AB  - The impact of diet and fibre fractions on adipocytokines in obese subjects with a risk of diabetes has not been investigated in detail yet. The purpose of the study is to evaluate the effects of a 12-month lifestyle intervention with different fibre profiles (resistant starch (RS)—rich fibre, or ordinary food fibre profiles) on adipocytokine levels. Fifty participants are divided into two groups (RS group and Fibre group). The groups differ only in the percentage of the recommended level of the RS consumed as a fraction of the same total fibre amount. The applied dietary intervention includes intake of 7531 KJ/daywith a total fibre portion of 25–35 g/dayfor both groups that includes 15 g/day of RS for the RS group only. The levels of leptin, adiponectin, apelin, resistin, tumor necrosis factor (TNF)-alpha and C-reactive protein (CRP) are measured, and their relationship to anthropometric and biochemical parameters is estimated. Along with significant body weight loss, only leptin is significantly reduced by 13% in the RS group while in the Fibre group, apelin levels are significant (−21%). Polynomial regression shows a negative correlation between RS intake and adiponectin (R2 = 0.145) and resistin level (R2 = 0.461) in the RS group. This study indicates the possibility that fibre fractions differently influence the outcome of lifestyle interventions, as well as their adipocytokine levels, in obese prediabetic adults.

AB  - Grape seeds contain a wide range of phenolic compounds responsible for its health promoting
effects. Interest for grape seed utilization has increased significantly along with a growing
recognition that present biologically active compounds were not completely isolated during the
extraction process. Numerous studies have been conducted in order to achieve the best
extraction recovery. Nevertheless, there is still a question concerning the pretreatment of grape
seeds. The aim of the present study was to investigate the impact of defatting process on total
polyphenol content and antioxidant activity of grape seed extracts. For that purpose seeds were
obtained from eight different grape varieties. Extraction with 70 % ethanol was performed on
both, crude and defatted seeds (lipid fraction was removed by Soxhlet method of extraction).
Determination of total phenolic content (TPC) was done using Folin-Ciocalteu assay.
Antioxidant activity was investigated through four different tests (FRAP, CUPRAC, DPPH and
ABTS) and obtained results were combined in unique Antioxidant Composite Index (ACI). TPC
values ranged from 50.48 to 121.06 and from 38.04 to 108.17 mg GAE/g dry weight for crude
and defatted grape seed extracts, respectively. Higher phenolic content determined in extracts
obtained from crude seeds could be explained by the presence of lipophilic biologically active
compounds in non-removed lipid fraction. Discrepancies between varieties are presumably
present due to different morphological properties of seeds, environmental and agricultural
conditions. Concerning antioxidant activity, all tests were significantly correlated with TPC,
suggesting the strong contribution of phenolic compounds to this biological activity.

Beta-glucan content and antioxidant activities of mushroom-derived food supplements

AB  - Due to the presence of numerous bioactive compounds, including polysaccharides and polyphenols, mushroom-based food supplements are claimed to have many beneficial health effects. Despite their popularity, concerns have been raised in recent years over the quality of mushroom products, particularly regarding their non-standardized chemical composition. In this study, the β-glucan and total phenolic contents, as well as the antioxidant potential of mushroom-derived supplements available on the Serbian market were analyzed. The obtained results, revealing considerable differences in β-glucan and total polyphenol contents among these products, reflect variations in mushroom species, forms and recommended dosing regimens. A correlation between the total phenolic content and antioxidant activity was observed. The presence of other active ingredients, such as vitamin C, has contributed to antioxidant variability among the analyzed products. The obtained results indicate the need for the standardization of mushroom-derived food supplements to ensure their claiming effects.

Поред популарности, последњих година се велика пажња посвећује и квалитету производа од гљива, посебно у погледу њиховог не стандардизованог хемијског састава. У овом раду анализиранје садржајβ-глукана и укупних полифенола, као и антиоксидативни потенцијал додатака исхрани на бази гљива који су доступни на тржишту Србије. Добијени резултати су показали велике разлике у садржају β-глукана и укупних полифенола што се може објаснити различитим врстама гљива, облицима и режимима дозирања. Уочена је корелација између укупног садржаја полифенола и антиоксидативне активности. Присуство других биолошки активних састојака, као што је витамин Ц, допринело је варијабилности антиоксидантне активности између анализираних производа. Добијени резултати указују на потребу за стандардизацијом дoдатака исхрани на бази гљива, како би се осигурао њихов ефекат.

Grape Seed Oil Characterization: A Novel Approach for Oil Quality Assessment

AB  - The amount of organic pomace, left behind agricultural processes, is continuously rising in accordance with industrial progress. Grape pomace, generated in the wine industry all over the world, represents a raw material for obtaining valuable products. Grape seeds are especially rich in oil containing bioactive compounds that can have various health-related effects. The aim of the study is to compare the quality of seed oils obtained from six white grapes, including two Serbian autochthonous varieties. Linoleic acid, associated with numerous health benefits, is the major fatty acid in all samples (≈66% of total); α-tocopherol is the main tocopherol homologue. Total polyphenol content ranges from 73.4 to 104.3 mg of gallic acid equivalents per 100 g. In order to provide comprehensive information about antioxidant capacity of grape seed oil (GSO), three tests are performed (ferric ion reducing antioxidant power; 2,2’-diphenyl-1-picrylhydrazyl, and 2,2’-azino-bis(3-ethylbenzthiazoline-6-sulphonic acid) radical scavenging). Antimicrobial activity is investigated against different strains; however, GSO inhibits the growth of Staphylococcus aureus and Candida albicans. Obtained results are used to develop a novel approach for oil quality assessment. Calculated oil quality scores (OQS) reveal no significant difference between international and autochthonous varieties, although Smederevka stands out as the most potent one. Practical applications: Considering the progressive waste increase in the wine industry and keeping in mind all health-promoting effects of grape seed oil (GSO), it is clearly observed that oil production represents a profitable and sustainable utilization of grape seeds. The results of the present study show that GSO is a rich source of compounds with antioxidant and antimicrobial properties. In addition, this work provides deeper insight into a quality of Serbian autochthonous grape varieties that are still insufficiently explored. Furthermore, the proposed oil quality score could be used as a comprehensive and unbiased method that enables quality assessment of oils. This tool can find practical application in comparing different plant oils regarding their compositional and functional properties. Finally, it would contribute to making some general oil intake recommendations.

