AB  - The present study aimed to evaluate the antioxidant capacity of ethanolic extracts from post-harvest sunflower and maize stalk residues, and their impact on the chemical composition, physicochemical parameters, lipid oxidative stability, microbiological properties, and sensory characteristics of pork liver pâtés over a 90-day storage period. Four formulations were prepared: a control group (CON), a batch with butylated hydroxytoluene as a synthetic antioxidant (BHT), 1% ethanolic extract from sunflower residues (SSRE), and 1% ethanolic extract from maize residues (MSRE). The MSRE had a higher total phenol content and showed better antioxidant activity relative to the SSRE (p < 0.01). The addition of SSRE decreased the lightness and increased the redness in the pork liver pâtés, with these pâtés showing the highest total color difference compared to the control (p < 0.01). The crop extracts increased the n-6 and total PUFA contents in pâtés and improved the PUFA/SFA ratio (p < 0.01). Formulations containing crop residue extracts showed higher TBARs and POV values than the control and BHT group (p < 0.01), indicating a pro-oxidant effect and accelerated lipid oxidation in pâtés during storage. As far as microbiological quality, the presence of crop residue extracts decreased the total viable count, lactic acid bacteria, and psychotropic aerobic bacteria (p < 0.01). The incorporation of crop extracts in the pork pâtés impaired their sensory quality, particularly color, odor, aroma, and flavor, and decreased their overall acceptability. These results indicated that, while the crop residue extracts were not as effective as synthetic antioxidants in preserving the lipid stability of pâtés, they demonstrated potential for enhancing the microbial quality of this type of meat product.

AB  - Modern agriculture produces a large amount of residue every year causing environmental pollution
due to limited and inadequate agricultural waste management. Previous research has shown that agro-industrial residues are important sources of various bioactive, mainly phenolic, compounds that could be applied in the meat industry as natural antimicrobials and antioxidants. This study aimed to assess the effect of the addition of sunflower and maize crop residue extracts on physicochemical (pH and colour) characteristics and microbiological quality of pork liver pâtés over three months of storage and compared to a synthetic antioxidant (butylated hydroxytoluene - BHT) and a control batch. The sunflower and maize crop ethanolic extracts improved the microbial quality of the pork liver pâtés indicating the potential of these extracts as natural preservatives in meat products. However, the addition of 1% of crop extracts resulted in a darker product with a higher b* value, especially after 3 months of storage.

Antimicrobial activity of ethanolic extracts from wheat, sunflower and maize crop residues

