How Supplementation with SOD-Rich Plant Extract, Combined with Gliadin, Can Affect Oxidative Stress Markers and Zonulin Levels in Exercise-Induced Oxidative Stress

AB  - A randomized, double-blind, placebo-controlled study was conducted to investigate the influence of supplementation with a superoxide dismutase (SOD)-rich plant extract on markers of oxidative stress, zonulin levels and the performance of elite athletes. Participants were 30 international-level rowers, divided into an experimental group (n = 15) and a control group (n = 15). The rowers performed a maximal effort incremental test on a rowing ergometer at the beginning and at the end of the study. Markers of oxidative stress (total antioxidant status (TAS), total oxidant status (TOS), oxidative stress index (OSI), superoxide dismutase (SOD), glutathione peroxidase (GPx), advanced oxidation protein products (AOPPs), malondialdehyde (MDA), sulfhydryl (SH) groups, bilirubin, uric acid, albumin and zonulin) were determined in serum. A lower TOS (p = 0.010) and OSI (p = 0.004), a lower MDA (p = 0.001) and a higher level of SH groups (p = 0.031) were observed in the experimental group after supplementation. Physical performance was evaluated through metabolic efficiency, taking lactate levels and power output on the ergometer into account. After 6 weeks of supplementation, the relative increase in metabolic efficiency at a 4 mmol/L lactate concentration and maximal effort was significantly higher in the experimental group (p = 0.004 and p = 0.015, respectively). These results suggest that supplementation with a SOD-rich extract promotes lower oxidative stress, better antioxidant protection and, consequently, the better work performance of athletes.

Association of octacosanol supplementation with redox status in patients on chronic statin therapy

AB  - Background: The uneven lipid-lowering statin effects and
statin intolerance raise interest regarding the involvement
of coadministration of statins and dietary supplements.
This study aimed to evaluate the effects of octacosanol
supplementation on markers of redox status in cardiovascular patients on chronic atorvastatin therapy.
Methods: A double-blind, randomized, placebo-controlled,
single-centre study was conducted. Redox status home-
ostasis parameters  i.e., advanced oxidation protein products (AOPP), pro-oxidant-antioxidant balance (PAB), total
oxidant status (TOS), total antioxidant status (TAS), superoxide dismutase activity (SOD), total protein sulfhydryl (SH-
groups), and paraoxonase 1 (PON1) activity  were
assessed in 81 patients. According to favorable changes in
lipid profile, patients were classified into two groups:
responders (n = 35) and non-responders (n = 46), and
followed for 13 weeks. A principal component analysis
(PCA) was applied to explore the effect of octacosanol supplementation and the relationship between investigated
parameters as predictors of responders’ and non-responders’ status.
Results: Significant decrease in Oxy-score value was found
at the endpoint compared to baseline in responders’ group (21.0 (13.4–25.5) versus 15.1 (12.4–18.0); P < 0.01).
PCA analysis extracted 4 significant factors in the both
groups, whereas extracted factors containing »octacosanol
status« variable explained 14.7% and 11.5% of the variance
in responders’ and non-responders’ subgroups, respectively.
Conclusions: Octacosanol supplementation leads to an
improvement of lipid profile and markers of redox status in
responders’ group. New studies are needed to validate our
results in order to find the best approach for personalized
supplementation as a useful adjunct to standard statin
therapy.
AB  - Uvod: Neujednačeni hipolipemijski efekti primene statina kao i intolerancija na statine dovode do porasta inte resovanja u vezi sa zajedničkom primenom statina i dijetetskih suplemenata. Ova studija je imala za cilj da proceni efekte suplementacije oktakozanolom na markere redoks statusa kod kardiovaskularnih pacijenata na hroničnoj terapiji atorvastatinom. Metode: Sprovedena je dvostruko slepa, randomizovana, placebo kontrolisana studija. U serumu 81 pacijenta određivani su parametri redoks statusa [produkti uznapredovale oksidacije proteina (AOPP), prooksidativno-antioksidativni balans (PAB), totalni oksidativni status (TOS), totalni antioksidativni status (TAS), aktivnost superoksid dismutaze (SOD), sulfihidrilne grupe (SH-grupe) i aktivnost paraoksonaze 1 (PON1)]. U odnosu na povoljne promene lipidnog profila, pacijenti su klasifikovani u dve grupe: responderi (n = 35) i neresponderi (n = 46), i praćeni su 13 nedelja. Rezultati: Značajno smanjenje vrednosti oksi-skora primećeno je kod respondera na kraju studije u poređenju sa vrednostima na početku studije (21,0 (1 3,4 -25,5) vs. 15,1 (12,4 -18,0); P < 0,01). Principal component analiza (PCA) je primenjena da bi se procenio efekat suplementacije oktakozanolom kao i odnos između ispitivanih parametara kao prediktora odgovara u obe grupe. PCA analiza je izdvojila po 4 značajna faktora u obe grupe, pri čemu faktori koji sadrže varijablu "status oktakozanola" objašnjavaju 14,7% i 11,5% ukupne varijacije kod respondera i nerespondera, redom. Zaključak: Suplementacija oktakozanolom dovodi do poboljšanja lipidnog profila i markera redoks statusa u grupi respondera. Buduće studije su potrebne za potvrdu dobijenih rezultata a u cilju pronalaženja optimalnog pristupa za personalizovanu suplementaciju uz standardnu terapiju statinima.

