AB  - The aim of this research was to produce a lyophilised water and ethanol extract from Fuscoporia torulosa mushroom, to determine the antimicrobial and antioxidant potential of the extracts and in industrial conditions to produce a new, functional product – Bio Soups, enriched with lyophilised extracts derived from fruiting body of F. torulosa mushroom, at the same time without use of synthetic additives. The application of the lyophilised extracts in the industrial production of dehydrated soups showed positive results. Such soups are characterised with higher (P < 0.05) antimicrobial and antioxidant activity, compared to conventional soups, while it has been proven constant biological potential and stability up to the 90th day of production. This is the first dehydrated soup enriched with lyophilised extract of medicinal mushroom, since its production does not require special conditions, and it possesses exceptional functional properties, this product could have a many times greater market potential compared to conventional soups

The supplementation of a high dose of fish oil during pregnancy and lactation led to an elevation in Mfsd2a expression without any changes in docosahexaenoic acid levels in the retina of healthy 2-month-old mouse offspring

AB  - Introduction: During fetal development, the proper development of neural and visual systems relies on the maternal supplementation of omega-3 fatty acids through placental transfer. Pregnant women are strongly advised to augment their diet with additional sources of omega-3, such as fish oil (FO). This supplementation has been linked to a reduced risk of preterm birth, pre-eclampsia, and perinatal depression. Recently, higher doses of omega-3 supplementation have been recommended for pregnant women. Considering that omega-3 fatty acids, particularly docosahexaenoic acid (DHA), play a crucial role in maintaining the delicate homeostasis required for the proper functioning of the retina and photoreceptors the effects of high-dose fish oil (FO) supplementation during pregnancy and lactation on the retina and retinal pigmented epithelium (RPE) in healthy offspring warrant better understanding. Methods: The fatty acid content and the changes in the expression of the genes regulating cholesterol homeostasis and DHA transport in the retina and RPE were evaluated following the high-dose FO supplementation. Results: Our study demonstrated that despite the high-dose FO treatment during pregnancy and lactation, the rigorous DHA homeostasis in the retina and RPE of the two-month-old offspring remained balanced. Another significant finding of this study is the increase in the expression levels of major facilitator superfamily domain-containing protein (Mfsd2a), a primary DHA transporter. Mfsd2a also serves as a major regulator of transcytosis during development, and a reduction in Mfsd2a levels poses a major risk for the development of leaky blood vessels. Conclusion: Impairment of the blood-retinal barrier (BRB) is associated with the development of numerous ocular diseases, and a better understanding of how to manipulate transcytosis in the BRB during development can enhance drug delivery through the BRB or contribute to the repair of central nervous system (CNS) barriers.

AB  - Semenke predstavljaju najvredniji deo ploda vinove loze. Polifenolna jedinjenja se primarno
koncentrišu tamo, zbog čega semenke poseduju jaku antioksidativnu aktivnost. Zahvaljujući tome,
ekstrakti semenki mogu delovati kao antimikrobni agensi. Ekstrakcija bioaktivnih jedinjenja se
obično vrši pomoću isparljivih, organskih rastvarača. Poslednjih godina, zajedno sa povećanjem
svesti o značaju zaštite životne sredine, različiti „zeleni“ rastvarači su se pojavili kao alternativa
konvencionalnim.
Ova studija je imala za cilj ispitivanje razlika između semenki različitih sorti grožđa u pogledu
njihove antimikrobne aktivnosti prema Staphylococcus aureus. Takođe je procenjen afinitet
eutektičkog rastvarača za ekstrakciju polifenola iz semenki grožđa. Kao referentni rastvarač
korišćen je etanol.
Semenke su izolovane iz pet različitih sorti crvenog grožđa koje se široko gaje u Srbiji.
Ultrazvučna ekstrakcija izvedena je korišćenjem eutektičkog rastvarača (holin hlorid:limunska
kiselina, 2:1, 30 % vode; ChCit) i 70 % etanola. Ukupan sadržaj polifenola (eng. Total Phenolic
Content; TPC) je određen Folin-Ciocalteu metodom. Antimikrobna aktivnost uzoraka je ispitivana
je na standardnom soju Staphylococcus aureus ATCC 6538 bujon-mikrodilucionim testom.
TPC vrednosti su se kretale od 91,75 do 116,71 i od 84,79 do 135,5 mg GAE/g suve mase (za
ChCit i etanolne ekstrakte, respektivno). Semenke sorte Prokupac imale su najveći sadržaj ukupnih
polifenola, bez obzira na upotrebljeni rastvarač. Vrednosti minimalnih inhibitornih koncentracija
(MIK) su se kretale između 0,04 i 0,15 mg/ml. ChCit ekstrakti su bili slični ili čak efikasniji protiv
ove Gram-pozitivne bakterije u poređenju sa etanolnim ekstraktima. Ovo bi moglo biti delimično
objašnjeno antimikrobnom aktivnošću samog rastvarača, pošto je primećeno da ChCit inhibira rast
Staphylococcus aureus (MIK=0,3 mg/ml).
Imajući u vidu da su ekstrakti pokazali znatno jaču aktivnost u odnosu na rastvarač i da su
rezultati ispitivanja antimikrobne aktivnosti bili u značajnoj korelaciji sa sadržajem polifenola,
može se zaključiti da je sinergizam između prisutnih polifenola i ChCit rezultirao snažnom
antimikrobnom aktivnošću protiv Staphylococcus aureus u ekološki prihvatljivijim ekstraktima.