AB  - Large quantities of agricultural residues are generated every year. Most of the crop-based residues are underutilized, mainly left to decay on the land or to be burnt, which can lead to an increase in a load of environmental pollution. Considering this, different strategies have been developed to use these renewable resources as raw materials for the production of bioactive compounds, their isolation and characterization, and potential application in a wide range of fields, particularly in the food industry as natural preservatives. In this study, the antibacterial efficacy of wheat, sunflower, and maize crop residue ethanolic extracts against six bacterial strains (Salmonella Typhimurium, Salmonella Enteritidis, Staphylococcus aureus, Escherichia coli, Listeria monocytogenes and Yersinia enterocolitica) was evaluated by the broth microdilution method. Used extracts inhibited the growth of selected microorganisms with a minimal inhibitory concentration (MIC) of 320 μg/mL for most of the tested bacteria. L. monocytogenes showed a MIC value of 640 μg/mL for wheat ethanolic extract, and the MIC value of sunflower ethanolic extract for S. Typhimurium was 160 μg/mL. There were no minimum bactericidal concentration (MBC) values for any of the bacteria within the extract’s concentration ranges tested (≤ 2560 μg/mL). The results of the present study indicate that crop residue ethanolic extracts could exhibit bacteriostatic effect and therefore have the potential as natural additives in food preservation.
AB  - Velika količina poljoprivrednih ostataka se proizvodi svake godine. Većina žetvenih ostataka je nedovoljno iskorišćena, uglavnom se ostavlja da propadne na njivama ili se spaljuje, što dovodi do povećanog zagađenja životne sredine. Imajući ovo u vidu, razvijene su različite strategije za iskorišćavanje navedenih obnovljivih resursa kao sirovina u proizvodnji bioaktivnih jedinjenja, njihovu izolaciju i karakterizaciju i potencijalnu primenu u različitim oblastima, naročito u industriji hrane kao prirodni konzervansi. U ovoj studiji ispitivana je antibakterijska efikasnost etanolnih ekstrakata žetvenih ostataka pšenice, suncokreta i kukuruza na šest bakterijskih sojeva (Salmonella Typhimurium, Salmonella Enteritidis, Staphylococcus aureus, Escherichia coli, Listeria monocytogenes i Yersinia enterocolitica) primenom mikrodilucione metode u bujonu. Ekstrakti žetvenih ostataka su inhibirali rast odabranih mikroorganizama u minimalnoj inhibitornoj koncentraciji (MIC) od 320 μg/mL za većinu ispitivanih bakterija. Za L. monocytogenes MIC vrednost etanolnog ekstrakta pšenice bila je 640 μg/ mL, a 160 μg/mL je bila MIC vrednost etanolnog ekstrakta suncokreta za S. Typhimurium. Minimalna baktericidna koncentracija (MBC) prema bakterijama nije postignuta u ispitivanim koncentracijama etanolnih ekstrakata (≤ 2560 μg/mL). Rezultati ukazuju da etanolni ekstrakti žetvenih rezidua bi mogli da ostvare antibakterijski efekat i stoga imaju potencijal kao prirodni aditivi u konzervisanju hrane.

Za L. monocytogenes MIC vrednost etanolnog ekstrakta pšenice bila je 640 μg/ mL, a 160 μg/mL je bila MIC vrednost etanolnog ekstrakta suncokreta za S. Typhimurium. Minimalna baktericidna koncentracija (MBC) prema bakterijama nije postignuta u ispitivanim koncentracijama etanolnih ekstrakata (≤ 2560 μg/mL). Rezultati ukazuju da etanolni ekstrakti žetvenih rezidua bi mogli da ostvare antibakterijski efekat i stoga imaju potencijal kao prirodni aditivi u konzervisanju hrane.",

AB  - In this study, antimicrobial activity of essential oils extracted from the aerial flowering parts (herbs) of Hyssopus officinalis subsp. aristatus (Godr.) Nyman (Lamiaceae) collected from five different locations in Montenegro, or purchased in Serbia, were investigated. In addition, their antibacterial activity in combination with antibiotics was studied. The antimicrobial activity against selected standard bacterial and yeast strains was investigated using the broth microdilution method. Two standard antibiotics were used for comparison: the aminoglycoside antibiotic amikacin and the cephalosporin antibiotic ceftriaxone. The antimicrobial activity of the essential oil-amikacin combination was investigated using the checkerboard assay. The main components of the essential oils were 1,8-cineole, cis-pinocamphone, β-pinene and limonene in varying quantities. Most of the tested essential oils showed no significant antimicrobial activity. However, an essential oil rich in cis-pinocamphone showed moderate activity against both Staphylococcus aureus and Escherichia coli (MIC = 400 µg/mL). The overall effect of the essential oils and antibiotic combinations against E. coli or S. aureus ranged from additive (FICI = 0.625) to indifferent (FICI = 1.5), depending on the source of the essential oil.