AB  - This study aimed to investigate the effect of supplementation with plant origin superoxide dismutase (SOD), GliSODin, on parameters of muscle damage, metabolic, and work performance at international level rowers. Twenty-eight rowers were included in a randomized, double-blind study. The study was conducted during a 6-week preparation period. At the beginning of the study and after 6 weeks of the supplementation period, all rowers were tested on a rowing ergometer. Blood samples were taken from the antecubital vein before and after every ergometer testing. Muscle damage markers creatine kinase (CK) and lactate dehydrogenase (LDH), total antioxidant capacity (TAC), inflammation parameters interleukin-6 (IL-6), and C-reactive protein (CRP) were measured. Rowing performance was assessed by lactate level in capillary blood and power output on the rowing ergometer. After supplementation, experimental group had significantly lower CK (p = 0.049) and IL-6 (p = 0.035) before and IL-6 (p = 0.050) after exhausting exercise on ergometer. Relative change of power output at 4 mmol/L concentration of lactate in blood, considering the initial and final test, was significantly higher (p = 0.020) in the supplemented group. It was concluded that GliSODin could be considered a good supplement in preventing some deleterious effects of intensive physical activity, including inflammation and muscle damage, and consequently, to enable a better rowing performance of elite rowers.

The impact of diet and fibre fractions on plasma adipocytokine levels in prediabetic adults

AB  - The impact of diet and fibre fractions on adipocytokines in obese subjects with a risk of diabetes has not been investigated in detail yet. The purpose of the study is to evaluate the effects of a 12-month lifestyle intervention with different fibre profiles (resistant starch (RS)—rich fibre, or ordinary food fibre profiles) on adipocytokine levels. Fifty participants are divided into two groups (RS group and Fibre group). The groups differ only in the percentage of the recommended level of the RS consumed as a fraction of the same total fibre amount. The applied dietary intervention includes intake of 7531 KJ/daywith a total fibre portion of 25–35 g/dayfor both groups that includes 15 g/day of RS for the RS group only. The levels of leptin, adiponectin, apelin, resistin, tumor necrosis factor (TNF)-alpha and C-reactive protein (CRP) are measured, and their relationship to anthropometric and biochemical parameters is estimated. Along with significant body weight loss, only leptin is significantly reduced by 13% in the RS group while in the Fibre group, apelin levels are significant (−21%). Polynomial regression shows a negative correlation between RS intake and adiponectin (R2 = 0.145) and resistin level (R2 = 0.461) in the RS group. This study indicates the possibility that fibre fractions differently influence the outcome of lifestyle interventions, as well as their adipocytokine levels, in obese prediabetic adults.