AB  - The recommended fish oil (FO) supplementation doses often yield low omega-3 polyunsaturated fatty acids (PUFAs) tissue bioavailability, and higher doses (up to 10 g per day) have been increasingly recommended. However, the exact effects of such FO supplementation on the healthy retina and retinal pigmented epithelium (RPE) are unknown. Our study showed that the high dose FO treatment did not imbalance the rigorous docosahexaenoic acid (DHA, C22:6n3) homeostasis in the retina and RPE in the three-month-old female B6/SLJ mice. Instead, we have found the significant increase in the expression of Mfsd2a, the main DHA transporter. Mfsd2a is also an essential regulator of blood vessel transcytosis and the decrease in Mfsd2a expression can be a risk factor for developing leaky blood vessels. Therefore, the high-dose FO supplementation emerges as the prophylactic fortifier of the retinal blood vessels.

abstract = "The recommended fish oil (FO) supplementation doses often yield low omega-3 polyunsaturated fatty acids (PUFAs) tissue bioavailability, and higher doses (up to 10 g per day) have been increasingly recommended. However, the exact effects of such FO supplementation on the healthy retina and retinal pigmented epithelium (RPE) are unknown. Our study showed that the high dose FO treatment did not imbalance the rigorous docosahexaenoic acid (DHA, C22:6n3) homeostasis in the retina and RPE in the three-month-old female B6/SLJ mice. Instead, we have found the significant increase in the expression of Mfsd2a, the main DHA transporter. Mfsd2a is also an essential regulator of blood vessel transcytosis and the decrease in Mfsd2a expression can be a risk factor for developing leaky blood vessels. Therefore, the high-dose FO supplementation emerges as the prophylactic fortifier of the retinal blood vessels.",

AB  - Wine industry generates enormous quantities of solid organic waste consisted of
stems, skins and seeds. Grape seeds are considered the most valuable part of a pomace, since
it is rich in oil and containing numerous bioactive compounds. Grape seed oil (GSO)
composition depends mainly on grape variety, but also on environmental factors and
maturation degree. The aim of this study was to investigate the diversity of chemical
composition among seed oils obtained from different grape varieties. Eight varieties were
collected from the same wine region and at the same maturity phase. Investigation of fatty
acid composition was done using GC/FID, while HPLC/FD was employed for vitamin E
analyses. Linoleic acid was the most abundant in all samples, followed by oleic acid.
Saturated fatty acids, such as palmitic and stearic acid, were also present (up to 20 % of the
total fatty acid methyl esters). Vitamin E concentrations were significantly affected by grape
variety (p<0.01). α-tocopherol was found in high concentration in all samples. GSO from
Shiraz variety had about 25 mg α-tocopherol per kg of oil, while Gamay GSO contained more
than six times less amounts of this vitamin E isoform. Sum of β and γ tocopherol also varied
considerable, although Shiraz again stood out with the highest content. Finally, δ tocopherol
was found in four varieties, in minor quantities. Generally, considering variety diversification
on vitamin E composition of GSO, investigations that will include as much varieties as
possible, are needed to single out ones with the highest bio-oil potential.
AB  - Industrija vina ostavlja za sobom ogromne količine čvrstog organskog otpada koji se
sastoji od peteljki, pokožice i semenki grožđa. Semenke se smatraju najvrednijim delom
komine, jer su bogate uljem i sadrže brojna bioaktivna jedinjenja. Sastav ulja iz semenki
grožđa zavisi pre svega od sorte vinove loze, ali i od faktora sredine i stepena zrelosti ploda.
Cilj ovog rada bilo je ispitivanje raznolikosti hemijskog sastava ulja dobijenog iz semenki
različitih sorti grožđa. U tu svrhu, prikupljeno je osam sorti u istoj fazi zrelosti i iz istog
vinskog regiona. Ispitivanje sastava masnih kiselina vršeno je korišćenjem GC/FID, dok je
HPLC/FD korišćen za analizu koncentracije vitamina E. Linolna kiselina je bila
najzastupljenija u svim uzorcima, zatim oleinska kiselina. Zasićene masne kiseline, kao što su
palmitinska i stearinska kiselina, takođe su bile prisutne (do 20 % od ukupnih metil estara
masnih kiselina). Sorta vinove loze je značajno uticala na sadržaj vitamina E (p<0,01). α-
tokoferol je pronađen u visokim koncentracijama u svim uzorcima. Ulje iz semenki sorte
Širaz sadržalo je oko 25 miligrama α-tokoferola po kilogramu, dok je u ulju sorte Game
kvantifikovana šest puta manja koncentracija ove izoforme vitamina E. Zbir β i γ tokoferola
takođe je značajno varirao, iako se Širaz ponovo istakao sa najvećim sadržajem. δ tokoferol je
pronađen u ulju četiri sorte, u manjim količinama. Generalno, s obzirom na raznovrsnost
sastava vitamina E u ulju iz semenki grožđa, potrebna su opsežnija istraživanja koja će
obuhvatiti veći broj sorti vinove loze kako bi se izdvojile one sa najvećim potencijalom bio-
ulja.

AB  - Winemaking generates large quantities of grape waste consisting of seeds, skin and stalks. Given that grape seeds are a rich source of different bioactive compounds, the main goal of this research was to optimize grape seed phenol extraction using a Box–Behnken design. The following conditions were derived from the optimization process: sample:solvent ratio of 1:10 w/v, extraction time of 30 min and extraction temperature of 50 °C. In addition, a sustainable (green) approach for obtaining extracts was developed by comparing choline chloride:citric acid-ChCit (natural deep eutectic solvent (NADES)) and ethanol extraction methods with respect to phenol profiles and antioxidant activity. This study was conducted on seeds from eight different red grape varieties. Phenolic acids, flavan-3-ols and procyanidins were characterized using HPLC–MS/MS, and the concentration of procyanidin B1 was above 1 mg/g of dry weight in all analyzed samples. The contents of all phenol classes and antioxidant activities were found to not differ significantly between the solvents, but NADES was found to offer valuable advantages. Importantly, ChCit showed a strong affinity toward procyanidins and a strong correlation between antioxidant activity and quantified phenolic compounds.