AB  - Poljoprivredni otpad koji nastaje nakon biljne proizvodnje je još uvek u velikoj meri nedovoljno iskorišćen. Često se spaljuje na poljima, posebno u zemljama u razvoju koje nemaju jake regulatorne instrumente za kontrolu takve prakse, uključujući Srbiju. Kao uobičajena praksa, otvoreno sagorevanje poljoprivrednih ostataka dovodi do zagađenja vazduha, što predstavlja rizik po zdravlje ljudi i po životnu sredinu. Pored toga, dovodi do potpunog gubitka organske materije i azota, ugrožava divljač i predstavlja veliku opasnost zbog mogućnosti nekontrolisanog širenja požara. Primena žetvenih ostataka pšenice, kukuruza i suncokreta još uvek nije dovoljno istražena, nema visokovrednu primenu, pa je cilj ovog rada da se ispita sastav heksanskih ekstrakata žetvenih ostataka pšenice, kukuruza i suncokreta sa posebnim akcentom na ispitivanje sastava masnih kiselina. Utvrđeno je da ne postoji značajna različitost među ispitanim uzorcima u sadržaju linolne masne kiseline. Sadržaj oleinske masne kiseline je značajno niži u lipidnom ekstraktu žetvenih ostataka pšenice, u poređenju sa kukuruzom i suncokretom. Sa druge strane, sadržaj zasićenih masnih kiselina, palmitinske i lignocerinske masne kiseline, dobijen u ekstraktu žetvenih ostataka pšenice je značajno veći. U sadržaju ostalih masnih kiselina nije utvrđena značajna razlika među ispitanim uzorcima.

AB  - Globalization and population growth have led to the development of a modern agricultural system that currently produces millions of tons of waste. This waste is disposed of by burning, dumping or accumulating in landfills, resulting in environmental, health, and economic issues.The agro‑industrial residues are abundant with phenolic bioactive compounds, such as phenolic acids, flavonoids, tannins, and carotenoids, which, among others, exhibit antioxidant and antimicrobial capacities and have good potential as food flavorings and colorants. The most common method for isolating these compounds is solvent extraction. However, there is a trend towards eco‑innovative extraction methods that offer better possibilities for implementation on an industrial scale. The oxidation of lipids and proteins is one of the main causes of quality deterioration in meat and meat products during processing and storage. Therefore, the application of natural antioxidants extracted from these new, unconventional raw materials could be a sustainable alternative to synthetic antioxidants. This review summarizes the data on natural antioxidants derived from agro‑industrial by‑products and their incorporation in various meat product formulations. It also addresses limiting factors related to safety and changes in sensory properties.

AB  - A comparative in vitro study of the antioxidant potential of natural phenols (zingerone, curcumin, raspberry ketone, magnolol) and their synthesized derivatives was performed. The antioxidant efficiency was evaluated in blood serum obtained from healthy individuals, by means of spectrophotometry, before and after the addition of pro-oxidant tert-butyl hydroperoxide (TBH). Moreover, the antioxidant effect of an equimolar mixture of curcumin and zingerone was investigated. Interpretation of our results reveals that in the blood serum of healthy individuals curcumin (C1), raspberry ketone (RK1), magnolol (M1) and synthesized derivative of zingerone (Z2) demonstrate remarkable antioxidant effects (p < 0.05). However, in the state of TBH-induced excessive oxidative stress natural magnolol and synthesized derivatives C1, Z1 and RK1 show powerful antioxidant activity and thus can be further investigated to obtain information about their metabolic transformations and their potential influence at the cellular level. Results obtained from measurements in an equimolar mixture of zingerone and curcumin indicate synergism (p < 0.05) between the two compounds. This combination is especially successful due to the fast and efficient neutralization of added pro-oxidant TBH. The commercial availability of turmeric and ginger and their frequent combined use in diet suggest ideas for further broader utilization of the beneficial synergistic effect of their phenolic components.