The purpose of the study is to evaluate the effects of a 12-month lifestyle intervention with different fibre profiles (resistant starch (RS)—rich fibre, or ordinary food fibre profiles) on adipocytokine levels. Fifty participants are divided into two groups (RS group and Fibre group). The groups differ only in the percentage of the recommended level of the RS consumed as a fraction of the same total fibre amount. The applied dietary intervention includes intake of 7531 KJ/daywith a total fibre portion of 25–35 g/dayfor both groups that includes 15 g/day of RS for the RS group only. The levels of leptin, adiponectin, apelin, resistin, tumor necrosis factor (TNF)-alpha and C-reactive protein (CRP) are measured, and their relationship to anthropometric and biochemical parameters is estimated. Along with significant body weight loss, only leptin is significantly reduced by 13% in the RS group while in the Fibre group, apelin levels are significant (−21%). Polynomial regression shows a negative correlation between RS intake and adiponectin (R2 = 0.145) and resistin level (R2 = 0.461) in the RS group. This study indicates the possibility that fibre fractions differently influence the outcome of lifestyle interventions, as well as their adipocytokine levels, in obese prediabetic adults.",

AB  - Dietary supplementation with sugar cane derivates may modulate low-density lipoproteincholesterol (LDL-C) and proprotein convertase subtilisin/kexin type 9 (PCSK9) levels. The purposeof this study was to determine if dietary supplement (DS), containing Octacosanol (20 mg) andvitamin K2 (45μg), could restore the disrupted physiologic relation between LDL-C and serumPCSK9. Double-blind, randomized, placebo-controlled, single-center study including 87 patients onchronic atorvastatin therapy was conducted. Eighty-seven patients were randomized to receive DS(n= 42) or placebo (n= 45), and followed for 13 weeks. Serum PCSK9 levels, lipid parameters andtheir relationship were the main efficacy endpoints. The absolute levels of PCSK9 and LDL-C werenot significantly different from baseline to 13 weeks. However, physiologic correlation between %change of PCSK9 and % change of LDL-C levels was normalized only in the group of patients treatedwith DS (r= 0.409,p= 0.012).  This study shows that DS can restore statin disrupted physiologicpositive correlation between PCSK9 and LDL-C. Elevated PCSK9 level is an independent risk factorso controlling its rise by statins may be important in prevention of cardiovascular events.

AB  - Acrylamide forms when some foods are prepared at temperatures usually above 120°C and in low moisture conditions, due to a Maillard reaction between certain amino acids, such as asparagine, and reducing sugars. Acrylamide is carcinogenic to experimental mice and rats, neurotoxic and probably also carcinogenic and genotoxic for humans. The aim of this study was to determine the presence of acrylamide in various groups of food products in which its formation is expected to occur during the production process. In the period December 2017 to March 2021, 529 samples of different types of food products were tested. Samples were collected from the Serbian market. Most of the tested foods, almost half of them (44%), were various types of biscuits. The presence of acrylamide was determined using LC-MS/MS accredited method, with a limit of quantification (LOQ) of 50 µg kg-1and a limit of detection (LOD) of 25 µg kg-1. All samples from the snack product and waffle product groups contained acrylamide. Acrylamide was detected in almost all (98.98%) fine bakery products and biscuits (90.43%). In contrast, only 15.38% of bakery products contained acrylamide. Most of the tested foods contained acrylamide, 83.74% of them.

AB  - Food additive is any substance not normally consumed as a food, the intentional addition of which to food for a technological purpose results in it or its by-products becoming a component of such foods. The use of each new additive is preceded by a risk analysis consisting of three interrelated components: risk assessment, risk management and risk communication. At the international level in the Codex Alimentarius system, risk assessment is performed by the Joint (FAO/WHO) Expert Committee on Food Additives (JECFA) and risk management by Codex Alimentarius Commission (CAC) that, based on the results of the risk assessment, prepares international  standards  and  recommendations  that  Member  States incorporate  into  national regulations. At the level of the European Union (EU), risk assessment is performed by the European  Food  Safety  Authority  (EFSA)  as  a  basis  for  risk  management  by  the  European Commission  (EC)  that  prepares  food  additive  legislation,  and  member  states  authorities responsible for official control of additives on the market. Risk communication takes place between all stakeholders including academia, food producers and consumers. The regulation on additives in the Republic of Serbia is fully harmonized with the EU legislation in this area.