Fucus spiralis extract and fractions: Anticancer and pharmacological potentials

AB  - Purpose: Sea macroalgae are an important source of biologically highly valuable compounds. The main aim of this study was to investigate the in vitro anticancer properties and chemical composition of the dichloromethane-methanol extract and three fractions of the Fucus spiralis from coastline of Morocco. Methods: Fractions were made from dichloromethane: methanol (1:1) extract of Fucus spiralis: petroleum-ether, ethyl-acetate and n-butanol. Extract and fractions were screened for in vitro cytotoxicity by MTT assay against human cervical adenocarcinoma (HeLa), colorectal adenocarcinoma (LS-174T), lung carcinoma (A549), and normal human lung fibroblasts (MRC-5). Cell cycle distribution of the HeLa cells was evaluated using flow cytometry. Acridine orange (AO)-ethidium bromide (EB) staining was used to assess morphological changes of HeLa cells under fluorescence microscope. Anti-migration and anti-angiogenic properties were investigated using scratch and tube formation assays against human endothelium-derived permanent EA.hy926 cell line. Antidiabetic activity was tested using anti-α-glucosidase assay. Antimicrobial effect was tested using micro- dilution method. Results: Petroleum-ether fraction оf Fucus spiralis rich in fatty acids exerted the highest cytotoxicity against HeLa cells. Ethyl-acetate and petroleum-ether fractions induced the highest accumulation of the HeLa cells in sub-G1 and G2/M phases. Extract and fractions showed proapoptotic effect on HeLa cells under fluorescent microscope. They exhibited antimigratory and antiangiogenic effects in vitro. IC50 value for α-glucosidase inhibitory activity was much stronger than standard acarbose. n-Butanol fraction exerted the highest antibacterial and antifungal activity. Conclusions: The investigation of various biological activities of the extract and fractions obtained from Fucus spiralis may suggest a promising anticancer and pharmacological potential of this edible macroalga.

Nutritive characteristics and antioxidant activity of pseudograins

AB  - Amaranth (Amaranthus sp., Amaranthaceae), quinoa (Chenopodium quinoa, Amaranthaceae)
and canihua (Chenopodium pallidicaule, Amaranthaceae) are pseudograins originating from
South America. They are widely used in the diet as well as chia seeds (Salvia hispanica,
Lamiaceae) from South America and wheat (Triticum aestivum, Poaceae) and millet (Panicum
miliaceum, Poaceae), characteristic for our climate. The aim of the study was to determine the
nutritive characteristics, phenolic content and antioxidant activity of commercial samples of
pseudograins (аmaranth, quinoa and canihua) from our market, as well as a comparative
analysis to chia seeds, common and khorasan wheat and millet. Basic nutritive value
parameters and mineral contents were assessed for pseudograins and chia seeds. The content
of total phenolic compounds (TPC) and total flavonoid compounds (TFC), antioxidant
activity by DPPH and FRAP tests were determined for all samples. The results of the nutrient
composition indicates that analyzed pseudograins are good sources of proteins (13.39%) and
unlike chia seeds are characterized by relatively low fat content (5.97%). Analyzed
pseudograins contain calcium, magnesium, zinc and iron in a significant amount. The highest
TPC content was observed in chia seeds (395.7 mg GAE/100 g), following canihua (327.4 mg
GAE/100 g), quinoa (161.9 mg GAE/100 g), common wheat (61.8 mg GAE/100 g), Khorasan
wheat (51.1 mg GAE/100 g), while the lowest content was identified in millet (32.9 mg
GAE/100 mg). TFC content was in a range from 0.001 % (common wheat, khorasan wheat)
to 0.099 % (canihua). Antioxidant properties of pseudograins were lower compared to chia
seeds, but similar to common wheat and khorasan wheat while even higher comparing to
millet.

AB  - Isolates of medicinal and aromatic herbs are used as additives in non-alcoholic drinks to improve the sensory characteristics and antioxidant potential. The method of drying the plant material, among other factors, has a profound influence on the chemical composition and pharmacological activities of plant extracts. This paper analyzes the effect of the drying technique (I - natural drying, II - in the laboratory oven, III - in low-temperature condensational drier) on the volatile fraction of the wild mint (Mentha longifolia (L.) Hudson) extract, in order to select an extract of the best quality for preparation of non-alcoholic drinks. The volatile profile of the extracts was determined by the GC-FID and GC-MS techniques, the antimicrobial activity by the microdilution technique, the antioxidant activity by the DPPH and FRAP assays, and the sensory acceptance according to the Regulation on quality for refreshing non-alcoholic beverages. The results showed that piperitone was the major component of the volatile fraction extract of the natural drying herb and low-temperature condensational drier herb (53.9% and 61.1%, respectively), while the extract of laboratory oven herb was rich in menthone (35.5%). At the concentrations in the range of 0.8-3.2 mg/mL the extracts better inhibited the Gram (+) bacteria. The beverage to which the extract of naturally dried wild mint was added, showed the antioxidant activity (9.09 +/- 0.17 mu mol Fe2+/mL by FRAP and 14.00 +/- 3.00 mu L/mL by DPPH method) and good sensorial characteristics (concentration of the extract 0.8 g/L).