AB  - Waxes, phospholipids, free fatty acids, peroxides, aldehydes, soap, trace metals and moisture present in crude sunflower oil have a negative effect on the oil quality and are, therefore, removed during the refining process. Waxes crystallizing at low temperatures are removed during winterization by cooling and filtration. Waxes have poor filtration characteristics and an industrial filtration process must be enhanced by the use of filtration aids, which improve filter cake structure and properties, and consequently prolong the filtration cycle. Today, traditional filtration aids (diatomite, perlite, etc.) being used in the industry are frequently replaced by cellulose-based aids. The aim of this study is to examine the effect of oil filtration assisted by two cellulose-based filtration aids on the chemical parameters (wax, moisture, phospholipids, soaps, and fatty acids), oil transparency, carotenoids, and Fe and Cu content of sunflower oil obtained in an industrial horizontal pressure leaf filter. In order to investigate the mentioned parameters, the following techniques were used: gravimetric (waxes and moisture content), spectrophotometric (phospholipids and carotenoid content and oil transparency), volumetric (soaps and free fatty acids content) as well as inductively coupled plasma mass spectrometry (ICP-MS) for Fe and Cu content. An artificial neural network model (ANN) was employed for the prediction of removal efficiency based on the chemical quality, oil transparency, Fe and Cu content in oils before filtration, as well as filtration aid quantity and filtration time. Cellulose-based filtration aids had multiple beneficial effects; on average, 99.20% of waxes, 74.88% of phospholipids, 100% of soap, 7.99% of carotenoids, 16.39% of Fe and 18.33% of Cu were removed.

Phytotherapy of acute upper respiratory tract infections in children

AB  - Acute upper respiratory tract infections (URIs) are the most common infections in the population, especially in children. URIs are mostly of viral origin and tend to resolve spontaneously in approximately one week. Bacterial URIs are less common, and come mostly as superinfections of acute viral diseases. The therapy is symptomatic and aimed at alleviating cough, maintaining the patency of airways and preventing disease progression. If there are no reasons to see a doctor, parents should be advised to apply general measures and give herbal medicinal products to their children, in an attempt to relieve cough, sore throat and nasal symptoms. In productive cough, herbal expectorants, such as, for example, Hederae helicis folium extracts, are used to facilitate the elimination of mucus. On the other hand, demulcents (Althaeae radix, Plantaginis lanceolatae folium) alleviate dry cough by reducing local irritation. Honey also significantly reduces the frequency and severity of acute cough episodes. Extracts of Sisymbrii officinalis herba and Pelargonii radix are useful for the alleviation of nasal symptoms and sore throat. If the application of the proposed herbal products does not resolve the symptoms within a week, advice of a medical doctor should be sought. © 2022, Pharmaceutical Association of Serbia. AB  - Akutne infekcije gornjeg respiratornog trakta (IGRT) su najrasprostranjenije infekcije u populaciji, a posebno kod dece. Najčešće su virusnog porekla i spontano se povlače nakon približno nedelju dana. Bakterijske IGRT