AB  - Statins reduce the risk of cardiovascular disease mainly due to cholesterol reduction, but also
pleiotropic effects are present. Co-administration of statins with bioactive molecules may
obtain a synergistic benefit. The aim of this randomized, placebo-controlled, double-blind
study was to investigate whether 13-week long supplementation of policosanol affected
antioxidant status and markers of oxidative stress in patients on atorvastatin therapy. Eighty-
seven patients aged 40–80 years on chronic (>4 months) atorvastatin therapy (20 mg) were
randomly allocated to policosanol (n=42) or placebo (n=45). At baseline, after 8 and 13 weeks,
markers of oxidative stress and antioxidant defence include total antioxidant status (TAS), total
oxidant status (TOS), advanced oxidation protein products (AOPP) and activity of superoxide
dismutase (SOD) were measured. Creatinine phosphokinase and hepatic enzymes were the
main safety endpoints. The mean age of the patients was 62.6 ± 0.8 years. Patients in
supplemented group had higher TAS and TOS levels 1640 (963–1752) vs 927 (481–1305),
[μmol/L], p < 0.001 and 18 (13––20) vs 6 (5–11), [μmol/L], p < 0.001], respectively, compared
to baseline. In placebo group, subjects had also higher TAS and TOS levels after 13-week
compared to baseline. SOD and AOPP were not influenced by the intervention. The
investigated supplement possessed a good safety profile. Combination of policosanol with
atorvastatin may be useful in an attempt to avoid potential adverse effects associated with
statins. 13-week supplementation was not sufficient to induce remarkably changes in SOD and
AOPP. TAS and TOS were increased in both groups.

AB  - Three seaweeds (Halimeda tuna, Codium bursa and Cystoseira barbata) and one seagrass (Cymodocea nodosa) were collected from the Coast of Montenegro, Gulf of Boka Kotorska and their chemical analysis was performed. In seagrass C. nodosa, three phenolic compounds were identified (diosmetin 7-sulfate, caftaric and coutaric acid). The content of β-glucan, fatty acids, sterols and micro- and macro-elements were investigated among all samples. The highest content of β-glucan was detected in C. nodosa seagrass (13.04±0.42 g/100 g). The highest polyunsaturated fatty acids (PUFAs) level was reported in C. barbata, the brown alga (7.157 mg/g), which also had the significant sterol content (fucosterol, 21.76±0.1 μg/g). Green algae, C. bursa and H. tuna, showed the highest level of sterols (β-sitosterol, 95.21±0.16 μg/g and 73.90±0.08 μg/g, respectively). H. tuna had the highest content of calcium (Ca) in amount of 55125 μg/g. In C. bursa, C. barbata and C. nodosa, the Na/K ratio was low (0.43, 0.46 and 0.69, respectively).

AB  - The aim of the present study was to reveal the potential biological activities of the dichlorometane: methanol (1:1) dry extract (DME) and the nutritional value of selected seaweeds: Cymodocea nodosa, Halimeda tuna, Cystoseira barbata and Codium bursa, collected from the Adriatic coast, Montenegro. We assessed the chemical composition and several biological activities such as: anti-a-glucosidase, antitumour, antimicrobial and antioxidative activity. H. tuna had the best cytotoxic activity against human colon carcinoma cell line, LS174 (IC50 = 17.92 +/- 1.54 mu g/mL). C. nodosa demonstrated strong cytotoxicity against human adenocarcinoma cell line, HeLa (IC50 = 13.28 +/- 0.39 mu g/mL) and human chronic myelogenous leukaemia cell line, K562 (IC50 = 19.64 +/- 1.55 mu g/mL). C. barbata had the best anti a-glucosidase (IC50 = 9.98 +/- 3.34 mu g/mL) and antimicrobial activity (minimal inhibitory concentration of 100 mu g/mL) for Staphylococcus aureus and Bacillus subtilis. C. bursa showed the highest nutritional value (490.4 kcal).