Lipid profile and health benefit of commonly consumed fresh water and sea water fish species in the population of Serbia

This study was designed to determine and compare fat, fatty acids and lipid qual-ity indices in 10 commercial fish species available on the Serbian market, as well as relation between their price and nutritional val-ue. Methods. Freshwater fish originated from the Danube River in the Belgrade Region, while seawater fish were mostly from the Adriatic Sea. A gas chromatography method was used to define fatty acids in 40 fish samples after lipid extraction. Cost-minimization analysis was conducted to assess the economic util-ity. Results. Seawater fish had a significantly higher value of flash lipid quality compared to the freshwater fish (p < 0.05). Value of Background/Aim. Value of hypercholesterolaemic fatty acids (OFA) for the freshwater group was 18.70 (17.40‒21.30) while the seawater group had a similar range of values 18.90 (17.55‒22.75). Hypocholesterol-aemic fatty acids (DFA) also showed similar ranges for both groups: 68.80 (66‒70.20) for freshwater and 68.40 (64.85‒73.05) for seawater group. The ratio of DHA/EPA ranged from 1.8 for sardine samples and up to 10 for tuna samples, indicating that the amount of DHA in natural samples exceeds the amount of EPA in many cases. The values of ath-erogenic (AI) and thrombogenic index (TI) were lower than 1 for all analysed samples. Conclusion. Sardine and mackerel had the highest content of n-3 LC-PUFA and presented the least expensive sources of EPA and DHA. The low values of AI and TI obtained from studied fish indicate its benefits from a health point of view.
AB  - Uvod/Cilj. Unos n-3 polinezasićenih masnih kiselina (PMK) je od velike važnosti u prevenciji i tretmanu različitih oboljen-ja. Generalno posmatrajući, prosečan unos n-3 PMK je obično značajno niži od utvrđenih preporuka. Lipidi riba sadrže masne kiseline n-3 serije od kojih su najvažnije ei-kozapentaenska (20:5 n-3, EPA) i dokozaheksaenska (20:6 n-3, DHA) masna kiselina. Cilj ove studije bio je odrediti i uporediti lipidni profil i lipidne indekse u 10 različitih vrsta riba dostupnih na tržištu Srbije. Takođe, određen je odnos cene i nutritivne vrednosti odabranih vrsta. Metode. Ispiti-vane su rečne ribe Dunava iz Beogradskog regiona, dok su morske ribe uglavnom vodile poreklo iz Jadranskog mora. Gasna hromatografija sa jonskim detektorom je korišćena za određivanje masnih kiselina u 40 uzoraka nakon lipidne ekstrakcije. Cost-minimization analiza je korišćena za procenu ekonomske koristi. Rezultati. Morske ribe su imale značajno veće vrednosti za parametar flash lipid quality u odnosu na rečne ribe (p < 0,05). Vrednosti hiperholesterolemijskih mas-nih kiselina za grupu rečnih riba [18,70 (17,40‒21,30)] bile su slične vrednostima dobijenim za morske ribe [18,90 (17,55‒22,75)]. Hipoholesterolemijske masne kiseline su takođe pokazale sličan raspon vrednosti za rečne [68.80 (66–70.20)] i morske ribe [68.40 (64.85–73.05)]. Odnos DHA/EPA kretao se od 1,8 za uzorke sardine, do 10 za uzorke tune, što potvrđuje činjenicu da DHA prevazilazi vrednosti za EPA u svim ispitivanim uzorcima. Vrednosti za aterogeni i trombogeni indeks su bile niže od 1 za sve ana-lizirane uzorke. Zaključak. Sardine i skuša su imale najveći sadržaj n-3 PMK i predstavljale su najekonomičniji izvor EPA i DHA. Niske vrednosti za aterogeni i trombogeni in-deks ukazuju na potencijalno povoljan zdravstveni efekat ispitivanih vrsta.

This study was designed to determine and compare fat, fatty acids and lipid qual-ity indices in 10 commercial fish species available on the Serbian market, as well as relation between their price and nutritional val-ue. Methods. Freshwater fish originated from the Danube River in the Belgrade Region, while seawater fish were mostly from the Adriatic Sea. A gas chromatography method was used to define fatty acids in 40 fish samples after lipid extraction. Cost-minimization analysis was conducted to assess the economic util-ity. Results. Seawater fish had a significantly higher value of flash lipid quality compared to the freshwater fish (p < 0.05). Value of Background/Aim. Dietary intake of n-3 long-chain polyun-saturated fatty acids (LC-PUFA) is important in prevention and treatment of different diseases. In general population, the average intake of n-3 LC-PUFA is often significantly lower than recom-mended levels. Fish lipids are rich sources of these fatty acids, of which the most important are eicosapentaenoic (20:5 n-3, EPA) and docosahexaenoic (22:6 n-3, DHA) fatty acids. Value of hypercholesterolaemic fatty acids (OFA) for the freshwater group was 18.70 (17.40‒21.30) while the seawater group had a similar range of values 18.90 (17.55‒22.75). Hypocholesterol-aemic fatty acids (DFA) also showed similar ranges for both groups: 68.80 (66‒70.20) for freshwater and 68.40 (64.85‒73.05) for seawater group. The ratio of DHA/EPA ranged from 1.8 for sardine samples and up to 10 for tuna samples, indicating that the amount of DHA in natural samples exceeds the amount of EPA in many cases. The values of ath-erogenic (AI) and thrombogenic index (TI) were lower than 1 for all analysed samples. Conclusion. Sardine and mackerel had the highest content of n-3 LC-PUFA and presented the least expensive sources of EPA and DHA. The low values of AI and TI obtained from studied fish indicate its benefits from a health point of view., Uvod/Cilj. Unos n-3 polinezasićenih masnih kiselina (PMK) je od velike važnosti u prevenciji i tretmanu različitih oboljen-ja. Generalno posmatrajući, prosečan unos n-3 PMK je obično značajno niži od utvrđenih preporuka. Lipidi riba sadrže masne kiseline n-3 serije od kojih su najvažnije ei-kozapentaenska (20:5 n-3, EPA) i dokozaheksaenska (20:6 n-3, DHA) masna kiselina. Cilj ove studije bio je odrediti i uporediti lipidni profil i lipidne indekse u 10 različitih vrsta riba dostupnih na tržištu Srbije. Takođe, određen je odnos cene i nutritivne vrednosti odabranih vrsta. Metode. Ispiti-vane su rečne ribe Dunava iz Beogradskog regiona, dok su morske ribe uglavnom vodile poreklo iz Jadranskog mora. Gasna hromatografija sa jonskim detektorom je korišćena za određivanje masnih kiselina u 40 uzoraka nakon lipidne ekstrakcije. Cost-minimization analiza je korišćena za procenu ekonomske koristi. Rezultati. Morske ribe su imale značajno veće vrednosti za parametar flash lipid quality u odnosu na rečne ribe (p < 0,05). Vrednosti hiperholesterolemijskih mas-nih kiselina za grupu rečnih riba [18,70 (17,40‒21,30)] bile su slične vrednostima dobijenim za morske ribe [18,90 (17,55‒22,75)]. Hipoholesterolemijske masne kiseline su takođe pokazale sličan raspon vrednosti za rečne [68.80 (66–70.20)] i morske ribe [68.40 (64.85–73.05)]. Odnos DHA/EPA kretao se od 1,8 za uzorke sardine, do 10 za uzorke tune, što potvrđuje činjenicu da DHA prevazilazi vrednosti za EPA u svim ispitivanim uzorcima. Vrednosti za aterogeni i trombogeni indeks su bile niže od 1 za sve ana-lizirane uzorke. Zaključak. Sardine i skuša su imale najveći sadržaj n-3 PMK i predstavljale su najekonomičniji izvor EPA i DHA. Niske vrednosti za aterogeni i trombogeni in-deks ukazuju na potencijalno povoljan zdravstveni efekat ispitivanih vrsta.",

