AB  - Digital transformation in education and relevant calls for action are recognised global priorities aimed to support education and training in the digital age. The experiences from the emergency remote teaching during the COVID-19 pandemic and recent research findings reveal relevant advantages, challenges, as well as different students and teaching staff perspectives which should be carefully considered and integrated into institutional strategies and policies to improve and enrich students’ learning experience. The present study aimed to explore health sciences students' perspectives on online teaching and learning (T&L) in four domains—Satisfaction, Motivation, Interaction and Challenges, and to identify the preferred T&L models or tools. A total of 1,041 responses were collected, including 476 dental medicine (45.7%), 399 pharmacy (38.3%), and 166 medical students (15.9%). Overall Satisfaction was quite high (4.0 ± 1.2; out of 5), followed by satisfactory Interaction (3.4 ± 1.4), whereas Motivation was quite low on average (3.0 ± 1.5). Challenges in online T&L were not markedly expressed (3.0 ± 1.6). The majority of students (46.6%) opted for the blended model as the preferred T&L model. Moodle lessons were perceived as the most useful online T&L tool (45.5% of students), followed by video materials (32.2%). Other T&L tools which require more active student's role, such as short test/quiz, and group or team assignment were declared as less favourable. The findings from the current study may contribute to raising the awareness of academic staff and higher institutions management about the student attitudes and needs related to online T&L and inform institutional planning, decision-making and policy development.

Phenolics and Flavonoid Content in Selected Seeds from the Serbian Market

AB  - Objectives: Edible seeds are usually consumed as common food ingredients. They are
considered to have a rich nutrient profile, containing different macro and micronutrients, as well
as some biologically active compounds with positive health effects, such as different phenolics.
The aim of this work was to determine total phenolics (TPC) and total flavonoid content (TFC)
in selected commercial seeds samples from the Serbian market. Methods: Samples of nine seeds
were investigated (sesame and black sesame, raw and roasted sunflower, raw and roasted pumpkin,
hemp, chia and linseed). The samples of native seeds and those defatted using dichloromethane
(maceration and Soxhlet extraction) were extracted with 80% methanol. Obtained hydro-methanol
extracts were dried and further analysed using spectrophotometric methods: TPC was determined
using Folin–Ciocalteu (FC) reagent and expressed as gallic acid equivalents (GAE), while TFC was
measured based on the reaction between flavonoids and aluminium chloride and expressed as
catechin equivalents (KE). Results: In general, hydro-methanol extracts of seed samples defatted
using Soxhlet extraction had the highest TPC and TFC contents. TPC values ranged from 9.47 g
GAE/mg (raw pumpkin seed) to over 170 g GAE/mg (raw sunflower seeds). As for TFC, the
highest amount was measured in extracts of defatted raw sunflower seeds (over 150 g KE/mg),
while roasted pumpkin and hemp seeds’ extracts were practically devoid of flavonoids. Conclusion:
Our results confirmed the fact that certain defatted seeds, which are usually considered as waste
products in oil production, could be considered as valuable sources of certain secondary plant
metabolites, implicating further investigations on their composition and potential in the development
of functional foods.

Dietary Intakes of Sugar in the Student Population from Fruits and Beverages

AB  - Objectives: A healthy diet includes the intake of sugar (up to 5%) from natural sources,
because added sugars increase energy but not nutritional value, and are associated with an increased
risk of developing obesity, cardiovascular diseases and hypertension. Sugars present in fresh fruit,
fruit juices and nectars, refreshing soft drinks and alcoholic drinks usually represent half of the
total sugar intake. The aim of this study was to analyze, through surveys, the habits of the student
population regarding the consumption of food from the sources mentioned and to determine the
amount of sugar consumed. Methods: 123 students (male: 36, female: 87), aged 19 to 32, participated
in this research. Data collection was voluntary and anonymous, and the survey was conducted
using an electronic questionnaire during February 2023. The data on the sugar content of the foods
mentioned were taken from the declarations of the products that are available for free sale. Results:
Based on the processed results from the completed questionnaires, it was concluded that from the
sources mentioned, sugar is represented by 3.7% in relation to the total energy intake, and added
sugar by 2.4% if 2000 kcal/day is consumed. In relation to the representation of carbohydrates of
60% in relation to the total energy intake, the sugar content from the tested sources accounted for
6.3%, and added sugar accounted for 4.0%. Students reported that they most often do not consume
hard liquor (88% of respondents), and that they eat a teaspoon of honey/sugar once a day (14% of
respondents). Conclusion: Although the obtained results are very acceptable and encouraging, it
is necessary to act additionally in terms of increasing awareness of the reduced intake of products
with added sugars and their replacement with those that contain biologically active compounds in
addition to natural sugar composition.