su ređe i uglavnom je reč o superinfekcijama akutnih virusnih infekcija. Terapija IGRT je simptomatska i usmerena ka ublažavanju kašlja, održavanju prohodnosti disajnih puteva i sprečavanju progresije oboljenja. Ukoliko nisu prisutni razlozi za upućivanje lekaru, roditelji treba da primenjuju opšte mere i pokušaju da ublaže simptome kašlja, bola u grlu i nazalne simptome primenom biljnih lekovitih proizvoda. Kod produktivnog kašlja, koriste se biljni ekspektoransi kao što su, na primer, ekstrakti Hederae helicis folium, u cilju olakšanja eliminacije mukusa. S druge strane, demulcentna sredstva (Althaeae radix, Plantaginis lanceolatae folium) ublažavaju suv kašalj smanjenjem lokalne iritacije. AB  - Ethnopharmacological relevance: Medicinal properties of hyssop have been used in traditional medicine since ancient times, inter alia, in diseases/conditions with an inherent inflammatory process. Aim of the study: Accordingly, the aim of this study was to investigate the anti-inflammatory properties of hyssop herb preparations (essential oil and methanol extracts) in vivo, in vitro and in silico. Materials and methods: For in vitro testing of essential oils and extracts of hyssop herb, the cyclooxygenase-1 (COX-1) and cyclooxygenase-2 (COX-2) enzyme assays were used. In vivo anti-inflammatory potential of the extracts (at doses of 50, 100 and 200 mg/kg) was assessed using the carrageenan-induced rat paw edema test. Molecular docking and dynamics were used for in silico testing of the inhibitory activity of chlorogenic (CA) and rosmarinic (RA) acids, as the dominant compounds in the tested methanol extracts against COX-1 and COX-2 enzymes. Results: Significant inhibitory activity was shown in the COX-2 test regarding extracts (essential oils did not exhibit any significant activity). Namely, all analyzed extracts, at a concentration of 20 μg/mL, showed a percentage of inhibition of COX-2 enzyme (54.04–63.04%), which did not indicate a statistically significant difference from the positive control of celecoxib (61.60%) at a concentration of 8.8 μM. In vivo testing showed that all methanol extracts of hyssop herb, at the highest test dose of 200 mg/kg in the third and fourth hours, after carrageenan administration, exhibited a statistically significant (p < 0.05) inhibitory effect on the increase in rat paw edema in relation to control. This activity is comparable or higher in relation to the reference substance, indomethacin, at a concentration of 8 mg/kg. The preliminary in silico results suggest that investigated compounds (RA and CA) showed better inhibitory activity against COX-1 and COX-2 than standard non-steroidal anti-inflammatory drug (NSAID), ibuprofen, as evident from the free binding energy (ΔGbind in kJ mol−1). The binding energies of the docked compounds to COX-1 and -2 were found to be in the range between −47.4 and −49.2 kJ mol−1. Ibuprofen, as the one NSAID, for the same receptors targets, showed remarkably higher binding energy (ΔGbind = −31.3 kJ mol−1 to COX-1, and ΔGbind = −30.9 kJ mol−1 to COX-2). Conclusion: The results obtained not only support the traditional use of hyssop herb in inflammatory conditions in folk medicine, but also open the door to and the need for further in vivo testing of extracts in order to examine the molecular mechanism of anti-inflammatory activity in living systems and possibly develop a new anti-inflammatory drug or supplement.