AB  - A considerable interest has been developed over the years for fruits and vegetables
consumption due to their potential biological and health promoting effects. This effect is
attributed to antioxidants. Among the most important natural antioxidants are secondary
plants metabolites, polyphenols. Epidemiological studies indicate that an increase in the
consumption of fruits and vegetables is associated with a decrease in the incidence of
various diseases. The aim of this work was to estimate the intake of polyphenols in the adult
population of the Republic of Serbia based on literature data on polyphenol content in
certain foods and intake data obtained from the Bulletin - Household Budget Survey, 2019
(Statistical Office of the Republic of Serbia), as well as literature data on intake. Based on
literature data on the content of polyphenols in different food groups, it was determined that
the following food groups can be sources of polyphenols in the diet of the Serbian adult
population: vegetables, fruits, coffee, tea, cacao, chocolate, wine, nuts, and fruit juices. Using
the Statistical Office of the Republic of Serbia data, as well as the literature data on the
content of polyphenols in foods that are the major sources of polyphenols in the diet of the
adult Serbia population, the polyphenol intake was estimated. The daily intake of
polyphenols in the adult population of Serbia is about 500 mg. It is necessary to increase the
daily intake of polyphenols in the adult population in Serbia.
AB  - Veliko interesovanje poslednjih godina posvećeno je povećanom unosu voća, povrća i
pozitivnom uticaju na zdravlje. Ovaj efekat pripisuje se i antioksidansima. U najznačajnije
prirodne antioksidanse ubrajaju se sekundarni metaboliti biljaka, polifenoli. Epidemiološke
studije ukazuju da je poveć an unos voća i povrća povezan sa smanjenjem incidence različitih
vrsta bolesti. Cilj ovog rada je, da se na osnovu literaturnih podataka o sadržaju polifenola u
pojedinim namirnicama, na osnovu podataka o unosu namirnica dobijenih iz Biltena –
Anketa o potrošnji domaćinstva, 2019. (Republički zavod za statistiku, Republika Srbija), kao
i literaturnih podataka o unosu, proceni unos polifenola kod odraslog stanovništva
Republike Srbije. Na osnovu literaturnih podataka o sadržaju polifenola u različitim grupama
namirnica utvrđeno je da sledeće grupe namirnica mogu biti izvori polifenola u ishrani
odraslog stanovništva Republike Srbije: povrće, voće, kafa, čaj, kakao, čokolada, vino,
jezgrasto voće i voćni sokovi. Koristeći podatke Republičkog zavoda za statistiku Republike
Srbije, kao i literaturnih podataka za sadržaj polifenola u namirnicama koje su izvor
polifenola u ishrani odraslog stanovništva Srbije izvršena je procena unosa polifenola.
Dnevni unos polifenola kod odraslog stanovništva u Beogradu na osnovu dobijenih podataka
iz Ankete o potrošnji domaćinstva za 2019. godinu i uzimajući u obzir namirnice koji su po

AB  - Cardiotoxicity is a frequent undesirable phenomenon observed during oncological treatment that limits the therapeutic dose of antitumor drugs and thus may decrease the effectiveness of cancer eradication. Almost all antitumor drugs exhibit toxic properties towards cardiac muscle. One of the underlying causes of cardiotoxicity is the stimulation of oxidative stress by chemotherapy. This suggests that an appropriately designed diet or dietary supplements based on edible plants rich in antioxidants could decrease the toxicity of antitumor drugs and diminish the risk of cardiac failure. This comprehensive review compares the cardioprotective efficacy of edible plant extracts and foodborne phytochemicals whose beneficial activity was demonstrated in various models in vivo and in vitro. The studies selected for this review concentrated on a therapy frequently applied in cancer, anthracycline antibiotic—doxorubicin—as the oxidative stress- and cardiotoxicity-inducing agent.

The impact of diet and fibre fractions on plasma adipocytokine levels in prediabetic adults

AB  - The impact of diet and fibre fractions on adipocytokines in obese subjects with a risk of diabetes has not been investigated in detail yet. The purpose of the study is to evaluate the effects of a 12-month lifestyle intervention with different fibre profiles (resistant starch (RS)—rich fibre, or ordinary food fibre profiles) on adipocytokine levels. Fifty participants are divided into two groups (RS group and Fibre group). The groups differ only in the percentage of the recommended level of the RS consumed as a fraction of the same total fibre amount. The applied dietary intervention includes intake of 7531 KJ/daywith a total fibre portion of 25–35 g/dayfor both groups that includes 15 g/day of RS for the RS group only. The levels of leptin, adiponectin, apelin, resistin, tumor necrosis factor (TNF)-alpha and C-reactive protein (CRP) are measured, and their relationship to anthropometric and biochemical parameters is estimated. Along with significant body weight loss, only leptin is significantly reduced by 13% in the RS group while in the Fibre group, apelin levels are significant (−21%). Polynomial regression shows a negative correlation between RS intake and adiponectin (R2 = 0.145) and resistin level (R2 = 0.461) in the RS group. This study indicates the possibility that fibre fractions differently influence the outcome of lifestyle interventions, as well as their adipocytokine levels, in obese prediabetic adults.