Sweet cherry wine (cultivar Burlat) stood out both for the profound content of phenolics (followed by their chemical profile) and potent anti-DPPH radical activity. The same fruit wine samples exhibited high redox potentials, slightly lower than strawberry and plum wine samples. Therefore, sweet cherry cultivar Burlat may be well recommended for development of novel fruit-based products endowed with naturally occurring phenolics. In any case, the remaining four cultivars are also worth further research efforts, particularly apricot cultivar Keckemetska ruza, which is one of the representatives of greatly underestimated fruit type thus far as a substrate for the production of the relevant fruit wines.

Comparison of Polyphenol-Enriched Tomato Juice and Standard Tomato Juice for Cardiovascular Benefits in Subjects with Stage 1 Hypertension: a Randomized Controlled Study

AB  - There is a growing body of evidence that tomato consumption reduces the risk of cardiovascular disease, through antioxidative, anti-inflammatory and hypotensive effects. We compared the effects of polyphenol-enriched and standard tomato juice on parameters of lipid and oxidative status and blood pressure in subjects with stage 1 hypertension. The experimental group (n=13) was supplemented with 200g of tomato fruit juice enriched with 1g of ethanolic extract of whole tomato fruit, while the control group (n=13) was consuming 200g tomato fruit juice. Before and after the treatment, blood samples were collected, and blood pressure was measured. Markers of oxidative stress and antioxidative defense: paraoxonase (PON1), thiobarbituric acid reactive substances (TBARS), total antioxidant status (TAS), total oxidant status (TOS), pro-oxidant-antioxidant balance (PAB) and C reactive protein (CRP) were determined in serum. Prothrombin time (PT) was measured in the whole blood samples. Parameters of lipid status, as well as susceptibility to copper-induced oxidation of LDL particles in vitro were also determined. There was a significant reduction in total cholesterol and LDL-C only in the control group at the end of the study. No significant differences were observed in the remainder of the assessed parameters along the study. In conclusion, tomato juice may have favorable effects on lipid metabolism, but polyphenol fortification does not constitute additional beneficial cardiovascular effects.

We compared the effects of polyphenol-enriched and standard tomato juice on parameters of lipid and oxidative status and blood pressure in subjects with stage 1 hypertension. The experimental group (n=13) was supplemented with 200g of tomato fruit juice enriched with 1g of ethanolic extract of whole tomato fruit, while the control group (n=13) was consuming 200g tomato fruit juice. Before and after the treatment, blood samples were collected, and blood pressure was measured. Markers of oxidative stress and antioxidative defense: paraoxonase (PON1), thiobarbituric acid reactive substances (TBARS), total antioxidant status (TAS), total oxidant status (TOS), pro-oxidant-antioxidant balance (PAB) and C reactive protein (CRP) were determined in serum. Prothrombin time (PT) was measured in the whole blood samples. Parameters of lipid status, as well as susceptibility to copper-induced oxidation of LDL particles in vitro were also determined. There was a significant reduction in total cholesterol and LDL-C only in the control group at the end of the study. No significant differences were observed in the remainder of the assessed parameters along the study. In conclusion, tomato juice may have favorable effects on lipid metabolism, but polyphenol fortification does not constitute additional beneficial cardiovascular effects.",

Materials and methods - Black chokeberry, blueberry, raspberry, blackberry and cherry were used for wine production by innovative vinification procedure, with or without using sugar and enzymatic preparation glycosidase, respectively. Selected phenolics were identified and quantified by UPLC/MS-MS analysis, while Total Phenolic Content (TPC) was determined by the Folin-Ciocalteu method. In addition to this, 2,2-diphenyl-1-picrylhydrazyl (DPPH) and FRAP (Ferric Reducing Ability of Plasma) methods were applied for the preliminary evaluation of anti-DPPH radical activity and redox potential respectively at in vitro conditions. Results and discussion - Among the fruit wines examined within this study, the blackberry one stood out for profound FRAP (115.23 mmol L-1 Fe2+), DPPH (1.11%) and TPC values (2,395 mg GAE L-1). On the other hand, the raspberry wine showed the lowest potential towards the aforementioned parameters. Using principal component analysis, these fruit wines were chemically differentiated, according to the predominant phenolic compounds. Conclusions - All fruit wine samples displayed a good antioxidant potential with the blackberry one being most potent. Such a finding is of particular importance for Serbia as one of the leading producers of this edible fruit both in Europe and rest of the world.

Nutritional and lifestyle habits of European pharmacy undergraduate students

AB  - Aim: Balanced nutrition and healthy lifestyle habits are very important, especially in young population. By this way it is possible to prevent many non-communicable diseases. As a health care professionals, pharmacists have very important role in this mission. The aim of this study was to evaluate basic nutritional knowledge and lifestyle habits of pharmacy undergraduate students in the context of their future health profession. Methods: The study group consisted of 591 European undergraduate pharmacy students. The data related to anthropometry, eating and lifestyle habits were obtained based on self-administered cross-sectional survey. Analysis of gender differences was performed using the chi-square test. Statistically significance was set at p value  lt  0.05. Results: Anthropometric characteristics of students showed that 10.5 % female students were underweight, while 62.6% of the males were overweight and 0.7% were obese. Regular breakfast had 80.9% of the students. Breakfast skipping was statistically higher in male participants (p lt 0.05). Only 35% of students reported daily intake of vegetables. Also, low fruit consumption was observed in all students with statistically lower fruit intake in males (p lt 0.05). Consumption of alcohol, fried food and tobacco was not common among students. Basic principle of balanced nutrition was recognized by 58.4% of study population. Conclusion: Results of our study indicate that European pharmacy students have some unsatisfactory eating habits and nutritional knowledge which is already related to their inadequate nutritional status. Our finding suggests that increased level of nutritional education should be incorporated into European pharmacy curriculum.