AB  - The disposal of waste generated in the agri-food industry is one of the greatest challenges
in achieving sustainable development. Although agri-food residues are a potential source of
bioactive compounds with proven health benefits, they are largely unused and disposed of as
organic waste. The recovery of bioactive compounds from agri-food waste to obtain products
with high biological value, such as functional foods and nutraceuticals, is an idea that stems from
the concept of bioeconomy and combines environmental issues with economically viable
production. Some of the main agri-food wastes in Serbia that have the potential to be recycled
into value-added products are apple, plum, grape, tomato, and beet pomace, and oilseed cakes.
Bioactive compounds isolated from these wastes include polyphenols, fibers, essential fatty acids,
minerals, various volatiles and pigments. This article focuses on the most common food wastes
and the potential reuse of these undervalued material to produce value-added products such as
functional foods, nutraceuticals or food additives.
AB  - Odlaganje otpada koji nastaje u prehrambenoj industriji jedan je od najvećih izazova u
postizanju održivog razvoja. Iako su nusproizvodi koji nastaju u prehrambenoj industriji
potencijalni izvor bioaktivnih jedinjenja sa dokazanim pozitivnim zdravstvenim efektima, oni se
uglavnom odlažu kao organski otpad. Iskorišćenje bioaktivnih jedinjenja iz ovih nusproizvoda u
cilju dobijanja proizvoda sa dodatom nutritivnom i biološkom vrednošću, kao što su funkcionalna
hrana i nutraceutici, ideja je koja proizilazi iz koncepta bioekonomije i kombinuje ekološki aspekt
sa ekonomski održivom proizvodnjom. Neki od glavnih nusproizvoda koji se generišu u Srbiji sa
potencijalom da se iskoriste u proizvodnji proizvoda sa dodatom vrednošću su trop jabuke, trop
šljive, komina grožđa, trop paradajza, uljane pogače i dr. Bioaktivna jedinjenja izolovana iz ovih
otpada uključuju polifenole, peptide, vlakna, esencijalne masne kiseline, minerale, različite
isparljive materije i pigmente. Ovaj članak se fokusira na najčešće otpade prehrambene industrije
i potencijalnu ponovnu upotrebu ovog još uvek neiskorišćenog otpadnog materijala za
proizvodnju proizvoda sa dodatom vrednošću kao što su funkcionalna hrana, nutraceutici ili
aditivi.

uglavnom odlažu kao organski otpad. Iskorišćenje bioaktivnih jedinjenja iz ovih nusproizvoda u
cilju dobijanja proizvoda sa dodatom nutritivnom i biološkom vrednošću, kao što su funkcionalna
hrana i nutraceutici, ideja je koja proizilazi iz koncepta bioekonomije i kombinuje ekološki aspekt
sa ekonomski održivom proizvodnjom. Neki od glavnih nusproizvoda koji se generišu u Srbiji sa
potencijalom da se iskoriste u proizvodnji proizvoda sa dodatom vrednošću su trop jabuke, trop
šljive, komina grožđa, trop paradajza, uljane pogače i dr. Bioaktivna jedinjenja izolovana iz ovih
otpada uključuju polifenole, peptide, vlakna, esencijalne masne kiseline, minerale, različite
isparljive materije i pigmente. Ovaj članak se fokusira na najčešće otpade prehrambene industrije
i potencijalnu ponovnu upotrebu ovog još uvek neiskorišćenog otpadnog materijala za
proizvodnju proizvoda sa dodatom vrednošću kao što su funkcionalna hrana, nutraceutici ili

Analysis of vitamin content in products intended for infants and children on the Serbian market

AB  - Infant formula and follow-on formula, baby food and food supplements are important sources of essential nutrients for infants and young children. It is therefore important to monitor the nutrient content of these products. The content of vitamins A, D, E, C and B group was determined in 121 samples (44 samples of infant and follow-on formulas, baby foods, foods for special medical purposes and 77 of food supplements for children. High Performance Liquid Chromatography with Fluorescence and Diode Array Detector (HPLC-FLD-DAD) methods, were used for analysis. Among these samples, almost every third sample was outside of the defined tolerance range. The biggest deviations were found for vitamins A and E. The obtained values in foods for infants and young children for vitamins A and E was 17–147 % and 24–140 % of the declared value, respectively, whereas for food supplements, they were 5–150 % and 52–205 %, respectively. The highest values for vitamin E were in instant drinks (80–203 % of the declared value). The content of vitamins D and B2 in food supplements in liquid form was 10–127 % and 11–110 % of the declared value, respectively. Considering that these foods are often the only source of essential nutrients for infants and children, these results show the need for regular monitoring of the composition of these products.

AB  - Several studies report the important role of an altered gut microbiota in the development of obesity, highlighting the potential use of probiotics in the treatment of obesity. The aim of this study is to investigate the effect of a novel probiotic approach on the expression of specific miRNAs and mRNAs associated with obesity in combination with the hypocholesterolemic octacosanol. Twenty overweight/obese women participated in a randomized, placebo-controlled, double-blind study and were randomly divided into two groups: the intervention group (daily one capsule containing Lactobacillus plantarum 299v (DSM9843), Saccharomyces cerevisiae var. boulardii, and 40 mg octacosanol; N = 12) and the placebo group (N = 8). Changes in lipid parameters and expression of miRNAs and mRNAs were assessed before (T0) and after the 12-week intervention (T1). After the intervention, the expression of miR-155-5p (9.38 ± 0.85 vs. 8.38 ± 1.06, p = 0.05) and miR-24-3p (3.42 ± 0.38 vs. 2.71 ± 0.97, p = 0.031) showed significant decreases in the intervention group when compared to the control group. At T1, the expression of miR-155-5p (8.69 ± 1.31 vs. 9.3 ± 0.85, p = 0.04), miR-125b-5p (5.41 ± 1.18 vs. 5.99 ± 1.36, p = 0.049), and TNF-α (10.24 ± 1.66 vs. 11.36 ± 1.12, p = 0.009) were significantly decreased in the intervention group. No changes in lipids and anthropometric parameters were observed. The novel probiotic approach had a positive effect on regulating the expression of certain miRNAs and mRNAs important for regulating inflammation and adipogenesis, which are essential for obesity onset and control.