AB  - Usled stalnog porasta broja stanovnika raste i potreba za hranom u svetu, što dovodi do povećavanja obradivih površine pod žitaricama i uljaricama. Raste i količina žetvenih ostataka koji se najčešće spaljuju. Spaljivanje žetvenih ostataka predstavlja veliki ekološki rizik, sa jedne strane, jer je čest uzročnik požara, dok sa druge strane predstavlja vrednu biomasu koja ostaje neiskorišćena. U poslednjih nekoliko godina je primećen trend spaljivanja ostataka na polju što dovodi do zagađenja vazduha i predstavlja opasnost po zdravlje stanovništva. Žetveni ostaci sadrže različite komponente koje bi mogle naći svoju primenu u prehramebnoj i farmaceutskoj industriji. Analizom sastava lipidnog ekstrakta žetvenih ostataka utvrđeno je prisustvo biološki vrednih komponenata koje dalje mogu naći svoju primenu u proizvodnji mesnih prerađevina sa poboljšanom oksidativnom stabilnošću, boljom održivošću, poboljšanim sastavom masnih kiselina, kao i novim formulama prirodne kozmetike.

Chemical composition, anti-inflammatory effect and antitumor activity of curly dock fruit (Rumex crispus L., Polygonaceae)

AB  - Curly dock (Rumex crispus L.) is a perennial herbaceous plant that is traditionally used
in the treatment of gastrointestinal ailments, infections and skin diseases. The aim of this
study was to examine the chemical composition, ex vivo anti-inflammatory effect and in vivo
antiproliferative activity of water extract of curly dock fruit. The polyphenolic profile was
analyzed by LC-DAD-ESI-MS technique. The effect on the production of arachidonic acid
metabolites was examined in human platelets. Antitumor activity of orally administered
extract (concentration: 5% w/v; doses: 1, 2 and 5 mL/kg of body weight/day; treatment
length: 7 days) to Ehrlich ascites tumor and hepatocellular carcinoma was assessed in an
animal experiment. Ascites volume, viable cell percentage and antioxidant enzyme levels
were determined. The presence of phenolic acids (gallic and protocatechuic acids),
proanthocyanidins (monomers, dimers and trimers), flavonoid glycosides and
anthraquinone emodin was revealed in the water extract of R. crispus fruit. The content of
the quantitatively dominant compound miquelianin was 2.4%. The investigated preparation
concentration-dependently inhibited the synthesis of 12(S)-hydroxy-(5Z,8E,10E)-
heptadecatrienoic acid (IC50 = 4.96 mg/mL) and 12(S)-hydroxy-(5Z,8Z,10E,14Z)-
eicosatetraenoic acid (IC 50 = 2.06 mg/mL). The antitumor effect in animals was dose-
dependent and manifested as suppression of tumor growth and induction of cell death of
malignantly transformed cells. Values of biochemical parameters suggested that oxidative
stress was induced in cancer cells, and it can be assumed that this mechanism was at least
partly responsible for the activity. Water extract of R. crispus fruit has significant
pharmacological potential that justifies further research.
AB  - Štavelj (Rumex crispus L.) je višegodišnja zeljasta biljka koja se tradicionalno koristi u
tretmanu gastrointestinalnih tegoba, infekcija i kožnih oboljenja. Cilj ove studije je bio da se
ispita hemijski sastav, ex vivo antiinflamatorni efekat i in vivo antiproliferativna aktivnost
vodenog ekstrakta ploda štavelja. Polifenolni profil je analiziran LC‐DAD‐ESI‐MS tehnikom.
Uticaj na produkciju metabolita arahidonske kiseline je ispitan u humanim trombocitima.
Antitumorska aktivnost oralno primenjenog ekstrakta (koncentracija: 5% m/V; doze: 1, 2 i 5
mL/kg telesne težine/dan; dužina tretmana: 7 dana) prema Ehrlich-ovom ascitnom tumoru i
hepatocelularnom karcinomu procenjena je u eksperimentu na životinjama. Određeni su
zapremina ascitesa, procenat vijabilnih ćelija i nivoi antioksidantnih enzima. U vodenom
ekstraktu ploda R. crispus je utvrđeno prisustvo fenolnih kiselina (galna i protokatehinska
kiselina), proantocijanidina (monomeri, dimeri i trimeri), flavonoidnih heterozida i
antrahinona emodina. Sadržaj kvantitativno dominantnog jedinjenja mikvelijanina je iznosio
2,4%. Ispitivani preparat je koncentraciono-zavisno inhibirao sintezu 12(S)-hidroksi-
(5Z,8E,10E)-heptadekatrienske kiseline (IC 50 = 4,96 mg/mL) i 12(S)-hidroksi-
(5Z,8Z,10E,14Z)-eikozatetraenske kiseline (IC50 = 2,06 mg/mL). Antitumorski efekat u
životinja je bio dozno-zavisan i ispoljio se kao suprimiranje rasta tumora i indukcija ćelijske
smrti maligno transformisanih ćelija. Vrednosti biohemijskih parametara su sugerisale da je
u ćelijama karcinoma došlo do indukovanja oksidativnog stresa, te se može pretpostaviti da
je ovaj mehanizam bio barem delom zaslužan za aktivnost. Vodeni ekstrakt ploda R. crispus
poseduje značajan farmakološki potencijal koji opravdava dalje istraživanje.

AB  - Aims: The aims of the study were to analyse the polyphenols of Pulicaria dysenterica (L.) Bernh. methanolic extracts from aerial and underground parts, assessment of antioxidant activity and to evaluate their cytotoxicity on HeLa cells of cervical cancer.

Methodology: The total phenolic content (TPC) of extracts was determined by the Folin-Ciocalteu spectrophotometric method. The qualitative and quantitative analysis of individual polyphenolic compounds were performed by the reverse phase HPLC method. The antioxidant capacity was evaluated by both, 2,2-diphenyl1-picrylhydrazyl radical and FRAP assay, while cytotoxicity of the extracts was assessed by MTT assay.