AB  - Celiac disease (gluten sensitive enteropathy) is a chronic, lifelong inflammatory disease of the small intestine that occurs in genetically predisposed individuals, and is characterized by a permanent specific hypersensitivity to wheat, rye, barley and oat gluten. Gluten intake in these individuals leads to damage of the small intestine mucosa, which is manifested by abdominal problems, resulting in reduced absorption of nutrients, leading to secondary disorders and diseases such as rachitis, osteoporosis, arthritis, delay in growth and development, anemia, sterility, neurological disorders, skin changes, intestinal lymphomas. The prevalence of celiac disease is about 1% in the general population. The diagnostic procedure includes histological and serological tests, and a strict gluten-free diet is a lifelong treatment of celiac disease and is a main requirement for any further treatment of the consequences of nutritional deficits. The main problems in implementing a gluten-free diet is the presence of hidden gluten in food, medicines and cosmetics, and gluten contamination during production, storage and food preparation. According to the international Codex alimentarius standard (CODEX STAN 118-1979) and national regulations, gluten-free dietary products must not contain more than 20 mg/kg of gluten.
AB  - Celijačna bolest (gluten senzitivna enteropatija) je hronično doživotno inflamatorno oboljenje tankog creva koje se javlja kod genetski predisponiranih osoba, a odlikuje se trajnom specifičnom preosetljivošću na gluten pšenice, raži, ječma i ovsa. Unos glutena kod ovih osoba dovodi do oštećenja sluznice tankog creva koje se manifestuje abdominalnim problemima što rezultuje smanjenom apsorpcijom hranljivih sastojaka, što dalje uzrokuje razvoj sekundarnih poremećaja i oboljenja kao što su rahitis, osteoporoza, artritis, zastoj u rastu i razvoju, anemija, sterilitet, neurološki poremećaji, kožne promene, intestinalni limfomi dr. Prevalenca celijačne bolesti je oko 1% u opštoj populaciji. Dijagnostička procedura uključuje histološka i serološka ispitivanja a striktna dijeta bez glutena je doživotni tretman celijakije i uslovljava svako dalje lečenje posledica nutritivnih deficita. Najveći problem u sprovođenju dijete bez glutena je prisustvo skrivenog glutena u hrani, lekovima i kozmetičkim proizvodima i kontaminacija glutenom tokom proizvodnje, čuvanja i pripreme hrane. Prema međunarodnom standardu Codex alimentarius-a (CODEX STAN 118-1979) i nacionalnoj regulativi dijetetski proizvodi bez glutena ne smeju da sadrže više od 20 mg/kg glutena.

According to the international Codex alimentarius standard (CODEX STAN 118-1979) and national regulations, gluten-free dietary products must not contain more than 20 mg/kg of gluten., Celijačna bolest (gluten senzitivna enteropatija) je hronično doživotno inflamatorno oboljenje tankog creva koje se javlja kod genetski predisponiranih osoba, a odlikuje se trajnom specifičnom preosetljivošću na gluten pšenice, raži, ječma i ovsa. Unos glutena kod ovih osoba dovodi do oštećenja sluznice tankog creva koje se manifestuje abdominalnim problemima što rezultuje smanjenom apsorpcijom hranljivih sastojaka, što dalje uzrokuje razvoj sekundarnih poremećaja i oboljenja kao što su rahitis, osteoporoza, artritis, zastoj u rastu i razvoju, anemija, sterilitet, neurološki poremećaji, kožne promene, intestinalni limfomi dr. Prevalenca celijačne bolesti je oko 1% u opštoj populaciji. Dijagnostička procedura uključuje histološka i serološka ispitivanja a striktna dijeta bez glutena je doživotni tretman celijakije i uslovljava svako dalje lečenje posledica nutritivnih deficita. Najveći problem u sprovođenju dijete bez glutena je prisustvo skrivenog glutena u hrani, lekovima i kozmetičkim proizvodima i kontaminacija glutenom tokom proizvodnje, čuvanja i pripreme hrane. Prema međunarodnom standardu Codex alimentarius-a (CODEX STAN 118-1979) i nacionalnoj regulativi dijetetski proizvodi bez glutena ne smeju da sadrže više od 20 mg/kg glutena.",