AB  - The rapid increase in the consumption of salty snack products has led to increased concern about their composition and nutritional value. The aim of this study was to investigate the fat content and fatty acid profile in salty snack products from the Serbian market. A total of 58 different snack products from 3 categories (Baked products, Chips & flips products, Cereal products) were analyzed. The fatty acid composition was determined using gas chromatography. Total fat content ranged from 3.1 % in expanded rice to 35.7 % in potato chips. Palmitic, oleic and linoleic acids constituted > 80 % of all fatty acids (FAs) in categories Baked products and Chips & flips. Linoleic acid was more abundant in the category Cereal products (15.5-49.3 %). The trans-FAs elaidic (C18:1 - 9t) and linolelaidic FAs (18: 2 - 9t, 12t) were identified in 66 % of the products. The flips products had the highest average t-FAs content (16.3 %), followed by flips group (9.3 %). Potential t-FAs intake from 100 g of analyzed products was in range 0.1-4.9 g. This study provided a large database on saturated fatty acids and t-FAs content in salty snack products and indicated that by consuming only one package of some products, the t-FAs intake could surpass the recommended maximum of 1 % of daily energy.

They may act preventive in regard to diabetes melitus and other chronic diseases. Objectives: Potential alpha-glucosidase inhibitory activity of fruit wines made from blueberry, black chokeberry, blackberry, raspberry and sour cherry was the subject of this study. Method: In order to increase the alcohol content due to enriched extraction of total phenolics, sugar was added in the fruit pomace of the half of the examined fruit wine samples. Results: Compared with acarbose used as a positive control (IC50 = 73.78 mu g/mL), all fruit wine samples exhibited higher alpha-glucosidase inhibitory activity. Indeed, blueberry wine samples stood out, both prepared with IC50 = 24.14 mu g/mL, lyophilised extract yield 3.23% and without IC50 = 46.39 mu g/mL, lyophilised extract yield 2.89% and with addition of sugar before fermentation. Chlorogenic acid predominantly contributed to alpha-glucosidase inhibitory activity of the blueberry, black chokeberry and sour cherry wine samples. However, ellagic acid, a potent alpha-glucosidase inhibitor possessing a planar structure, only slightly affected the activity of the blueberry wine samples, due to the lower concentration. In addition to this, molecular docking study of chlorogenic acid pointed out the importance of binding energy (-8.5 kcal/mol) for the inhibition of the enzyme. Conclusion: In summary, fruit wines made from blueberry should be primarily taken into consideration as a medicinal food targeting diabetes mellitus type 2 in the early stage, if additional studies would confirm their therapeutic potential for the control of postprandial hyperglycemia.

Correlation between Antimicrobial, Antioxidant Activity, and Polyphenols of Alkalized/Nonalkalized Cocoa Powders

AB  - Many factors can influence antioxidative and antimicrobial characteristics of plant materials. The quality of cocoa as functional food ingredient is influenced through its processing. The main aim of this study was to test if there is difference in polyphenol content, antioxidant capacity, and antimicrobial activity between nonalkalized and alkalized cocoa powders. To estimate polyphenol and flavonoid content in cocoa samples the spectrophotometric microassays were used. Flavan-3ols were determined with reversed-phase high-performance liquid chromatography (RP-HPLC). Antimicrobial activity against 3 Gram positive bacteria, 4 Gram negative bacteria and 1 strain of yeast was determined using broth microdilution method. Total polyphenol content was 1.8 times lower in alkalized cocoa samples than in natural ones. Epicatechin/catechin ratio was changed due to the process of alkalization in favor of catechin (2.21 in natural and 1.45 in alkalized cocoa powders). Combined results of 3 antioxidative tests (DPPH, FRAP, ABTS) were used for calculation of RACI (Relative Antioxidant Capacity Index) and GAS (Global Antioxidant Score) values that were consistently higher in natural than in alkalized cocoa extracts. The main aim of this study was to test if there is difference in polyphenol content, antioxidant capacity, and antimicrobial activity between nonalkalized and alkalized cocoa powders. To estimate polyphenol and flavonoid content in cocoa samples the spectrophotometric microassays were used. Flavan-3ols were determined with reversed-phase high-performance liquid chromatography (RP-HPLC). Antimicrobial activity against 3 Gram positive bacteria, 4 Gram negative bacteria and 1 strain of yeast was determined using broth microdilution method. Total polyphenol content was 1.8 times lower in alkalized cocoa samples than in natural ones. Epicatechin/catechin ratio was changed due to the process of alkalization in favor of catechin (2.21 in natural and 1.45 in alkalized cocoa powders). Combined results of 3 antioxidative tests (DPPH, FRAP, ABTS) were used for calculation of RACI (Relative Antioxidant Capacity Index) and GAS (Global Antioxidant Score) values that were consistently higher in natural than in alkalized cocoa extracts. AB  - Adiponectin is an adipocyte-derived plasma protein with insulin-sensitizing and anti-inflammatory properties and is suggested to be a biomarker of metabolic disturbances. The aim of this study was to investigate the effects of alphalipoic acid (ALA) on plasma adiponectin and some metabolic risk factors in patients with schizophrenia. The plasma adipokine levels (adiponectin and leptin), routine biochemical and anthropometric parameters, markers of oxidative stress, and the serum phospholipid fatty acid profile in eighteen schizophrenic patients at baseline, in the middle, and at the end of a 3-month long supplementation period with ALA (500 mg daily) were determined. A significant increase in the plasma adiponectin concentrations, as well as a decrease in fasting glucose and aspartate aminotransferase activity (AST), was found. Baseline AST activity was independently correlated with the adiponectin concentrations. Our data show that ALA can improve plasma adiponectin levels and may play a potential role in the treatment of metabolic risk factor in patients with schizophrenia. Future randomized controlled trials are needed to confirm these preliminary investigations.