AB  - Fruits of Lycium barbarum L. (Solanaceae), known as wolfberries or goji berries, have
been long used in traditional medicine and nutrition in Asian countries. However, in recent
years, they have become popular in Europe, including Serbia. However, there are limited
data on the chemical composition of goji berries cultivated in our country. This study aimed
to estimate and perform a comparative analysis of the mineral content of goji berries from
six locations in Serbia. After microwave digestion, macro- (K, Na, P, S, Mg, Ca) and
microelement (Fe, Zn, Cu, Cr, Mn, Mo) contents in analyzed samples were determined by the
optical emission spectrometry with induced coupled plasma (ICP-OES). As expected, mineral
concentrations varied significantly among goji berry samples from different locations (p <
0.05). In general, the decreasing orders of minerals in goji berries were: K > P > S > Na > Mg >
Ca > Zn > Fe > Cu > Mn > Cr > Mo. According to the Recommended Daily Allowance (RDA)
values, dried goji berries (30 g) provide a rich source of Cr and Cu, while their contribution
to the daily intake of other minerals was below 15% RDA.
AB  - Plodovi Lycium barbarum L. (Solanaceae), poznatiji kao vučje bobice ili godži, imaju
dugu istoriju upotrebe u tradicionalnoj medicini i ishrani stanovnika azijskih zemalja, a
poslednjih godina su sve popularniji u Evropi, uključujući i Srbiju. Međutim, nema mnogo
podataka o hemijskom sastavu plodova godži gajenih u našoj zemlji. Cilj ovog rada je bio da
se izvrši komparativna analiza mineralnog sastava plodova godži prikupljenih sa šest
različitih lokacija u Srbiji. Nakon prethodne mikrotalasne digestije, sadržaj makro- (K, Na, P,
S, Mg, Ca) i mikroelemenata (Fe, Zn, Cu, Cr, Mn, Mo) u ispitivanim uzorcima suvih plodova

AB  - Besides iodine deficiency, autoimmune Hashimoto thyroiditis is the leading cause of
hypothyroidism globally, characterized by the increased titer of thyroid autoantibodies and
destruction of thyroid cells. Graves' disease is the most common etiology of hyperthyroidism
worldwide. Patients with thyroid dysfunction often require dietary modifications. Popular
interventions include supplementation with certain vitamins and minerals, as well as trace
elements such as iodine and selenium. The intake of food containing goitrogens should be limited.
Goitrogens are substances of plant origin that interfere with the production of thyroid hormones,
increasing the risk for goiter and hypothyroidism. The primary dietary sources of goitrogens are
cruciferous vegetables, soy products, starchy plants, and some fruits. Beyond essential nutrients,
there has been an increasing interest in using specific nutraceuticals, including myoinositol, L-
carnitine, melatonin, and resveratrol, as potential preventive and therapeutic agents in thyroid
diseases. Even though current evidence promotes some beneficial outcomes of these
nutraceuticals, further investigations are needed to clarify dose-dependent effects, duration of
supplementation, combination in different clinical settings, and the exact mechanism of their
action in thyroid disorders.
AB  - Pored nedostatka joda, najčešća etiologija hipotireoze u razvijenim zemljama je Hašimoto tireoiditis, koji karakteriše povišen nivo serum autoantitela i limfocitna infiltracija štitaste žlezde. Grejvsova bolest je vodeći uzrok hipertireoza na globalnom nivou. Pacijenti sa oboljenjem štitaste žlezde često zahtevaju modifikaciju dijetarnog režima. Popularne intervencije uključuju suplementaciju određenim vitaminima, mineralima i mikroelementima kao što su jod i selen. Preporučuje se ograničen unos namirnica koje sadrže goitrogene supstance jer ometaju normalnu sintezu tiroidnih hormona, povećavajući rizik za nastanak strume i hipotireoze. Primarni izvori goitrogena u ishrani su kruciferno povrće, proizvodi od soje, skrobne biljke i pojedine vrste voća. Osim esencijalnih nutrijenata, postoji sve veće interesovanje za primenu specifičnih nutraceutika u prevenciji i koterapiji bolesti štitaste žlezde, kao što su mioinozitol, L-karnitin, melatonin i rezveratrol. Trenutni dokazi ukazuju na moguće promotivne efekte ovih jedinjenja u oboljenjima štitaste žlezde. Potrebna su dalja ispitivanja koja bi pratila uticaj doze i dužine suplementacije nutraceutika i potvrdila tačne mehanizme njihovog delovanja u poremećajima funkcije štitaste žlezde.

elements such as iodine and selenium. The intake of food containing goitrogens should be limited.
Goitrogens are substances of plant origin that interfere with the production of thyroid hormones,
increasing the risk for goiter and hypothyroidism. The primary dietary sources of goitrogens are
cruciferous vegetables, soy products, starchy plants, and some fruits. Beyond essential nutrients,
there has been an increasing interest in using specific nutraceuticals, including myoinositol, L-
carnitine, melatonin, and resveratrol, as potential preventive and therapeutic agents in thyroid
diseases. Even though current evidence promotes some beneficial outcomes of these
nutraceuticals, further investigations are needed to clarify dose-dependent effects, duration of
supplementation, combination in different clinical settings, and the exact mechanism of their
action in thyroid disorders., Pored nedostatka joda, najčešća etiologija hipotireoze u razvijenim zemljama je Hašimoto tireoiditis, koji karakteriše povišen nivo serum autoantitela i limfocitna infiltracija štitaste žlezde. Grejvsova bolest je vodeći uzrok hipertireoza na globalnom nivou. Pacijenti sa oboljenjem štitaste žlezde često zahtevaju modifikaciju dijetarnog režima. Popularne intervencije uključuju suplementaciju određenim vitaminima, mineralima i mikroelementima kao što su jod i selen. Preporučuje se ograničen unos namirnica koje sadrže goitrogene supstance jer ometaju normalnu sintezu tiroidnih hormona, povećavajući rizik za nastanak strume i hipotireoze. Primarni izvori goitrogena u ishrani su kruciferno povrće, proizvodi od soje, skrobne biljke i pojedine vrste voća. Osim esencijalnih nutrijenata, postoji sve veće interesovanje za primenu specifičnih nutraceutika u prevenciji i koterapiji bolesti štitaste žlezde, kao što su mioinozitol, L-karnitin, melatonin i rezveratrol. Trenutni dokazi ukazuju na moguće promotivne efekte ovih jedinjenja u oboljenjima štitaste žlezde. Potrebna su dalja ispitivanja koja bi pratila uticaj doze i dužine suplementacije nutraceutika i potvrdila tačne mehanizme njihovog delovanja u poremećajima funkcije štitaste žlezde.",