Biologically active compounds of different Brassicaceae species with antitumor potential are isothiocyanates, present in the form of their precursors - glucosinolates. The aim of this study was to determine the selectivity of antiproliferative action of dietary isothiocyanates for malignant versus normal cells. Methods. Antiproliferative activity of three isothiocyanates abundant in human diet: sulforaphane, benzyl isothiocyanate (BITC) and phenylethyl isothiocyanate, on human cervix carcinoma cell line - HeLa, melanoma cell line - Fem-x, and colon cancer cell line - LS 174, and on peripheral blood mononuclear cells (PBMC), with or without mitogen, were determined by MTT colorimetric assay 72 h after their continuous action. Results. All investigated isothiocyanates inhibited the proliferation of HeLa, Fem-x and LS 174 cells. On all cell lines treated, BITC was the most potent inhibitor of cell proliferation with half-maximum inhibitory concentration (IC50) values of 5.04 mmoL m-3 on HeLa cells, 2.76 mmol m-3 on Fem-x, and 14.30 mmol m-3 on LS 174 cells. Antiproliferative effects on human PBMC were with higher IC50 than on malignant cells. Indexes of selectivity, calculated as a ratio between IC50 values obtained on PBMC and malignant cells, were between 1.12 and 16.57, with the highest values obtained for the action of BITC on melanoma Fem-x cells. Conclusion. Based on its antiproliferative effects on malignant cells, as well as the selectivity of the action to malignant vs normal cells, benzyl isothiocyanate can be considered as a promising candidate in cancer chemoprevention. In general, the safety of investigated compounds, in addition to their antitumor potential, should be considered as an important criterion in cancer chemoprevention. Screening of selectivity is a plausible approach to the evaluation of safety of both natural isothiocyanates and synthesised analogues of these bioactive compounds.
AB  - Uvod/Cilj. Brojne epidemiološke studije pokazale su povoljne efekte konzumiranja povrća iz familije kupusnjača (Brassicaceae) u hemioprevenciji karcinoma. Osnovni biološki aktivni sastojci ovog povrća su izotiocijanati, prisutni u obliku prekursora - glukozinolata. Cilj ovog rada bio je određivanje selektivnosti antiproliferativnog delovanja dijetetskih izotiocijanata na maligne ćelije u odnosu na normalne ćelije. Metode. Antiproliferativna aktivnost tri izotiocijanata zastupljena u ljudskoj ishrani: sulforafana (SFN), benzil-izotiocijanata (BITC) i feniletil-izotiocijanata (FEITC) na humane maligne ćelijske linije, HeLa, ćelijsku liniju karcinoma grlića materice, Fem-x, ćelijsku liniju melanoma, i LS 174, ćelijsku liniju karcinoma kolona, kao i na mononuklearne ćelije periferne krvi (MNĆPK), sa ili bez delovanja mitogena, određivana je MTT kalorimetrijskim testom, 72 h nakon kontinuiranog delovanja agenasa. Rezultati. Svi ispitivani izotiocijanati inhibirali su proliferaciju HeLa, Fem-x i LS 174 ćelija. Na svim ćelijskim linijama BITC je pokazao najizraženije delovanje sa vrednostima polumaksimalne inhibitorne koncentracije (IC50) od 5.04 mmol m-3 na HeLa ćelijama, 2,76 mmoL m-3 na Fem-x i 14,30 mmol m-3 na LS 174 ćelijama. Svi ispitivani izotiocijanati pokazali su citotoksično delovanje na MNĆPK, ali sa višim IC50 vrednostima u odnosu na maligne ćelije. Indeksi selektivnosti antitumorkog delovanja, izraženi kao odnos IC50 vrednosti dobijenih na MNĆPK i malignim ćelijama, bili su između 1,12 i 16,57, sa najvišom vrednosti pri delovanju BITC na Fem-x ćelije. Zaključak. Na osnovu antiproliferativne aktivnosti na maligne ćelije i selektivnosti antiproliferativnog delovanja na maligne u odnosu na normalne ćelije, benzil izotiocijanat se ističe kao perspektivni agens u hemioprevenciji karcinoma. Generalno, pored antitumorskog delovanja, bezbednost primene ovih jedinjenja treba da predstavlja važan kriterijum u izboru odgovarajućih izotiocijanata za primenu u primarnoj, sekundarnoj i tercijarnoj hemioprevenciji kancera. Ispitivanje selektivnosti predstavlja pogodan pristup oceni bezbednosti i prirodnih izotiocijanata i sintetskih analoga.

Quantification of acrylamide in foods selected by using gas chromatography tandem mass spectrometry

AB  - Acrylamide is toxic and probably carcinogenic compound, made as a result of high-temperature thermal treatment of carbohydrate-rich foodstuffs. In this article a method is improved for the extraction and quantitation of acrylamide in foods produced based on corn flour that are represented in our traditional diet. Acrylamide extraction was carried out using reduced volume of saturated solution of bromine water and the GC–MS method for the quantification was shown. Quantification of acrylamide was preceded by: sample homogenization, acrylamide extraction using water, extract purification using solid phase extraction, bromination, using a reduced volume of bromine water solution, dehydrobromination with sodium thiosulfate and transformation of dibromopropenamide in 2,3,2-bromopropenamide using triethylamine. Regression and correlation analysis were applied for the probability level of 0.05. Calibration is performed in the concentration range 5–80 ug/kg with a detection limit 6.86 mg/kg and the limits of quantification 10.78 ug/kg and the coefficient of determination R2 &gt; 0.999. Calibration curve was obtained: y = 0.069x + 0.038. Recovery values were an average from 97 to 110%. Proposed GC–MS method is simple, precise and reliable for the determination of acrylamide in the samples of thermal treated foods. Our results show that the tested foods quantify the presence of acrylamide in concentrations of 18 to 77 mg/kg acrylamide depending on whether the food was prepared by cooking or baking.