Effects of total fibre or resistant starch-rich diets within lifestyle intervention in obese prediabetic adults

AB  - Starting from the evidence-based health benefits that resistant starch (RS) shows when added to the diet, our aim in this study was to evaluate the effects of increased fibre intake with two different levels of RS coming from regular daily consumed foods on normalization of glycaemia within lifestyle intervention in the population with risk factors for developing diabetes. Study included 47 overweight and obese men and women with disordered glucoregulation and dyslipidaemia, aged between 45-74, divided into RS and Fibre group. Participants were subjected to the lifestyle and dietary intervention with low-fat and high-fibre (> 25 g/day) diet for 12 months and were offered two different dietary advices aimed at increasing total fibre intake in Fibre group and at increasing RS intake in RS group. The intake of macronutrients and total fibre was similar between groups at the end of the study, but achieved RS intake was two times higher in the RS group. Decrease in total cholesterol and non-HDL-cholesterol was more pronounced in RS group in comparison with Fibre group (p = 0.010, p = 0.031, respectively), whereas in Fibre group, a more pronounced effect on glucoregulation was observed: significant fall in glycaemia after 2-h oral glucose tolerance test (7.93 vs 6.96 mmol/L, p = 0.034). At the end of the study, RS-rich diet failed to affect glycaemic control in prediabetic obese individuals in contrast to the regular fibre-rich diet, which indicated that fibre profile could be an important determinant of the effect of dietary intervention.

AB  - The composition and content of individual phenolic compounds in various fruit wines and overall antioxidant properties of these fruit wines were studied. Phenolic compounds were separated by reverse phase (RP) HPLC techniques, and their content was determined by means of mass spectrometer (MS) with triple quadrupole (TQ) analyser, which recorded specific precursor-product transitions. Antioxidant activity was monitored by the following spectrophotometric methods: DPPH, FRAP and Folin-Ciocalteu assay, respectively. Four types of berries (raspberry, blackberry, chokeberry and blueberry), one type of pome (apple) and one type of stone fruit (cherries) were used for the production of fruit wines. Corresponding fruit wines were produced by microvinification with or without adding sugar into the must before fermentation. Increase in alcohol level was responsible for the increased content of phenolic compounds in fruit wine due to improved extraction conditions. Produced fruit wines were preserved by adding SO2 which interferes with the determination of antioxidant activity of phenolic compounds. In this case, the development of a correlation method based on FRAP assay was introduced. Fruit wines are a rich source of substances which show beneficial effects on human health. Depending on the fruit type, different antioxidant compounds were predominant in wine samples.