Results: TPC of the samples were 127.62±2.22 and 244.12±8.84 mg gallic acid equivalent/g extract. In the extracts chlorogenic acid in amount of 10.06±0.96 and 11.32±0.28 mg/g, flavonoid rutin in amount of 5.68±0.13 mg/g and three caffeic acid derivatives were recorded. Extract from underground parts achieved better antioxidant activity with IC50 value 55.36±0.75 µg/mL and FRAP value 2411.12±37.22 µmol Fe2+g-1 compared to the one from aerial parts. Extract from aerial parts achieved better cytotoxic activity with 50% inhibition of viability (IC50) at concentration of 0.389±0.07 mg/mL, against HeLa cells, compared to the extract from underground parts.

Conclusion: Analyzed Pulicaria dysenterica extracts contained phenolic acids and flavonoids. The extracts showed good antioxidant activity and cytotoxic properties against HeLa cells in vitro.

Harvest residues of maize, wheat and sunflower - waste, or the source of valuable raw materials? - Project PhAgroWaste

AB  - In Serbia, agricultural waste is still an underutilized resource. Recently, a trend of
harvest residues open burning in the fields has been observed, resulting in heavy air
pollution and posing risk to human and ecological health. Therefore, a consistent set of
interdisciplinary investigations under the title “Value-Added Products from Maize, Wheat
and Sunflower Waste as Raw Materials for Pharmaceutical and Food Industry”
(PhAgroWaste) has been designed, with the aim to investigate and propose a cost-effective
and sustainable agricultural waste management practice, where micro- and nanocrystalline
cellulose (MCC/NCC) and the other products of high commercial value and biological activity
(waxes, polyphenol-containing extracts and/or isolated chemical compounds) will be
produced from harvest residues of corn, wheat and sunflower. MCC is one of the most
frequently used excipients in formulations of different pharmaceutical products. On the
other hand, NCC finds applications in tissue engineering, 3D-bioprinting, waste water
treatment, development of composite materials, drug delivery, etc. MCC and polyphenol-rich
extracts produced from agricultural waste will be added to innovative formulations of meat
products to gain higher oxidative stability, extend shelf life, improve fatty acid composition
and increase fibres content. Waxes and polyphenol-rich extracts will be tested in new
formulations of nature-inspired cosmetics. This way, high value-added products can be
created, with intention to improve the quality of life of their consumers, to reduce waste in
the production chain, to limit environmental impacts of intensive agriculture and to improve
competitiveness and economic growth in Serbian food and pharmaceutical industry.
AB  - Poljoprivredni otpad je, u Srbiji, još uvek nedovoljno iskorišćen resurs, koji se
uglavnom spaljuje na poljima ili baca - doprinoseći velikom zagađenju vazduha, ugrožavajući
zdravlje stanovništva i narušavajući uslove životne sredine. Zbog toga je osmišljen
konzistentan set interdisciplinarnih istraživanja pod nazivom „Value-Added Products from
Maize, Wheat and Sunflower Waste as Raw Materials for Pharmaceutical and Food Industry“
(PhAgroWaste), sa ciljem da ispita i predloži održivu praksu upravljanja poljoprivrednim
otpadom u kojoj bi žetveni ostaci pšenice, kukuruza i suncokreta bili sirovina za proizvodnju
različitih materijala za primenu u farmaceutskoj industriji, sa visokom komercijalnom
vrednošću i važnim biološkim aktivnostima (mikro- i nanokristalna celuloza - MCC/NCC,
voskovi, ekstrakti bogati polifenolima, izolovana hemijska jedinjenja itd.). MCC je jedan od
najčešće korišćenih ekscipijenasa u formulacijama različitih farmaceutskih proizvoda. S
druge strane, NCC nalazi primenu u inženjeringu tkiva, 3D-bioprintingu, tretmanu otpadnih
voda, razvoju kompozitnih materijala, isporuci lekova, itd. MCC i ekstrakti bogati
polifenolima proizvedeni iz poljoprivrednog otpada ć e biti inkorporirani u inovativne
formulacije mesnih proizvoda sa povećanom oksidativnom stabilnošć u, dužim rokom
trajanja, poboljšanim sastavom masnih kiselina i poveć anim sadržajem vlakana. Voskovi i
polifenolima bogati ekstrakti će biti testirani u formulaciji novih kozmetičkih proizvoda
inspirisanih prirodom. Na ovaj način, mogu se proizvesti materijali sa visokom dodatnom
vrednošć u, u cilju poboljšanja kvaliteta života njihovih korisnika, smanjenja generisanja
otpada u proizvodnom lancu, ograničenja uticaja intenzivne poljoprivrede na životnu
sredinu i unapređenja konkurentnosti i privrednog rasta srpske prehrambene i
farmaceutske industrije.