association between intake of polyphenols and other dietary antioxidants and the risk of numerous chronic diseases. Good eating habits
established during the University years play an essential part of a
healthy lifestyle.
Objectives: The aim of this study was to estimate total dietary
antioxidant capacity (TDAC) and polyphenols intake among students
of the Faculty of Pharmacy in Serbia.
Method / Design: A total of 223 students with the mean aged of
21,2 ± 2,7 participated in this study. Food intakes were measured with
the 3-day dietary record method. A self-developed database was used
to calculate TDAC and dietary total polyphenolic content.
Results: Polyphenols intake and TDAC was 748 mg/person per
day and 9,51 mmol Trolox equivalents/person per day, respectively.
The food group that contributed the most to the TDAC was beverages
(about 31,2%), followed by fruits and vegetables (28,2%), chocolates
(21,1%) and cereals (15,2%). Fruits and vegetables provide a daily
intake of 130-425 mg of polyphenols/person/diet.
Conclusions: The mean daily intake of dietary polyphenols in the
Serbian student population is 1g lower than recommended polyphenols daily intake. There is a need to promote the fruit and vegetable intake consumption as a source of polyphenols and dietary antioxidants
among the student population.

AB  - Introduction: It is well known that long-term and regular intakes
of long chain (LC) n-3 polyunsaturated fatty acids (PUFAs) from fish
or fish oil supplements are useful in improving n-3 fatty status. Dietary
guidelines recommend use of these fatty acids in purpose of cardio-
vascular primary and secondary preventions.
Objectives: The objective of this study was to explore the difference in plasma fatty acid profile following general recommendations for
fish intake or fish oil supplement usage.
Method / Design: Participants were randomised to receive
salmon (oily fish) providing 274 mg EPA + 671 mg DHA/day or commercial fish oil supplement providing 396 mg EPA + 250 mg DHA/
day in cross-over trial over 8 weeks period separated by the 6 months
washout period. Fatty acids were extracted from plasma and analysed
by gas chromatography.
Results: The initial plasma concentration of fatty acids was not
different between groups at baseline and after the washout phase. After
8 weeks, there was a significant increase in the level of EPA, DHA and
total n-3 fatty acids in plasma of both groups. The percentage values
of EPA increased by 135% in salmon group (p<0.0001) and 152% in
fish oil group (p<0.0001), whereas DHA increased by 145% in salmon
(p<0.0001) and 121% in fish oil group (p<0.010). The increase of plasma total n-3 fatty acids observed after 8 wks of the salmon consumption was greater when compared with fish oil (45% vs 27%) (p<0.05)
and mirrored the content in used dietary sources.
Conclusions: Plasma n-3 fatty acid profile was remarkably increased with both salmon and fish oil capsules intervention. Increase
of plasma EPA and DHA levels was dose-dependent.

Salivary IgA response to astaxanthin supplementation in young soccer players

. We investigated the effect of astaxanthin
(Asx) supplementation on salivary IgA (sIgA) concentration and secretion rate in young soccer players following 2 hours of forced
exercise. Thirty five male soccer players participated in the study. Subjects were randomly assigned in a double-blind fashion to astax-
anthin (Asx) and placebo (P) group. Asx group was supplemented with 4 mg of Asx. Saliva samples were collected at the onset of the
study and after 90 days of supplementation in pre-exercise and post-exercise conditions. The exercise protocol induced a significant
decrease in sIgA concentration and secretion rate in young soccer players both in the pre- and post-supplementational period (p < 0.05).
However, we observed significant increase in pre-exercise sIgA concentration and sIgA secretion rate over the 90-days of training and
supplementation program (p < 0.05). In P group, we detected small, statistically insignificant decrease in sIgA response after observational
period (p > 0.05). These data indicate that astaxanthin supplementation might serve as a countermeasure to sIgA changes associated with
continuous intense training.