AB  - Malnutrition as a consequence of the disease occurs most
often in cancer patients, not only because of the cancer
itself, but also because of the oncological treatment. The
most important cause is chemotherapy, followed by ra-
diotherapy and onco-surgery. Therefore, efforts are being
made all over the world to find different ways to solve this
difficult medical problem. Given that the mechanism of
malnutrition caused by cancer is not sufficiently elucidat-
ed, the efforts made to design an adequate approach and
treatment of this disorder are often unsuccessful. In order
to improve the nutritional status of oncology patients, their
nutritional disorder should be adequately diagnosed and
then specific measurements should be performed (deter-
mination of body composition, the proportion of water, fat,
muscle, as well as the determination of various biomarkers
in the blood, for example markers inflammation). In this way, it is possible to formulate a multimodal approach to the
treatment of malnutrition in oncology patients, which would include the intake of adequate foods, increased physical
activity and personalized supplementation.
AB  - Pothranjenost kao posledica bolesti se najčešće javlja kod
onkoloških pacijenata i to ne samo zbog samog kancera,
već i zbog onkološkog lečenja. Najznačajniji uzročnik je
hemioterapija, potom radioterapija i onko-hirurgija. Zbog
toga se širom sveta ulažu napori i pronalaze različiti načini
za rešavanje ovog teškog medicinskog problema. S obzirom
na to da mehanizam nastanka pothranjenosti uzrokovane
karcinomom nije dovoljno rasvetljen, napori koji se ulažu
da se osmisli adekvatan pristup i tretman ovog poremećaja se često neuspešno završe. Da bi se nutritivni status onko-
loških pacijenata popravio njima pre svega treba da bude dijagnostikovan nutritivni poremećaj, a zatim da se sprovedu
specifična merenja (određivanje sastava tela, udeo vode, masti, mišića, kao i da se u krvi odrede različiti biomarkeri, na
primer markeri zapaljenja). Na taj način je moguće formulisati multimodalni pristup u lečenju pothranjenosti onkoloških
bolesnika koji bi obuhvatio unos adekvatnih namirnica, povećanje fizičke aktivnosti i personalizovanu suplementaciju.

AB  - Nuts and seeds are an indispensable part of the plant-based diet, which is becoming increasingly popular due to the evidence of their health benefits and contribution to sustainability and planetary health. Since the health effects of consuming nuts and seeds directly depend on their nutritional composition and consumed amount, it is essential to know the exact chemical composition of each nut and seed so that appropriate dietary interventions can be adequately planned. The present study aimed to examine the chemical composition of nuts and seeds obtained from the Serbian market and to highlight the similarities and differences in their nutritional composition. In twenty-four samples of nuts and seeds, the content of total lipids, including fatty acid profile, total proteins, including amino acid profile, total carbohydrates (sugars and fibers), phytosterols, and minerals were determined. Content of selected nutrients in grams (g) or milligrams (mg) of nuts and seeds was expressed in one portion (28 g) and as a percentage of contribution of Reference Intakes (% RI) and Dietary Reference Value (% DRV) for macronutrients and minerals, respectively. Some of the seed representatives appeared to be rich sources of essential omega-3 fatty acid, α-linolenic acid (ALA) (flax seed vs. walnut, 6.50 vs. 0.56 g per portion, respectively), dietary fibers (chia seed vs. raw almond, 10.6 vs. 3.4 g per portion, respectively), calcium (black sesame seed vs. almond roasted, 32.4% NRV vs. 8.1% NRV per portion, respectively), magnesium (hemp seed vs. Brazil nut, 38.3% NRV vs. 27.8% NRV per portion, respectively), and zinc (hemp seed vs. pine nut, 21.4% NRV vs. 17.6% NRV per portion, respectively). Our results highlighted the crucial role of seeds in the diet, especially as a better source of nutrients compared to nuts. Furthermore, it was seen that nuts and seeds are different and complementary in their composition. Thus, in order to meet the needs for certain nutrients for which nuts and seeds are used as dietary sources (essential fatty acids, minerals, dietary fibers), it would be beneficial to combine both nuts and seeds as a part of a healthy dietary pattern.

Effects of short-term magnesium supplementation on ionized, total magnesium and other relevant electrolytes levels

AB  - This study aimed to investigate the short-term effects of three magnesium (Mg) dietary supplements containing mineral immediately available for absorption on Mg biochemical status indices (ionized and total Mg), as well as their effects on electrolytes levels in healthy female young adults (n = 61). After a 10-days intervention period supplementation with powder/granulate containing Mg oxide led to an increase in both ionized Mg concentration and % in total Mg in comparison with the baseline. Supplementation with Mg citrate was associated with the significant increase in % of ionized fraction and decrease in serum total Mg concentration. By contrast, among participants consuming Mg carbonate in the form of effervescent tablets ionized Mg concentration and % in total Mg decreased, without detectable changes in serum total Mg. In conclusion, after the short-term supplementation period, Mg oxide demonstrated superior bioavailability compared to the other examined Mg supplements without affecting other minerals’ levels.