AB  - Prema definiciji Svetske Zdravstvene Organizacije, probiotici su živi mikroorganizmi kojikada su konzumirani u adekvatnoj količini imaju povoljne efekte na zdravlje domaćina.Pod pojmom probiotskih bakterija misli se većinom na bakterije mlečne kiseline (BMK)koje obuhvataju uglavnom vrste iz rodova Lactobacillus i Bifidobacterium. Rastući je brojdokaza koji ukazuju da primena BMK može ispoljiti povoljne efekte u tretmanukomponenata metaboličkog sindroma, kao što su gojaznost, dijabetes tip 2, dislipidemije,nealkoholna masna bolest jetre (engl. Nonalcoholic Fatty Liver Disease, NAFLD). NAFLDobuhvata čitav spektar oboljenja, počev od hepatične steatoze preko nealkoholnogsteatohepatitisa do hepatične fibroze. Predstavlja najčešći uzrok ozbiljnih i hroničnihoboljenja jetre kod odraslih i kod dece u zapadnim zemljama, sa prevalencom od 20-30% uopštoj odrasloj populaciji, pri čemu prevalenca korelira sa povećanom incidencomgojaznosti i metaboličkog sindroma. Nedavno objavljena istraživanja ukazuju na ulogucrevne mikrobiote u razvoju steatoze i progresiji NAFLD-a, a s obzirom da probiotici mogudelovati na više nivoa na patogenezu oboljenja, a uz to su još i bezbedni i pristupačni, nijeiznenađujuće što LAB postaju sve privlačniji kao potencijalna dugoročna terapija NAFLDa.Kliničke i eksperimentalne studije sugerišu da se probiotici značajno razlikuju u efektimai mehanizmima dejstva a razlike postoje, ne samo između različitih vrsta, već i izmeđurazličitih soje iste vrste. Zbog toga je najvažniji cilj ove studije bio da se razvije modelNAFLD (stadijum steatoze) ishranom visokog sadržaja masti (VSM), a zatim da se ispita iizvrši poređenje dejstva oralne primene dva različita soja BMK, Lactobacillus rhamnosusLA68 i Lactobacillus plantarum WCFS1, na imunološke i metaboličke parametre, narazvoj steatoze, kao i na sastav masnih kiselina organa kod miševa soja C57BL/6 uuslovima VSM ishrane.Nakon 16 nedelja VSM ishrane, u kojoj je 41% energije poticao od masti, kod miševa sojaC57BL/6 došlo je do značajnog porasta telesne mase, i razvoja steatoze koju je pratioporemećaj lipidnih parametara i porast nivoa leptina, što odgovara početnoj fazi NAFLD(stadijum steatoze)...
AB  - According to the World Health Organisation's definition, probiotics are alivemicroorganisms which, when consumed in adequate quantities, have beneficial effects onhost's health. The term probiotics bacteria mostly refers to lactic acid bacteria (LAB)which include species from the genera Lactobacillus and Bifidobacteria. The increasingamount of evidence indicates that the usage of LAB can have positive effects on thetreatment of metabolic syndrome components, such as: obesity, type 2 diabetes,dyslipidemia, nonalcoholic fatty liver disease (NAFLD). NAFLD includes a whole spectarof diseases, starting from hepatic steatosis through nonalcoholic steatohepatitis to hepaticfibrosis which may further progress into ireversibile cirrhosis and hepatocellular carcinoma.NAFLD represents the most common cause of severe and chronic liver diseases in adultsand children in Western countres, with the prevelance correlating with increased incidenceof obesity and metabolic syndrome. Recently published research points to the role ofintestinal microbiota in the development of steatosis and progression of NAFLD.Probiotics, especially LAB, can have an influence on disease pathogenesis at multiplelevels and besides that they are safe and affordable. Taking into account all abovementionedreasons, it is not surprising that LAB are becoming more and more attractive aspotential long-term NAFLD therapy. Clinical and experimental studies suggest that LABdiffer significantly in the effects and mechanisms of action. Those differences are not onlyamong different species but also among different strains within the same species. abstract = "Prema definiciji Svetske Zdravstvene Organizacije, probiotici su živi mikroorganizmi kojikada su konzumirani u adekvatnoj količini imaju povoljne efekte na zdravlje domaćina.Pod pojmom probiotskih bakterija misli se većinom na bakterije mlečne kiseline (BMK)koje obuhvataju uglavnom vrste iz rodova Lactobacillus i Bifidobacterium. Rastući je brojdokaza koji ukazuju da primena BMK može ispoljiti povoljne efekte u tretmanukomponenata metaboličkog sindroma, kao što su gojaznost, dijabetes tip 2, dislipidemije,nealkoholna masna bolest jetre (engl. Nonalcoholic Fatty Liver Disease, NAFLD). NAFLDobuhvata čitav spektar oboljenja, počev od hepatične steatoze preko nealkoholnogsteatohepatitisa do hepatične fibroze. Predstavlja najčešći uzrok ozbiljnih i hroničnihoboljenja jetre kod odraslih i kod dece u zapadnim zemljama, sa prevalencom od 20-30% uopštoj odrasloj populaciji, pri čemu prevalenca korelira sa povećanom incidencomgojaznosti i metaboličkog sindroma. Nedavno objavljena istraživanja ukazuju na ulogucrevne mikrobiote u razvoju steatoze i progresiji NAFLD-a, a s obzirom da probiotici mogudelovati na više nivoa na patogenezu oboljenja, a uz to su još i bezbedni i pristupačni, nijeiznenađujuće što LAB postaju sve privlačniji kao potencijalna dugoročna terapija NAFLDa.Kliničke i eksperimentalne studije sugerišu da se probiotici značajno razlikuju u efektimai mehanizmima dejstva a razlike postoje, ne samo između različitih vrsta, već i izmeđurazličitih soje iste vrste. Zbog toga je najvažniji cilj ove studije bio da se razvije modelNAFLD (stadijum steatoze) ishranom visokog sadržaja masti (VSM), a zatim da se ispita iizvrši poređenje dejstva oralne primene dva različita soja BMK, Lactobacillus rhamnosusLA68 i Lactobacillus plantarum WCFS1, na imunološke i metaboličke parametre, narazvoj steatoze, kao i na sastav masnih kiselina organa kod miševa soja C57BL/6 uuslovima VSM ishrane.Nakon 16 nedelja VSM ishrane, u kojoj je 41% energije poticao od masti, kod miševa sojaC57BL/6 došlo je do značajnog porasta telesne mase, i razvoja steatoze koju je pratioporemećaj lipidnih parametara i porast nivoa leptina, što odgovara početnoj fazi NAFLD(stadijum steatoze)..., According to the World Health Organisation's definition, probiotics are alivemicroorganisms which, when consumed in adequate quantities, have beneficial effects onhost's health. The term probiotics bacteria mostly refers to lactic acid bacteria (LAB)which include species from the genera Lactobacillus and Bifidobacteria. The increasingamount of evidence indicates that the usage of LAB can have positive effects on thetreatment of metabolic syndrome components, such as: obesity, type 2 diabetes,dyslipidemia, nonalcoholic fatty liver disease (NAFLD). NAFLD includes a whole spectarof diseases, starting from hepatic steatosis through nonalcoholic steatohepatitis to hepaticfibrosis which may further progress into ireversibile cirrhosis and hepatocellular carcinoma.NAFLD represents the most common cause of severe and chronic liver diseases in adultsand children in Western countres, with the prevelance correlating with increased incidenceof obesity and metabolic syndrome. Recently published research points to the role ofintestinal microbiota in the development of steatosis and progression of NAFLD.Probiotics, especially LAB, can have an influence on disease pathogenesis at multiplelevels and besides that they are safe and affordable. Taking into account all abovementionedreasons, it is not surprising that LAB are becoming more and more attractive aspotential long-term NAFLD therapy. Clinical and experimental studies suggest that LABdiffer significantly in the effects and mechanisms of action. Those differences are not onlyamong different species but also among different strains within the same species. Polyphenols, methylxanthines, and antioxidant capacity of chocolates produced in Serbia

AB  - Different kinds of chocolates produced in Serbia were analyzed regarding total polyphenol, flavonoid and proanthocyanidin content using spectrophotometric methods. Flavan-3ols and methylxanthines in all samples were determined with RP-HPLC. DPPH, FRAP, ABTS and ORAC assays were applied for measuring antioxidant capacity. The average of all four antioxidant tests for each cocoa product was used for calculating antioxidant potency composite index (ACI). Obtained results for all four assays have shown that antioxidant capacity of analyzed chocolate/cocoa extracts followed cocoa, polyphenol, flavonoid, and proanthocyanidin contents. Although the addition of raspberries to dark chocolates had no significant influence on their total polyphenol, flavonoid and proanthocyanidin contents, statistical analysis showed that there was significant increase in the antioxidant capacity of dark chocolates with raspberry compared to plain dark chocolates (p = 0.007). Overall range for theobromine content varied from 5.5 to 22.3 mg/g depending on the product type, while the content of caffeine was 13-30 times lower in all analyzed cocoa products. In addition, correlation between antioxidant potency composite index and declared percentage of cocoa was high (R-2 = 0.798,p  lt  0.05) and indicated that declared cocoa content was a reliable indication for antioxidant capacity of chocolates produced in Serbia.