AB  - Antioxidant properties of polyphenols are believed to underlie cocoa chemopreventive potential. However, it has been not recognized if these effects are mainly caused by the most abundant components or result from concerted action of major and minor cocoa bioactives as proposed by food synergy concept. This study was aimed at resolving this question. Initially, the cocoa extract composition was determined by HPLC-DAD-MS. Then, bioactivities of cocoa extract and a series of artificial mixtures of cocoa phytochemicals were tested to compare their redox properties in cell-free system and redox-associated biological effects in human colon cancer HT29 cells serving as a model of human alimentary tract. Under cell-free conditions, DPPH test as well as differential pulse voltammetry showed the highest antioxidant activity for cocoa powder extract (CE), but surprisingly, did not reveal any dose-dependent differences between mixtures despite growing concentration and complexity of antioxidants. Basically, to the same conclusion lead determinations of cellular antioxidant activity; CE was the most efficient in cell protection against ROS whereby concentration of catechins in studied solutions had to be above 10 μM to override cellular redox homeostasis. Cell growth inhibition was dose-dependent only for mixtures that consisted of main catechins at narrow range of low concentrations (0.01 – 1 μM C+EC). Neither clear relationship between composition of cocoa phytochemicals and nutrigenomic activity of CE and matching mixtures was spotted. Therefore, our study indicates that the bioactivity of non-toxic complex natural mixtures such as cocoa is strongly affected by interactions between their components, as predicted by food synergy.

extraction recovery. Nevertheless, there is still a question concerning the pretreatment of grape
seeds. The aim of the present study was to investigate the impact of defatting process on total
polyphenol content and antioxidant activity of grape seed extracts. For that purpose seeds were
obtained from eight different grape varieties. Extraction with 70 % ethanol was performed on
both, crude and defatted seeds (lipid fraction was removed by Soxhlet method of extraction).
Determination of total phenolic content (TPC) was done using Folin-Ciocalteu assay.
Antioxidant activity was investigated through four different tests (FRAP, CUPRAC, DPPH and
ABTS) and obtained results were combined in unique Antioxidant Composite Index (ACI). TPC
values ranged from 50.48 to 121.06 and from 38.04 to 108.17 mg GAE/g dry weight for crude
and defatted grape seed extracts, respectively. Higher phenolic content determined in extracts
obtained from crude seeds could be explained by the presence of lipophilic biologically active
compounds in non-removed lipid fraction. Discrepancies between varieties are presumably
present due to different morphological properties of seeds, environmental and agricultural
conditions. Concerning antioxidant activity, all tests were significantly correlated with TPC,
suggesting the strong contribution of phenolic compounds to this biological activity.

Extraction has been usually performed using petrochemical and volatile organic solvents, but nowadays, increased recognition of environmental pollution has prompted the utilization of green solvents as alternatives. Therefore, the aim of the present study was to exploit deep eutectic solvents (DES) (choline chloride: citric acid and choline chloride: glucose) as solvents for extracting valuable phenolic antioxidants from grapes. Investigation was conducted on ten grape varieties, observing seeds and skin as different matrix. Total polyphenol content (TPC) was determined by Folin-Ciocalteu spectrophotometric microassay. Antioxidant activity was investigated using four different tests and results were combined in a unique Antioxidant Composite Index (ACI) to reveal comprehensive information about this biological activity. Polyphenol compounds were identified and quantified with the aim of HPLC-diode array detector (DAD). Overall results support that DES (particularly choline chloride: citric acid) were comparable to conventional solvent, and in most cases even outperformed acidified aqueous ethanol (concerning extraction efficiency and antioxidant activity). Regardless of varietal distinctions, grape seeds have higher antioxidant capacity compared to grape skin, and such findings are according to their phenol compound concentrations.

Grape Seed Oil Characterization: A Novel Approach for Oil Quality Assessment

AB  - The amount of organic pomace, left behind agricultural processes, is continuously rising in accordance with industrial progress. Grape pomace, generated in the wine industry all over the world, represents a raw material for obtaining valuable products. Grape seeds are especially rich in oil containing bioactive compounds that can have various health-related effects. The aim of the study is to compare the quality of seed oils obtained from six white grapes, including two Serbian autochthonous varieties. Linoleic acid, associated with numerous health benefits, is the major fatty acid in all samples (≈66% of total); α-tocopherol is the main tocopherol homologue. Total polyphenol content ranges from 73.4 to 104.3 mg of gallic acid equivalents per 100 g. In order to provide comprehensive information about antioxidant capacity of grape seed oil (GSO), three tests are performed (ferric ion reducing antioxidant power; 2,2’-diphenyl-1-picrylhydrazyl, and 2,2’-azino-bis(3-ethylbenzthiazoline-6-sulphonic acid) radical scavenging). Antimicrobial activity is investigated against different strains; however, GSO inhibits the growth of Staphylococcus aureus and Candida albicans. Obtained results are used to develop a novel approach for oil quality assessment. Calculated oil quality scores (OQS) reveal no significant difference between international and autochthonous varieties, although Smederevka stands out as the most potent one. Practical applications: Considering the progressive waste increase in the wine industry and keeping in mind all health-promoting effects of grape seed oil (GSO), it is clearly observed that oil production represents a profitable and sustainable utilization of grape seeds. The results of the present study show that GSO is a rich source of compounds with antioxidant and antimicrobial properties. In addition, this work provides deeper insight into a quality of Serbian autochthonous grape varieties that are still insufficiently explored. Furthermore, the proposed oil quality score could be used as a comprehensive and unbiased method that enables quality assessment of oils. This tool can find practical application in comparing different plant oils regarding their compositional and functional properties. Finally, it would contribute to making some general oil intake recommendations.