Quality characteristics of oils from selected edible seeds

AB  - Many types of vegetable oils produce around the world. They are useful in nutrition,
prevention and treatment of diseases. Some oils traditionally have been well known for a long
time and have been shown many potential health benefits, such as, cardioprotective effect,
effect on digestion, risk of some cancer and it is also used in the treatment of skin infections.
This work was conducted to study some quality criteria of oil extracted from seven different
raw seeds purchased in the Serbian market, namely: sunflowers, sesame seeds, black sesame
seeds, tickles seeds, chia seeds, flax seeds and hemp seeds. Oils are essentially regarded in
terms of quality based on their free fatty acid, iodine value and peroxides value. Oils were
extracted from the seeds by cold extraction with petroleum ether. Quality characteristics,
such as refractive index, acid value, peroxide value, iodine value and saponification value and
unsaponifiable matter were determined. For the determination of these parameters, official
methods (ISO 6320; ISO660; ISO 3960; ISO 3961; ISO 3657 and ISO 18609, respectively) were
used. The contents of investigated parameters in seed samples were determined in the range
of 1.467 to 1.485 nD for refractive index; 1.62 to 4.95 mg KOH/g for acid value; 5.21 to 7.45
for peroxide value; 118 to 197 for iodine value; 180 to 193 for saponification value and 3.14
to 7.26 g/kg for the unsaponifiable matter.
Data obtained in this investigation indicate that all quality parameters of the seed samples,
except peroxide value , comply with the national and Codex standards.

prevalent method of online instruction, irrespective of
notable differences and obvious limitations when compared
to their in-person delivery. Study aim was to assess students’
perspective on online lectures held during the emergency
remote teaching (ERT) shift due to the COVID-19 pandemic.
Method: Students were invited to take part in online survey
related to their experience with ERT. Survey included 25 items
related to: satisfaction (14 items), motivation (three items),
interaction with peers and lecturers (four items), and
perceived challenges (four items). A 5-point Likert scale was
employed. Statistical analysis was performed using the SPSS
software.
Results: A total of 387 students participated in the survey.
The majority of respondents (79.3%) were junior students.
Among the respondents, 72.6% reported no previous
experience with online learning. Although a relatively high
level of satisfaction was reported (mean score 3.91 ± 0.75),
challenges were also scored relatively high (3.05 ± 0.99),
while interaction was scored somewhat lower (2.98 ± 0.73),
and the lowest mean score was observed for motivation (2.73
± 0.58). Students reported having trouble maintaining
motivation, concentration and focus during online lectures,
which usually took many hours per day. Interaction with
peers was reported as unsatisfactory (2.48 ± 1.46), whereas it
was more feasible with lecturers (3.24 ± 1.42). Students were
quite satisfied with the ability to organise their time flexibly
(71.4%), and with the workload (54.5%), while they were less
convinced that online sessions provided enough
opportunities to reflect on what was learnt (50.1% agree,
25.1% neither agree nor disagree).
Conclusions: The results obtained indicate that students are
somewhat hesitant with respect to online lectures as the
main mode of instruction. Lectures, generally, place students
in a passive role, which is further increased in online delivery.
In order to support students’ engagement and success, online
lectures should be combined with more active instructional
strategies.

Magnesium supplementation and iron status among female students: the intervention study

AB  - Background: Literature data indicate the benefit of magne-
sium (Mg) supplementation. The aim of this study was to
examine the effect of short-term Mg supplementation on
iron status in healthy female participants.
Methods: One hundred healthy female students of the
University of Belgrade - Faculty of Pharmacy participated the
study during eleven intervention days. Students ingested Mg
preparations with the same dose of the active substance. The
analysis included the measurement of serum iron, unsaturat-
ed iron binding capacity (UIBC), total iron binding capacity
(TIBC), total Mg (tMg), ionized Mg (iMg), complete blood
count, met-, carboxy- and oxy-haemoglobin (metHgb,
COHgb, O2Hgb). Transferrin concentrations and percentage
of transferrin saturation (SAT) were calculated manually. The
association among the analyzed biochemical parameters was
examined using polynomial regression. A principal compo-
nent analysis (PCA) was used for the evaluation of interde-
pendence between the analyzed parameters.
Results: A statistically significant trend for change in O2Hgb
(%) by tertiles of iMg concentrations was found (P = 0.029).
Serum tMg reached significant positive correlation with the
SAT at concentration levels greater than 0.9 mmol/L, after
11 days of intervention (R2=0.116). Ionized Mg in a con-
centration higher than 0.6 mmol/L is positively correlated
with SAT and serum Fe (R2=0.214; 0.199, respectively).
PCA revealed variability of 64.7% for two axes after 11 days.
Conclusions: Mg supplementation leads to an improvement
in the certain iron status parameters even in individuals with
optimal levels of these indices. However, caution should be
exercised when supplementing Mg, and laboratory monitor-
ing of the interaction is required.
AB  - Uvod: Literaturni podaci ukazuju na benefit suplementacije magnezijumom (Mg). Cilj ove studije bio je da se ispita uticaj kratkotrajne suplementacije Mg na status gvožđa kod zdravih žena. Metode: Sto zdravih studentkinja Univerzitet u Beogradu - Farmaceutskog fakulteta je učestvovalo u istraživanju tokom jedanaest dana intervencije. Studenti su uzimali preparate Mg sa istom dozom aktivne supstance. Effects of probiotic supplementation on platelet morphology in overweight/obese woman