AB  - Fruits and vegetables are known as good sources of numerous bioactive compounds among which polyphenols and dietary fibre are considered essential because of their protective health effects. The aim of this study was to characterize the quality of selected plant foods of Serbia regarding the amount of total phenols, fibres and ratio of certain fractions of fibre. Fifteen samples of plant foods (green leafy vegetables, fruits and nuts) were evaluated for their total antioxidant activity, total phenolic content, total, soluble and insoluble fibre and fractions of fibre: beta-glucans, arabinoxylan, cellulose and resistant starch. Generally, nuts were the richest sources of fibre and total phenols. However, when serving size was taken into consideration, it appeared that raspberry and blackberry were the richest in total, soluble fibre and cellulose. Furthermore, almonds and hazelnuts were particularly rich in insoluble fibre, while walnuts had the highest polyphenol content. The analyzed plant foods were poor sources of arabinoxylan and beta-glucan. Data on the presence of resistant starch in cashew nut was the first confirmation that resistant starch could be found in significant amount in some nuts. The results give rare insight into the quality of selected plant foods regarding dietary fibre and polyphenols from the nutritive point of view.

AB  - The physiologic stress induced by physical activity is reflected in immune systemperturbations, oxidative stress, muscle injury, and inflammation. We investigated the effect of astaxanthin (Asx) supplementation on salivary IgA (sIgA) and oxidative stress status in plasma, along with changes in biochemical parameters and total/differential white cell counts. Forty trained male soccer players were randomly assigned to Asx and placebo groups. Asx group was supplemented with 4mg of Asx. Saliva and blood samples were collected at the baseline and after 90 days of supplementation in preexercise conditions. We observed a rise of sIgA levels at rest after 90 days of Asx supplementation, which was accompanied with a decrease in prooxidant-antioxidant balance. The plasma muscle enzymes levels were reduced significantly by Asx supplementation and by regular training. The increase in neutrophil count and hs-CRP level was found only in placebo group, indicating a significant blunting of the systemic inflammatory response in the subjects taking Asx. This study indicates that Asx supplementation improves sIgA response and attenuates muscle damage, thus preventing inflammation induced by rigorous physical training. Our findings also point that Asx could show significant physiologic modulation in individuals with mucosal immunity impairment or under conditions of increased oxidative stress and inflammation.

AB  - Background: This study investigated the effects of a nutritionally relevant intake of eicosapentaenoic (EPA) and docosahexaenoic (DHA) fatty acids derived from oily fish or a fish oil supplement on selected cardiovascular risk factors in average middle-aged individuals. Methods: Thirty-three participants were randomized to receive salmon (oily fish) providing 274 mg EPA + 671 mg DHA/day or a commercial fish oil supplement providing 396 mg EPA + 250 mg DHA/day in a cross-over trial over an 8-week period separated by a 6-month washout period. Blood samples were collected before and after each intervention and lipids, inflammatory and oxidative stress parameters were determined. Results: Plasma levels of EPA, DHA and total n-3 fatty acids significantly increased after both interventions. A decreasing trend in triglycerides was more pronounced with salmon than with the fish oil supplement, but the changes noticed were not significant. Although there were no relevant changes in inflammatory marker concentrations at the end of both interventions, significant negative correlations were noticed between total plasma n-3 fatty acids and soluble intercellular adhesion molecule and C-reactive protein throughout the whole intervention period (p  lt  0.05). Among the oxidative stress parameters, intervention with salmon showed a prooxidative effect through a superoxide anion increase (p = 0.025). A relevant positive correlation was also found between its concentration and total plasma n-3 fatty acids (p  lt  0.05). Other oxidative stress markers were not significantly influenced by the dietary interventions applied. Conclusions: Following two sets of recommendations for n-3 fatty acids intake aimed at the general public had only a moderate effect on the selected cardiovascular risk factors in average healthy middle-aged subjects over a short-term period.

Although there were no relevant changes in inflammatory marker concentrations at the end of both interventions, significant negative correlations were noticed between total plasma n-3 fatty acids and soluble intercellular adhesion molecule and C-reactive protein throughout the whole intervention period (p  lt  0.05). Among the oxidative stress parameters, intervention with salmon showed a prooxidative effect through a superoxide anion increase (p = 0.025). A relevant positive correlation was also found between its concentration and total plasma n-3 fatty acids (p  lt  0.05). Other oxidative stress markers were not significantly influenced by the dietary interventions applied. Conclusions: Following two sets of recommendations for n-3 fatty acids intake aimed at the general public had only a moderate effect on the selected cardiovascular risk factors in average healthy middle-aged subjects over a short-term period.",