AB  - Coeliac disease is characterized by permanent intestinal intolerance to wheat gliadin and related prolamins from barley, rye and oats. The gluten free diet is a life long treatment for coeliac patients. Industrial starch or other ingredients used in manufacturing of dietary products can contain prolamins as impurities. The aim of this work was investigation the presence of gluten in dietary products from the national market: 30 dietary foods for infants and young children and 35 food supplements were analyzed using the Ridascreen Gliadin sandwich R5 enzyme-linked immunosorbent assay with cocktail extraction. The most of the analyzed samples (88%) contained less than limit of quantification of 5 mg/kg for gluten. Gluten content of 5-20 mg/kg was determined in 3 samples. Five of 65 samples (8%) contained mean gluten levels ≥ 20 mg/kg and would not be considered "gluten-free" according to the national Regulation on health safety of dietary products. The systematic control of the presence of gluten in gluten-free dietary products is very important and should be obligatory in order to protect the health of coeliac patients.

abstract = "Coeliac disease is characterized by permanent intestinal intolerance to wheat gliadin and related prolamins from barley, rye and oats. The gluten free diet is a life long treatment for coeliac patients. Industrial starch or other ingredients used in manufacturing of dietary products can contain prolamins as impurities. The aim of this work was investigation the presence of gluten in dietary products from the national market: 30 dietary foods for infants and young children and 35 food supplements were analyzed using the Ridascreen Gliadin sandwich R5 enzyme-linked immunosorbent assay with cocktail extraction. The most of the analyzed samples (88%) contained less than limit of quantification of 5 mg/kg for gluten. Gluten content of 5-20 mg/kg was determined in 3 samples. Five of 65 samples (8%) contained mean gluten levels ≥ 20 mg/kg and would not be considered "gluten-free" according to the national Regulation on health safety of dietary products. The systematic control of the presence of gluten in gluten-free dietary products is very important and should be obligatory in order to protect the health of coeliac patients.",

AB  - Obesity is a serious chronic disease of a complex etiology Optimal nutrition is very important in managing obesity. Optimal balance of nutrients and energy intake decrease are of the most importance. Of special concern is fat intake, and nature of carbohydrates, preferably of low-glicemic index. There are also available on the market dietary products for weight reduction, representing well balanced mixture of nutrients replacing one or whole daily meal. Promoting regular physical activity and healthy eating and creating an environment that supports these behaviors can reduce epidemic of obesity.
AB  - Gojaznost je vrlo ozbiljno hronično oboljenje i posledica je i neadekvatne ishrane. Pravilno balansiranje nutrijenata i smanjenje energetskog unosa predstavljaju osnov dobro dizajnirane dijete namenjene regulaciji telesne mase. Od posebnog značaja je kontrolisati unos masti, a kod ugljenih hidrata posebnu pažnju treba obratiti na prirodu ugljenih hidrata. Preporučuju se složeni ugljeni hidrati, kao i ugljeni hidrati niskog glikemijskog indeksa. Mogu se koristiti i dijetetski proizvodi - hrana za osobe na dijeti za mršavljenje koji predstavljaju dobro izbalansirane namirnice koje zamenjuju jedan obrok ili kompletnu dnevnu ishranu. Savetovanje fizičke aktivnosti i pravilne ishrane predstavljaju osnovu za smanjenje epidemije gojaznosti.

AB  - Total phenolics total anthocyanins mineral content radical scavenging activity and antiproliferative activity against human cancer cell lines were evaluated in fresh pressed juices of five different berries Total phenolic content ranged from 133 0 to 260 3 mg of gallic acid equivalents/100 g of fresh weight for red currant and black currant respectively Bilberry Juice contained the highest amount of total anthocyanins (0 18%) Significant correlation between total phenolics content and radical scavenging activity was observed (r = -0980 p  lt  0 01) All examined juices showed antiproliferative activity in dose-dependent manner with IC50 ranging from 10 2 to 70 5 mu l/ml Black currant juice was the most effective inhibitor of proliferation in all cell lines tested (HeLa Fem X LS 174 MCF-7 and PC-3) Significant correlations of acidity and total anthocyanin content with antiproliferative activity of berry juices on HeLa cells Fem X cells and MCF-7 cells were noticed Berry juices are good sources of some minerals and contribute significantly to daily intake of these micronutrients