AB  - Obesity could be associated with enhanced platelet (PL) function and thrombosis.
Also, changes in gut microbiota composition were observed in obese patients, and probiotics
supplementation has been shown to improve some of the obesity-associated metabolic
parameters. This study aimed to determine the possible effects of probiotic supplementation
on platelet morphology in overweight/obese premenopausal women.Twenty overweight
(BMI = 25.0-29.9 kg/m2) and obese (BMI ≥ 30.0 kg/m2) women participated in double-
blind, randomized, placebo-controlled study. They were randomly assigned to receive one
capsule daily of probiotics (7x1010 CFU Lactobacillus plantarum 299v (DSM9843), 5x109
CFU Saccharomyces cerevisiae var. boulardii and 40mg octacosanol; N=10) or placebo
(N=10) for 3 months. To determine changes in the parameters of platelet activation - the
platelet count (PC), platelet distribution width (PDW), Feret diameter, and hypogranular
appearance, blood samples were obtained for an automated hematology analyser and
peripheral smears staining. Although difference in PC was not found between groups,
supplementation with probiotics decreased PDW compared to the placebo group (p<0.05).
Regarding platelets diameter, there is an decrease in group supplemented with probiotics
compared to placebo, however, a statistical difference has not been reached. Further, the
proportion of hypogranular PL was increased in a probiotic-supplemented group compared
to the placebo group (p<0.01). In conclusion, probiotic supplementation achieved
improvements in platelets morphology and hematological indices in overweight/obese
premenopausal women.
AB  - Gojaznost je često povezana sa povećanom funkcijom krvnih pločica i trombozom.
Takođe, istraživanja ukazuju na promenjen sastav mikrobioma creva kod gojaznih osoba,
kao i da suplementacija određenim probioticima može imati pozitivan uticaj na telesnu
masu. Cilj rada je bio da se ispita uticaj suplementacije probiotskog preparata na morfološke

studiji. U tu svrhu, regrutovano je 20 žena sa prekomernom težinom (BMI ≥ 25,0 kg/m2) koje

izmeren njihov dijametar iz krvnih razmaza. Analiza je pokazala da su krvne pločice kod
gojaznih/žena sa prekomernom težinom uglavnom krupne, što je jedan od pokazatelja
njihove aktivnosti. U interventoj grupi nije zapažena promena u broju krvnih pločica, ali je
značajno smanjen PDW u poređenju sa placebo grupom (p < 0,05). Dalje, pokazano je da je
udeo hipogranularnih krvnih pločica bio povećan u poređenju sa placebo grupom (p < 0,01).
Ovi rezultati ukazuju na pozitivan efekat probiotika na morfološke karakteristike krvnih
pločica i mogućnost primene probiotika u regulaciji njihove aktivnosti u patološkim
stanjima.

Also, changes in gut microbiota composition were observed in obese patients, and probiotics
supplementation has been shown to improve some of the obesity-associated metabolic
parameters. This study aimed to determine the possible effects of probiotic supplementation
on platelet morphology in overweight/obese premenopausal women.Twenty overweight
(BMI = 25.0-29.9 kg/m2) and obese (BMI ≥ 30.0 kg/m2) women participated in double-
blind, randomized, placebo-controlled study. They were randomly assigned to receive one
capsule daily of probiotics (7x1010 CFU Lactobacillus plantarum 299v (DSM9843), 5x109
CFU Saccharomyces cerevisiae var. boulardii and 40mg octacosanol; N=10) or placebo
(N=10) for 3 months. To determine changes in the parameters of platelet activation - the
platelet count (PC), platelet distribution width (PDW), Feret diameter, and hypogranular
appearance, blood samples were obtained for an automated hematology analyser and
peripheral smears staining. Although difference in PC was not found between groups,
supplementation with probiotics decreased PDW compared to the placebo group (p<0.05).
Regarding platelets diameter, there is an decrease in group supplemented with probiotics
compared to placebo, however, a statistical difference has not been reached. Further, the
proportion of hypogranular PL was increased in a probiotic-supplemented group compared
to the placebo group (p<0.01). In conclusion, probiotic supplementation achieved
improvements in platelets morphology and hematological indices in overweight/obese
premenopausal women., Gojaznost je često povezana sa povećanom funkcijom krvnih pločica i trombozom.
Takođe, istraživanja ukazuju na promenjen sastav mikrobioma creva kod gojaznih osoba,
kao i da suplementacija određenim probioticima može imati pozitivan uticaj na telesnu
masu. Cilj rada je bio da se ispita uticaj suplementacije probiotskog preparata na morfološke
karakteristike krvnih pločica u randomizovanoj, dvostruko-slepoj, placebo-kontrolisanoj