Such a discrepancy may be explained by the concept of food synergy, which was verified in this research for cocoa extract versus its major components with regard to cancer chemoprevention. The evaluation embraced the relationship between redox properties evaluated in cell-free systems with the aid of free radicals scavenging method and differential pulse voltammetry, and redox associated anticarcinogenic activities (cellular antioxidant activity, cytotoxicity, nutrigenomic activity) in human colon adenocarcinoma cell line exposed to either cocoa powder extract or artificial mixtures of cocoa bioactives at matching concentrations. In contrast to expectations, our results showed that the stepwise enrichment with antioxidants caused no gradual increase in the antioxidant activity of the model mixtures; also, these model mixtures did not reach the reducing potential of cocoa in the cell-free systems or cellular model employed. Further, the biological activities examined in colon adenocarcinoma cells did not alter in a stepwise manner that could reflect the gradual changes in composition of bioactive ingredients. In conclusion, the experiments presented here showed that the growing complexity of a mixture of phytochemicals seems to create a new redox bioactive substance rather than enrich the mixture with new activities, characteristic of the compound added. It follows that no simple, predictable relationship can be expected between the chemopreventive potential and the composition of real food items containing a complicated set of non-toxic redox active ingredients. Our observations suggest that the interactions between different bioactive compounds and food matrix components are cooperating factors determining the final bioactivity of foods.

In conclusion, the experiments presented here showed that the growing complexity of a mixture of phytochemicals seems to create a new redox bioactive substance rather than enrich the mixture with new activities, characteristic of the compound added. It follows that no simple, predictable relationship can be expected between the chemopreventive potential and the composition of real food items containing a complicated set of non-toxic redox active ingredients. Our observations suggest that the interactions between different bioactive compounds and food matrix components are cooperating factors determining the final bioactivity of foods.",

AB  - This study investigated the behavior of urban-living students related to the salty snacks consumption, and their contribution to salt daily intake. A cross-sectional survey on 1313 urban-living students (16–25 years, 61.4% university students and 38.6% high school students) used a pre-verified questionnaire created specifically for the study. The logistic regression analysis was performed to investigate the factors influencing snack consumption. The results of salt content and the snack consumption frequency were used to evaluate snack contribution to salt intake. All subjects consumed salty snacks, on average several times per week, more often at home and slightly more during periods of intensive studying, with 42% of the participants reporting to consume two or more packages per snacking occasion. Most of the participants consumed such products between main meals, but 10% of them took snacks immediately after the main meal. More high-school students than university students were in the “high snack group” (p < 0.05). The most frequently consumed salty snacks were those with the highest content of salt. Salt intake from snack products for a majority of participants ranged between 0.4 and 1 g/day. The research revealed younger age, home environment and significant contribution to salt intake as critical points in salty snack consumption among urban-living students important for the better understanding of their dietary habits.

Comparison of Polyphenol-Enriched Tomato Juice and Standard Tomato Juice for Cardiovascular Benefits in Subjects with Stage 1 Hypertension: a Randomized Controlled Study

AB  - There is a growing body of evidence that tomato consumption reduces the risk of cardiovascular disease, through antioxidative, anti-inflammatory and hypotensive effects. We compared the effects of polyphenol-enriched and standard tomato juice on parameters of lipid and oxidative status and blood pressure in subjects with stage 1 hypertension. The experimental group (n=13) was supplemented with 200g of tomato fruit juice enriched with 1g of ethanolic extract of whole tomato fruit, while the control group (n=13) was consuming 200g tomato fruit juice. Before and after the treatment, blood samples were collected, and blood pressure was measured. Markers of oxidative stress and antioxidative defense: paraoxonase (PON1), thiobarbituric acid reactive substances (TBARS), total antioxidant status (TAS), total oxidant status (TOS), pro-oxidant-antioxidant balance (PAB) and C reactive protein (CRP) were determined in serum. Prothrombin time (PT) was measured in the whole blood samples. Parameters of lipid status, as well as susceptibility to copper-induced oxidation of LDL particles in vitro were also determined. There was a significant reduction in total cholesterol and LDL-C only in the control group at the end of the study. No significant differences were observed in the remainder of the assessed parameters along the study. In conclusion, tomato juice may have favorable effects on lipid metabolism, but polyphenol fortification does not constitute additional beneficial cardiovascular effects.

AB  - Začini su aromatični delovi začinskih biljaka, karakterističnog mirisa i uku-
sa, koji se dodaju tokom pripreme hrane radi postizanja odgovarajućih
organoleptičkih osobina, kao i zbog produženja roka trajanja namirnica.
S obzirom na to da predstavljaju izvore prirodnih antioksidanasa, začini
se smatraju i funkcionalnim sastojcima hrane. Osnovni cilj ovog rada jeste
analiza sadržaja ukupnih polifenola i fl avonoida odabranih začina sa na-
šeg tržišta, kao i komparativna procena njihove antioksidativne aktivnosti.
Istraživanje je sprovedeno na komercijalno dostupnim uzorcima deset ra-
zličitih vrsta začinskog bilja. Nakon ekstrakcije etanolom, sadržaj ukupnih
polifenolnih jedinjenja (Total Polyphenol Content, TPC), kao i sadržaj fl a-
vonoida (Total Flavonoid Content, TFC) određen je spektrofotometrijskim
metodama. Procena antioksidativnog potencijala izvršena je korišćenjem
tri različita testa (FRAP, DPPH, ABTS). Na osnovu dobijenih rezultata, račun-
skim putem određene su vrednosti antioksidativnog kompozitnog indeksa
(ACI). Najveći sadržaj TPC utvrđen je za cimet (61,3 ± 3,1 mg GAE/g), slede
ruzmarin (30,2 ± 3,6 mg GAE/g) i origano (21,0 ± 0,8 mg GAE/g), dok je naj-
manji sadržaj bio prisutan u uzorku vlašca (4,3 ± 0,0 mg GAE/g). Sadržaj TFC
kretao se u rasponu od 3,2 ± 0,4 μmol CE/g (kim) do 133,7 ± 6,1 μmol CE/g
(cimet). U pogledu antioksidativnog potencijala, sva tri testa su pokazala
konzistentne rezultate. Utvrđena je statistički značajna povezanost između
sadržaja TPC i ACI vrednosti (r= 0,976; p< 0,01). Na osnovu dobijenih rezul-
tata može se zaključiti da cimet, ruzmatin i origano predstavljaju bogat
izvor polifenolnih jedinjenja i poseduju izražen antioksidativni potencijal.

