The examination of the aerial parts, roots, and seeds of the endemic plant Rindera umbellata is reported in this paper for the first time. Phytochemical investigation of R. umbellata led to the isolation and characterization of ten pyrrolizidine alkaloids and eleven fatty acids in the form of triglycerides. Pyrrolizidine alkaloids 1-9 were found in the aerial parts, 7 and 8 in the roots, and 6-10, together with eleven fatty acids, in the seeds of this plant species. AB  - The genus Senecio (family Asteraceae) is one of the largest in the world. It comprises about 1100 species which are the rich source of pyrrolizidine alkaloids. Plants containing pyrrolizidine alkaloids are among the most important sources of human and animal exposure to plant toxins and carcinogens. The pyrrolizidine alkaloids of seven Senecio species (S. erucifolius, S. othonnae, S. wagneri, S. subalpinus, S. carpathicus, S. paludosus and S. rupestris) were studied. Fourteen alkaloids were isolated and their structures determined from spectroscopic data (1H- and 13C-NMR, IR and MS). Five of them were identified in S. erucifolius, four in S. othonnae, two in S. wagneri, four in S. subalpinus, two in S. carpathicus, three in S. paludosus and three in S. rupestris. Seven pyrrolizidine alkaloids were found for the first time in particular species. The results have chemotaxonomic importance. The cytotoxic activity and antimicrobial activity of some alkaloids were also studied.
AB  - Jedan od najbrojnijih rodova na svetu je rod Senecio (familija Asteraceae). Obuhvata oko 1100 vrsta koje predstavljaju bogat izvor pirolizidinskih alkaloida. Najznačajnija izloženost ljudi i životinja biljnim toksinima i karcinogenima potiče od biljaka koje sadrže pirolizidinske alkaloide. U ovom radu izolovani su pirolizidinski alkaloidi iz sedam vrsta roda Senecio (S. erucifolius, S. othonnae, S. wagneri, S. subalpinus, S. carpathicus, S. paludosus i S. rupestris), a njihove strukture određene na bazi spektroskopskih podataka (1H- i 13C-NMR, IR i MS). AB  - The aim of the present work was to investigate and compare phenolic compounds and antioxidant activity of methanol extracts of Quercus robur and Quercus cerris acorn kernels obtained before and after thermal treatment. Content of total phenolics, tannins, non-tannin phenolics and flavonoids was determined spectrophotometrically and content of gallic acid with HPLC. Antioxidant activity of the samples was assayed through FRAP (Ferric Reducing Antioxidant Power), DPPH scavenging test and inhibition of Fe2+/ascorbate induced lipid peroxidation. Extracts of native and thermally treated kernels showed high antioxidant activity, with extracts of thermally treated kernels being more active than extracts of native ones. Hydrolysable tannins and gallic acid were identified in all samples. Non-tannin phenolics, including gallic acid, were present in significantly higher quantities in thermally treated samples, whilst tannin content decreased. This indicates that during thermal treatment hydrolysable tannins were degraded. As the result of this degradation and consequent increase of non-tannin phenolics content, and amongst them especially gallic acid, thermally treated samples possess higher antioxidant activity than do the native ones. The obtained results have provided further grounds for establishing Q. robur and Q. cerris acorn kernels as a source for functional food preparation,

Higher antioxidant activity of extract of thermally treated kernels (QT) could be
explained as a consequence of thermal degradation of hydrolysable tannins and,
therefore, increased gallic acid content.
AB  - Ispitivani su polifenolni sastojci i antioksidantna svojstva suvih MeOI.l
ekstrakata nativnog (QN) i termidki tretiranog (QT) semena luZnjaka, euercus robur.
SadrZaj ukupnih i netaninskih polifenola i tanina odredivan je spektiofotometrijski,
kori5cenjem Folin-Ciocalteu reagensa', a sadraaj galne kiseline tecnonr
hromatografijom (HPLC)2. Konstatovano je da nakon termicktg tretmana sadrZaj tanina
opada (sa 20,4 na 19,7o ), a znalajno raste kolidina netaninskih polifenola 1sa f ,9 na
4,0oA) i galne kiseline (sa 0,5 na 5 ,loh).
Za procenu antioksidante aktivnosti odredivani su: ukupna antioksidanta
aktivnost, UAA (FRAP test), sposobnost neutralizacije DPPH radikala i inhibitorni
efekat na lipidnu peroksidaciju (LP) u lipozomima (TBA tesr).r
Uzorci QN i QT ispoljili su znadajnu antioksidantnu aktivnost, i to UAA je
iznosila 2,44 i 3,76 pmol F.'*/rg, respektivno. Dobijene vrednosti aktivnosti su oko 2-
3 puta niZe u poredenju sa kvercetinom i vitaminom C. lJzorci eN i eT su
koncentraciono zavisno neutralisali DPPH radikal (IC5s:8,04 i 5,77 pglml) i inhibirali
LP (ICs0:32,13 i I 6,39 ltglml, respektivno).
Veia antioksidantna aktivnost ekstrakta termidki tretiranog semena (eT), moLe
se objasniti veiim sadrZajem galne kiseline, koja se oslobada razgradnjom
hidrolizujucih tanina tokom termidke obrade.

Higher antioxidant activity of extract of thermally treated kernels (QT) could be
explained as a consequence of thermal degradation of hydrolysable tannins and,

ekstrakata nativnog (QN) i termidki tretiranog (QT) semena luZnjaka, euercus robur.
SadrZaj ukupnih i netaninskih polifenola i tanina odredivan je spektiofotometrijski,
kori5cenjem Folin-Ciocalteu reagensa', a sadraaj galne kiseline tecnonr
hromatografijom (HPLC)2. Konstatovano je da nakon termicktg tretmana sadrZaj tanina
opada (sa 20,4 na 19,7o ), a znalajno raste kolidina netaninskih polifenola 1sa f ,9 na
4,0oA) i galne kiseline (sa 0,5 na 5 ,loh).
Za procenu antioksidante aktivnosti odredivani su: ukupna antioksidanta
aktivnost, UAA (FRAP test), sposobnost neutralizacije DPPH radikala i inhibitorni
efekat na lipidnu peroksidaciju (LP) u lipozomima (TBA tesr).r
Uzorci QN i QT ispoljili su znadajnu antioksidantnu aktivnost, i to UAA je
iznosila 2,44 i 3,76 pmol F.'*/rg, respektivno. Dobijene vrednosti aktivnosti su oko 2-
3 puta niZe u poredenju sa kvercetinom i vitaminom C. lJzorci eN i eT su
koncentraciono zavisno neutralisali DPPH radikal (IC5s:8,04 i 5,77 pglml) i inhibirali
LP (ICs0:32,13 i I 6,39 ltglml, respektivno).
Veia antioksidantna aktivnost ekstrakta termidki tretiranog semena (eT), moLe
se objasniti veiim sadrZajem galne kiseline, koja se oslobada razgradnjom
hidrolizujucih tanina tokom termidke obrade.",