Influence of various dietary regimes upon immunity

AB  - Although it is considered that optimal nutrition could provide all essential nutrients
and active compounds, various dietary regimes are often not following the relevant
recommendations. On the contrary, nutritional status is closely related to the immune
system. Namely, insufficient caloric intake or a lack of a nutrient can primarily weaken the
immune response. The gastrointestinal tract plays an essential role in the function of the
immune system, which is both the place of absorption of nutrients and the body's immune
defence. Globally, the most prominent cause of immunodeficiencies is undernutrition and
starvation, up to 50 % of undeveloped countries' populations. Undernutrition negatively
affects both innate and adaptive immunity; considering these facts, it is clear that a
prolonged low caloric intake could affect immunity adversely. Since the sixties, World Health
Organisation has considered relations between nutrition and immunity, and nutritional
immunology is a newer scientific discipline. Later, the precise relationship between low
protein intake and lymphoid tissue involution was defined. Generally, the deficiencies of
energy, proteins, iron, iodine, vitamin A, zinc and calcium are the most common. It is
estimated that every third person is being affected globally. Prolonged hypercaloric intake
and resulting obesity could also exhibit immunocompromising effects through inflammation
and hyperactivation of the immune system. The negative impact on the immune system
could also be provoked by intense physical activity, infective agents, and emotional stress.
AB  - Iako se stručna javnost slaže da se odgovarajući unos nutrijenata može obezbediti
dobro izbalansiranom ishranom, u opštoj populaciji su zastupljeni različiti režimi ishrane
koji u potpunosti ne slede preporuke relevantnih tela. Sa druge strane, nutritivni status je u
bliskoj vezi sa imunskim sistemom. Naime, nedovoljan kalorijski unos ili nedostatak nekog
nutrijenta prvenstveno može dovesti do slabljenja imunskog odgovora. Važnu ulogu u
funkciji imunskog sistema ima i gastrointestinalni trakt koji predstavlja mesto apsopcije
nutrijenata, ali i imunološke odbrane organizma. Najčešć i uzrok imunodeficijencije u svetu je
pothranjenost. i to kod čak 50% stanovništva u zemljama trećeg sveta. Pothranjenost dovodi
do poremećaja i urođenog i stečenog imunskog odgovora. Imajući u vidu ove činjenice, jasno
se nameće zaključak da dugotrajni režimi smanjenog kalorijskog unosa mogu ispoljiti sličan
efekat. Nutritivna imunologija je relativno mlada naučna disciplina koja se bavi ovom
problematikom, a šezdesetih godina izlazi monografija Svetske zdravstvene organizacije na
ovu temu. Sedamdesetih je uspostavljena jasna veza izmedju proteinske malnutricije i
involucije limfoidnog tkiva, pa i timusa. Globalno, među najzastupljenijijim deficitima su
deficit energetskog unosa, proteina, gvožđa, joda, vitamina A, D, cinka i kalcijuma, a procena
je da je svaka treća osoba u svetu pogođena nekim od nutritivnih deficita. Dugotrajan
prekomeran kalorijski unos kao i posledična gojaznost, takođe mogu ispoljiti
imunokompromitujući efekat i to kroz inflamaciju, kao i hiperaktivaciju imunskog odgovora.
Negativan efekat na imunski sistem mogu imati i veoma intenzivan fizički napor, kao i
psihički stress, i različiti infektivni agensi.

Nutraceuticals in prevention and management of COVID-19

AB  - The immune system defends the host from many pathogen-
ic microorganisms such as viruses, bacteria, parasites and
fungi, including a large number of specific cell types, inter-
related molecules, and biological responses. Due to infec-
tions, heightened immune system activity is accompanied
by expanded metabolic activities, requiring appropriate
energy supply, precursors for biosynthesis and regulatory
molecules. Numerous vitamins and minerals play a crucial
role in supporting body’s immunity and fighting against
viral infections. Other bioactive compounds like omega-3
fatty acids, probiotics and antioxidants (alpha-lipoic acid,
quercetin) are also important in the immune response. CO-
VID-19 may develop mild symptoms to severe damage of
the respiratory epithelium followed by a cytokine storm.
Many studies show that vitamin C, vitamin D, zinc and selenium are critical in defending against SARS-CoV-2 infection.
Intestinal dysbiosis is a feature of many infectious diseases, including COVID-19, so dietary approaches to establishing a
healthy microbiota are essential for improving immune function. This paper reviews the data on the roles and potential
effectiveness of selected nutraceuticals in the prevention and treatment of COVID-19.
AB  - Imunski sistem štiti organizam od brojnih patogena (bakterija, virusa, gljivica, parazita) uključujući veliki broj specijalizovanih tipova ćelija, komunikacionih molekula i
funkcionalnih odgovora. Pojačana aktivnost imunskog si
stema usled infekcija praćena je povećanim metaboličkim
aktivnostima, što zahteva izvore energije, supstrate za biosintezu i regulatorne molekule. Brojni vitamini i minerali
imaju ključnu ulogu u podršci imunskom sistemu i smanjenju rizika od infekcija. Ostale bioaktivne komponente kao omega-3 masne kiseline, probiotici i antioksidansi (alfa-lipoinska kiselina, kvercetin) takođe su od značaja u imunološkom
odgovoru. COVID-19 karakterišu kliničke slike od blagih simptoma do teške infekcije respiratornog epitela praćene citokinskom olujom. Pokazano je da starije osobe sa hroničnim bolestima imaju smanjenu aktivnost odbrambenog sistema
i neadekvatan nutritivni status, zbog čega postoji veći rizik za pojavu fatalnih ishoda. Ispitivanja ukazuju da su vitamin
C, vitamin D, cink i selen posebno važni u odbrani od infekcije SARS-CoV-2. Disbioza creva je karakteristika mnogih zaraznih bolesti uključujući COVID-19, zato su dijetetski pristupi za uspostavljanje zdrave mikrobiote važni u poboljšanju
imunoloških funkcija. U ovom radu prikazan je pregled literature o ulozi i potencijalnoj primeni odabranih nutraceutika u
prevenciji i tretmanu COVID-19.