are added to food in order to achieve the appropriate organoleptic proper-
ties, as well as to extend their shelf life. Since they are sources of natural an-
tioxidants, spices are considered as functional food ingredients. The main
goal of this research was determination of total polyphenol and fl avonoid
content in selected spices from our market and comparative assessment
of their antioxidant activity. The study was conducted on ten different
commercial samples of herbs. After extraction with ethanol, total polyphe-
nol content (TPC), and total fl avonoid content (TFC) were determined by
spectrophotometric methods. Evaluation of antioxidant potential was

AB  - Introduction: Cholesterol homeostasis disruption contributes to the development of different pathologies. Non cholesterol sterols (NCSs) serve as cholesterol synthesis markers (desmosterol and lathosterol), and cholesterol absorption surrogate markers (campesterol, stigmasterol and beta-sitosterol). The study aimed to resolve certain new pre-analytical and analytical problems and ensure a reliable and validated method. Materials and methods: Method optimization, validation and stability studies were executed in human serum and plasma. Freeze-thaw cycles were done with and without antioxidant. Gas chromatography-mass spectrometer (GC-MS) was used for NCSs confirmation and plasticizer identification, while GC-flame ionization detector (GC-FID) was used for NCSs quantitation. Results: Infra-and inter-assay variabilities for all NCSs were 2.75-9.55% and 5.80-7.75% for plasma and 3.10-5.72% and 3.05-10.92% for serum, respectively. Recovery studies showed satisfactory percentage errors for all NCSs: 93.4-105.7% in plasma and 87.5-106.9 in serum. Derivatized samples were stable up to 7 days at 20 degrees C and derivatization yield was affected by presence of plasticizers. Fatty acid amids were identified as interfering plastic leachates. Statistically different NCSs concentrations were observed after the 1st freeze-thaw cycle, in antioxidant-free samples, and after the 4th cycle in antioxidant-enriched samples. Conclusions: All of the in-house procedures proved to be useful for minimizing the preanalytical and analytical variations, as proven by the validation results.

Non cholesterol sterols (NCSs) serve as cholesterol synthesis markers (desmosterol and lathosterol), and cholesterol absorption surrogate markers (campesterol, stigmasterol and beta-sitosterol). The study aimed to resolve certain new pre-analytical and analytical problems and ensure a reliable and validated method. Materials and methods: Method optimization, validation and stability studies were executed in human serum and plasma. Freeze-thaw cycles were done with and without antioxidant. Gas chromatography-mass spectrometer (GC-MS) was used for NCSs confirmation and plasticizer identification, while GC-flame ionization detector (GC-FID) was used for NCSs quantitation. Results: Infra-and inter-assay variabilities for all NCSs were 2.75-9.55% and 5.80-7.75% for plasma and 3.10-5.72% and 3.05-10.92% for serum, respectively. Recovery studies showed satisfactory percentage errors for all NCSs: 93.4-105.7% in plasma and 87.5-106.9 in serum. Derivatized samples were stable up to 7 days at 20 degrees C and derivatization yield was affected by presence of plasticizers. Fatty acid amids were identified as interfering plastic leachates. Statistically different NCSs concentrations were observed after the 1st freeze-thaw cycle, in antioxidant-free samples, and after the 4th cycle in antioxidant-enriched samples. Conclusions: All of the in-house procedures proved to be useful for minimizing the preanalytical and analytical variations, as proven by the validation results.",

Nutritional and lifestyle habits of European pharmacy undergraduate students

As a health care professionals, pharmacists have very important role in this mission. The aim of this study was to evaluate basic nutritional knowledge and lifestyle habits of pharmacy undergraduate students in the context of their future health profession. Methods: The study group consisted of 591 European undergraduate pharmacy students. The data related to anthropometry, eating and lifestyle habits were obtained based on self-administered cross-sectional survey. Analysis of gender differences was performed using the chi-square test. Statistically significance was set at p value  lt  0.05. Results: Anthropometric characteristics of students showed that 10.5 % female students were underweight, while 62.6% of the males were overweight and 0.7% were obese. Regular breakfast had 80.9% of the students. Breakfast skipping was statistically higher in male participants (p lt 0.05). Only 35% of students reported daily intake of vegetables. Also, low fruit consumption was observed in all students with statistically lower fruit intake in males (p lt 0.05). Consumption of alcohol, fried food and tobacco was not common among students. Basic principle of balanced nutrition was recognized by 58.4% of study population. Conclusion: Results of our study indicate that European pharmacy students have some unsatisfactory eating habits and nutritional knowledge which is already related to their inadequate nutritional status. Our finding suggests that increased level of nutritional education should be incorporated into European pharmacy curriculum.

Fatty acid composition including trans-fatty acids in salty snack food from the Serbian market

AB  - The rapid increase in the consumption of salty snack products has led to increased concern about their composition and nutritional value. The aim of this study was to investigate the fat content and fatty acid profile in salty snack products from the Serbian market. A total of 58 different snack products from 3 categories (Baked products, Chips & flips products, Cereal products) were analyzed. The fatty acid composition was determined using gas chromatography. Total fat content ranged from 3.1 % in expanded rice to 35.7 % in potato chips. Palmitic, oleic and linoleic acids constituted > 80 % of all fatty acids (FAs) in categories Baked products and Chips & flips. Linoleic acid was more abundant in the category Cereal products (15.5-49.3 %). The trans-FAs elaidic (C18:1 - 9t) and linolelaidic FAs (18: 2 - 9t, 12t) were identified in 66 % of the products. The flips products had the highest average t-FAs content (16.3 %), followed by flips group (9.3 %). Potential t-FAs intake from 100 g of analyzed products was in range 0.1-4.9 g. This study provided a large database on saturated fatty acids and t-FAs content in salty snack products and indicated that by consuming only one package of some products, the t-FAs intake could surpass the recommended maximum of 1 % of daily energy.