AB  - U odnosu na opštu populaciju, oboleli od shizofrenije imaju kraći životni vek i povećanirizik za razvoj somatskih pratećih bolesti. Visoka prevalenca metaboličkog sindroma ushizofreniji predstavlja značajan faktor rizika za razvoj koronarne bolesti i dijabetes melitusatip 2. Iako su odnosi između metaboličkog sindroma i shizofrenije kompleksni i još uveknedovoljno proučeni, pretpostavlja se da oksidativni stres predstavlja mehanizam koji imaintegrativnu ulogu kako u razvoju metaboličkog sindroma, tako i njegovih komplikacija.Zbog toga su ciljevi ovog istraživanja bili da se odrede parametri oksidativnog stresa iantioksidativne zaštite kod obolelih od shizofrenije i zdravih ispitanika, kao i da se ispita nivooksidativnog stresa u odnosu na prisustvo metaboličkog sindroma kod obolelih odshizofrenije. Iako rezultati dosadašnjih istraživanja ukazuju na izmenjenu enzimskuantioksidativnu aktivnost, redukovani nivo neenzimskih antioksidanasa, kao i povećanistepen lipidne peroksidacije, ograničen je broj studija koje ukazuju na mogućnost modulacijeoksidativno-stresnog statusa u shizofreniji primenom antioksidanasa.Suplementacija dijetarnim antioksidansima može pružiti značajnu podršku endogenomantioksidativnom zaštitnom sistemu u prevenciji oksidativnih oštećenja, kao i regulacijiredoks osetljivih signalnih puteva. Uzimajući u obzir činjenicu da se alfa-liponska kiselinasmatra jednim od najsnažnijih antioksidanasa, njenu sposobnost da prolazi krvno-moždanubarijeru i povećava nivo endogenih antioksidanasa, posebno glutationa, koji predstavljaglavni endogeni antioksidans u centralnom nervnom sistemu, kao i potencijalne pozitivnemetaboličke efekte, pretpostavljeno je da suplementacija alfa-liponskom može imatipotencijalno povoljne efekte kao dodatak antipsihotičnoj terapiji kod klinički stabilnihpacijenata sa shizofrenijom.U istraživanju je učestvovalo ukupno 60 pacijenata sa shizofrenijom, oba pola, starosti od18 do 60 godina, u stabilnoj fazi bolesti. Kontrolna grupa je obuhvatila 60 zdravih ispitanika,sličnih godina i pola. AB  - Patients with schizophrenia have a reduced life expectancy and increased rates of physicalillness compared with the general population. Metabolic syndrome is highly prevalent inindividuals with schizophrenia and conveys a significantly increases risk of type 2 diabetesand cardiovascular disease. Although it may not be the main cause, increasing evidenceindicate that oxidative stress may play an integral role in the pathogenesis of metabolicsyndrome, as well as the pathogenesis of metabolic syndrome-related conditions. In recentyears there has been an increasing interest in the oxidative stress in the schizophrenia.However, up to now, there have been no studies investigating the association betweenoxidative stress status and metabolic syndrome in schizophrenia. Therefore, the objectives ofthis study were to determine the presence of metabolic syndrome and evaluate the oxidativestress status, as well as possible associations amongst them in schizophrenic patients.Recent years, increasing interest exists in using nonenzymatic antioxidants as adjunctiveor supplements to prevent oxidative damage and to improve some of the psychopathologyand treatment-related side effects of antipsychotic drugs. Alpha-lipoic acid is recognized as apowerful antioxidant. The ability of alpha-lipoic acid to cross the blood-brain barrier andincreases levels of endogenous antioxidants, especially glutathione, who presents a majorendogenous antioxidant in the brain, may have particular importance for schizophrenia.The study group consisted of 60 patients with schizophrenia and 60 sex- and age-matchedhealthy controls. Eighteen medicated patients with schizophrenia and 38 healthy subjects(control group) received daily supplements of alpha-lipoic acid (500 mg/day) for threemonths.Analysis of oxidative stress parameters showed significantly higher lipid peroxidation andhigher plasma total antioxidant status in patients with schizophrenia than in the control group.In contrast, their PON1 activity was lower compared to control subjects. AB  - Background: The purpose of this study was to examine the effects of alpha-lipoic acid (LA) supplementation on oxidative stress markers in patients with schizophrenia. Subjects and methods: Eighteen (18) medicated patients with schizophrenia and 38 healthy controls received daily supplements of LA (500 mg/day) for three months. At baseline, 45th and 90th days of supplementation, venous blood collected for analysis of oxidative stress markers [superoxide anion (O-2(center dot-)), thiobarbituric acid-reactive substances (TBARS) and advanced oxidation protein products (AOPP)] and antioxidative defense markers [superoxide dismutase (SOD), total sulfhydryl groups (-SH) and total antioxidant status (TAS)]. Results: Increased plasma TBARS, TAS, SH groups levels and SOD activity were found in schizophrenic patients compared to control group. LA supplementation significantly reduced TBARS, AOPP and improved TAS levels in healthy subjects, while there were no significant differences in patients group. SH groups increased after 45 days and decreased to baseline levels after 90 days of supplementation in the control group. SOD activity decreased significantly in patients group after 45 days and 90 days of supplementation. After initial rose SOD activity in control group, decreased to baseline levels found after 90 days. Conclusion: LA supplementation decreased lipid peroxidation and oxidative damage of proteins and improved non-enzymatic antioxidant capacity in healthy controls. No significant changes were observed on oxidative damage in patients with schizophrenia.

AB  - The way of drying the fresh herbal material influences the chemical content and the biological activities of their essential oils. The influence of the different drying methods of the herb Mentha longifolia (L.) Hudson on the antioxidant and antimicrobial activity of the extracted essential oils has been analyzed in this study. Drying has been carried out in three ways: in the natural way, in the laboratory oven (45 degrees C) and in the absorptional low-temperature condensational drier (35 degrees C). The antioxidant activity of the essential oil has been estimated by FRAP and DPPH assays, while the antimicrobial activity has been estimated by the diffusible and micro-delusional method, testing on the nine types of bacteria and two types of fungi. The essential oil obtained from the herb dried in the natural way has shown the highest antioxidant activity and the lowest from the herb dried in the laboratory oven. Bacillus subtilis, Micrococcus luteus and Enterococcus faecalis have shown the highest sensitivity on the three samples. The oil obtained from the herb dried in the absorptional low-temperature drier has shown the strongest antimicrobial effect.