odgovoru. COVID-19 karakterišu kliničke slike od blagih simptoma do teške infekcije respiratornog epitela praćene citokinskom olujom. Pokazano je da starije osobe sa hroničnim bolestima imaju smanjenu aktivnost odbrambenog sistema
i neadekvatan nutritivni status, zbog čega postoji veći rizik za pojavu fatalnih ishoda. Ispitivanja ukazuju da su vitamin
C, vitamin D, cink i selen posebno važni u odbrani od infekcije SARS-CoV-2. Disbioza creva je karakteristika mnogih zaraznih bolesti uključujući COVID-19, zato su dijetetski pristupi za uspostavljanje zdrave mikrobiote važni u poboljšanju
imunoloških funkcija. U ovom radu prikazan je pregled literature o ulozi i potencijalnoj primeni odabranih nutraceutika u

Pumpkin seed cake antioxidant and nutritional value of selected samples

AB  - Pumpkin seed cake, which remains after cold pressing oil extraction, is a nutritionally valuable but inexpensive raw material that is also considered as a potentially rich source of biologically active substances. Thus, the aim of this study was to measure total phenolics content (TPC) of four samples of pumpkin seed cake flour, as well as their antiradical potency by means of DPPH radical scavenging. In order to determine the nutritional value of each sample, moisture, ash, cellulose, lipids, proteins, carbohydrates, mineral content and fatty acid composition were also investigated using conventional methods. Concerning food safety issues the amounts of heavy metals and pesticides were also determined. The results obtained, pointed out differences between samples in their TPC, anti-DPPH activity and nutritional characteristics. TPC, determined as gallic acid equivalents (GA) using the spectrophotometric method with FC reagent, ranged from 24.9-194.1 mg GA/100 g. Correlated with TPC, observed anti-DPPH activity was modest with SC50 values ranged from 0.9-18.5 mg/ml, respectively. As for parameters of nutritional value, obtained results were in the line with previous findings, with protein content ca. 50%. Variations, mainly in the mineral (14.61-30.70 mg/100 g) and the carbohydrate content (9.38-21.86%), could be explained by the different geographical origin of the pumpkins. All tested samples complied with the approved health standards related to the content of heavy metals and pesticides. Nevertheless observed differences, it could be concluded that pumpkin seed cake could be considered as a naturally rich source of proteins, cellulose and minerals (Fe, Cu, Zn, Mg) with a reduced amount of oil, safe for human consumption. It is also a good source of polyphenols, thus its potential as a functional food ingredient should not be neglected.

Edible nuts and seeds are nutrient-rich food, and also valuable source of various bioactive compounds. Among them are phytosterols, plant triterpenes with proven antioxidant, anti-inflammatory and antibacterial properties. Due to their similar structure with cholesterol, these plant sterols, when digested, compete with cholesterol for small intestine absorption leading
to lowering of the cholesterol level in blood.
OBJECTIVES:
The aim of this work is to investigate phytosterol composition of selected nuts and seeds used in nutrition from the Serbian market.
METHOD / DESIGN:
Gas chromatography with flame ionization detector (GC-FID) and gas chromatography with mass spectrometry (GC-MS) analysis of the unsaponifiable fractions was performed on an Agilent 7890A GC equipped with 5975C (inert XL EI/CI) MSD and a FID detector connected by a capillary flow technology two way splitter with make-up (250 °C). A HP-5MS capillary column (Agilent, 30 m × 0.25 mm, 0.25 μm film thickness) was used. The identification of the compounds was based on the comparison of their retention indices (RI), Rt, and mass spectra from NIST/NBS 05, Wiley libraries 8th edition and NIST Chemistry WebBook.29.
RESULTS:
Phytosterols were analyzed as volatile derivatives obtained by the silanization of residual unsaponifiable fractions. Cholesterol standard was used for quantification. Among them, the most abundant was β-sitosterol, followed by stigmasterol, isofucosterol and campesterol (Figure 1).
CONCLUSIONS:
Our results indicate that the seeds (sesame, black sesame, chia seed) contain higher amount
of phytosterols in comparison to the nuts. These results are in correlation with literature
data. The product quality on Serbian market is appropriate according to phytosterols content.

AB  - Numerous epidemiological studies have confirmed that lifestyle and diet can be very effective in preventing and treating many non-communicable diseases. Replacement of unhealthy food intake between the main meals, i.e. snacks, with foods rich in nutrients such as nuts make a significant contribution to the prevention and treatment of some types of cancer, diabetes mellitus type 2 and cardiovascular diseases. Among the essential bioactive components contained in nuts are healthy minerals, such as calcium, magnesium, potassium, phosphorus, zinc, ferrum. The objective of this study was to identify the mineral composition of several varieties of nuts, which are part of everyday diet. The concentrations of 7 elements (Na, K, Ca, Mg, Fe, Zn, and P) were determined in nut samples (peanut, almond, hazelnut, walnut, Brazil nut, cashew, pecan, pistachio and pine nuts). The mineral contents were analyzed by inductively coupled plasma optical emission spectrometry using a Agilend 5110 dual view, ICP-OES, after microwave-assisted acid digestion. The contents of investigated elements in nut samples were determined as mg/kg in the range from 21.4 to 63.0 for Zn; 25.9 to 107.0 for Fe; 84.2 to 1995 for Ca; 981 to 3724 for Mg; 2295 to 4414 for K and 2814 to 7244 for P. The minimum contents of Na were below the detection limit of the method used. The obtained experimental data are another confirmation that nuts, and above all almond and Brazil nut, are important sources of bioactive components i.e. healthy minerals. Knowing the effect on human health, it is necessary the nuts to be recommended and included in the usual daily diet.