AB  - Many factors can influence antioxidative and antimicrobial characteristics of plant materials. The quality of cocoa as functional food ingredient is influenced through its processing. The main aim of this study was to test if there is difference in polyphenol content, antioxidant capacity, and antimicrobial activity between nonalkalized and alkalized cocoa powders. To estimate polyphenol and flavonoid content in cocoa samples the spectrophotometric microassays were used. Flavan-3ols were determined with reversed-phase high-performance liquid chromatography (RP-HPLC). Antimicrobial activity against 3 Gram positive bacteria, 4 Gram negative bacteria and 1 strain of yeast was determined using broth microdilution method. Total polyphenol content was 1.8 times lower in alkalized cocoa samples than in natural ones. Epicatechin/catechin ratio was changed due to the process of alkalization in favor of catechin (2.21 in natural and 1.45 in alkalized cocoa powders). Combined results of 3 antioxidative tests (DPPH, FRAP, ABTS) were used for calculation of RACI (Relative Antioxidant Capacity Index) and GAS (Global Antioxidant Score) values that were consistently higher in natural than in alkalized cocoa extracts. Obtained results have shown significant correlations between these values and phenolic content (0.929  lt = r  lt = 0.957, P  lt  0.01). Antimicrobial activity varied from 5.0 to 25.0 mg/ml (MICs), while Candida albicans was the most sensitive tested microorganism. Cocoa powders subjected to alkalization had significantly reduced content of total and specific phenolic compounds and reduced antioxidant capacity (P  lt  0.05), but their antimicrobial activity was equal for Gram-positive bacteria or even significantly enhanced for Gram-negative bacteria.

AB  - The aim of this study was to determine biologically active substances (BAS) in the samples of Cichorium intybus L. leaves from different sources (wild and cultivated) in Montenegro and to investigate the potential influence of location and origin on the BAS. Fiber and fatty acid composition, amount of pigments, total phenols and flavonoids and some phenolic acids were analyzed. Antioxidant activity was also determined by three methods (DPPH, FRAP and ABTS) and the results obtained from all tests were used to calculate the antioxidant potency composite index (ACI). The dietary fiber profile confirmed chicory leaves as an important source of fiber. The majority of fats in chicory leaves consist-of unsaturated fatty acids, while saturated fatty acids were represented mainly by palmitic acid. Chlorophyll a and b, lutein and beta-carotene were the main pigments in chicory leaves. ACI index had a good correlation with the total phenolic and total flavonoid content. All these features reinforced the interest of including chicory in modern diet as a healthy alternative to the variety of commonly used vegetables.

AB  - Background: Cholesterol homeostasis disorders may cause dyslipidemia, atherosclerosis progression and coronary artery disease (CAD) development. Evaluation of non-cholesterol sterols (NCSs) as synthesis and absorption markers, and lipoprotein particles quality may indicate the dyslipidemia early development. This study investigates associations of different cholesterol homeostasis patterns with low-density (LDL) and high-density lipoproteins (HDL) subclasses distribution in statin-treated and statin-untreated CAD patients, and potential use of aforementioned markers for CAD treatment optimization. Methods: The study included 78 CAD patients (47 statin-untreated and 31 statin-treated) and 31 controls (CG). NCSs concentrations were quantified using gas chromatography-flame ionization detection (GC-FID). Lipoprotein subclasses were separated by gradient gel electrophoresis. Results: In patients, cholesterol-synthesis markers were significantly higher comparing to CG. Cholesterol-synthesis markers were inversely associated with LDL size in all groups. For cholesterol homeostasis estimation, each group was divided to good and/or poor synthetizers and/or absorbers according to desmosterol and beta-sitosterol median values. In CG, participants with reduced cholesterol absorption, the relative proportion of small, dense LDL was higher in those with increased cholesterol synthesis compared to those with reduced synthesis (p lt 0.01). LDL I fraction was significantly higher in poor synthetizers/poor absorbers subgroup compared to poor synthetizers/good absorbers (p lt 0.01), and good synthetizers/poor absorbers (p lt 0.01). Statin-treated patients with increased cholesterol absorption had increased proportion of LDL IVB (p lt 0.05). Conclusions: The results suggest the existence of different lipoprotein abnormalities according to various patterns of cholesterol homeostasis. Desmosterol/beta-sitosterol ratio could be used for estimating individual propensity toward dyslipidemia development and direct the future treatment.

abstract = "Background: Cholesterol homeostasis disorders may cause dyslipidemia, atherosclerosis progression and coronary artery disease (CAD) development. Evaluation of non-cholesterol sterols (NCSs) as synthesis and absorption markers, and lipoprotein particles quality may indicate the dyslipidemia early development. This study investigates associations of different cholesterol homeostasis patterns with low-density (LDL) and high-density lipoproteins (HDL) subclasses distribution in statin-treated and statin-untreated CAD patients, and potential use of aforementioned markers for CAD treatment optimization. Methods: The study included 78 CAD patients (47 statin-untreated and 31 statin-treated) and 31 controls (CG). NCSs concentrations were quantified using gas chromatography-flame ionization detection (GC-FID). Lipoprotein subclasses were separated by gradient gel electrophoresis. Results: In patients, cholesterol-synthesis markers were significantly higher comparing to CG. Cholesterol-synthesis markers were inversely associated with LDL size in all groups. For cholesterol homeostasis estimation, each group was divided to good and/or poor synthetizers and/or absorbers according to desmosterol and beta-sitosterol median values. In CG, participants with reduced cholesterol absorption, the relative proportion of small, dense LDL was higher in those with increased cholesterol synthesis compared to those with reduced synthesis (p lt 0.01). AB  - We used rimonabant to investigate the role of CB1 receptor on hepatic FFAs profile during NAFLD. Male mice C57BL/6 were divided into: control group fed with control diet 20 weeks (C; n = 6); group fed with HFD 20 weeks (HF; n = 6); group fed with control diet and treated with rimonabant after 18 weeks (R; n = 9); group fed with HFD and treated with rimonabant after 18 weeks (HFR; n = 10). Rimonabant (10 mg/kg) was administered daily to HFR and R group by oral gavage. Rimonabant decreased liver palmitic acid proportion in HFR group compared to HF group (p  lt  0.05). Liver stearic and oleic acid proportions were decreased in R group compared to control (p  lt  0.01 respectively). Rimonabant increased liver linoleic and arachidonic acid proportions in HFR group compared to HF group (p  lt  0.01 respectively). CB1 blockade may be useful in the treatment of HFD-induced NAFLD due to modulation of plasma lipid and hepatic FFA profile.