različitih materijala za primenu u farmaceutskoj industriji, sa visokom komercijalnom
vrednošću i važnim biološkim aktivnostima (mikro- i nanokristalna celuloza - MCC/NCC,
voskovi, ekstrakti bogati polifenolima, izolovana hemijska jedinjenja itd.). MCC je jedan od
najčešće korišćenih ekscipijenasa u formulacijama različitih farmaceutskih proizvoda. S
druge strane, NCC nalazi primenu u inženjeringu tkiva, 3D-bioprintingu, tretmanu otpadnih
voda, razvoju kompozitnih materijala, isporuci lekova, itd. MCC i ekstrakti bogati
polifenolima proizvedeni iz poljoprivrednog otpada ć e biti inkorporirani u inovativne
formulacije mesnih proizvoda sa povećanom oksidativnom stabilnošć u, dužim rokom
trajanja, poboljšanim sastavom masnih kiselina i poveć anim sadržajem vlakana. Voskovi i
polifenolima bogati ekstrakti će biti testirani u formulaciji novih kozmetičkih proizvoda
inspirisanih prirodom. Na ovaj način, mogu se proizvesti materijali sa visokom dodatnom
vrednošć u, u cilju poboljšanja kvaliteta života njihovih korisnika, smanjenja generisanja
otpada u proizvodnom lancu, ograničenja uticaja intenzivne poljoprivrede na životnu
sredinu i unapređenja konkurentnosti i privrednog rasta srpske prehrambene i
farmaceutske industrije.",

AB  - Due to the growing health problems associated with the increased intake of saturated and trans fats, and the unbalanced n-6/n-3 ratio in the diet, in recent years numerous studies have focused on finding adequate substitutes for fat in meat products, while the meat industry made additional efforts to implement the obtained formulations (oleogels) in the standard production processes. Insoluble cellulose fibre in the form of microcrystalline cellulose has proven to be a promising ingredient in reduced fat, fibre-enriched functional food development, since it has been safely used as a food additive for many years with a known beneficial effect on human health. This review will discuss the recent advances of MCC application associated with alternative cellulose sources and processing technology, functional physico-chemical properties and potential as organogelator in fat mimetics. Finally, recently published data concerning its practical application in meat products as fat or starch substitutes will be presented.

AB  - Abstract:Hyssopus officinalisL. is a well-known aromatic plant used in traditional medicine and the foodand cosmetics industry. The aim of this study is to assess the antioxidant, genotoxic, antigenotoxic andcytotoxic properties of characterized hyssop essential oils and methanol extracts. Chemical compositionwas analyzed by gas chromatography - mass spectrometry (GC-MS) and liquid chromatography with diodearray detection and mass spectrometry (LC-DAD-MS), respectively. Antioxidant activity was examinedby 2,2-diphenyl-1-picrylhydrazyl (DPPH) and ferric reducing/antioxidant power (FRAP) tests; genotoxicand antigenotoxic activity were examined by the comet assay, while cytotoxicity was evaluated by the 3-(4,5-dimethylthiazol-2-yl)-2,5 diphenyltetrazolium bromide dye (MTT) test against tumor cell lines (SW480,MDA-MB 231, HeLa) and non-transformed human lung fibroblast cell lines (MRC-5). The essential oilswere rich in monoterpene hydrocarbons (e.g., limonene; 7.99–23.81%), oxygenated monoterpenes (1,8-cineole; 38.19–67.1%) and phenylpropanoids (methyl eugenol; 0.00–28.33%). In methanol extracts, the mostabundant phenolics were chlorogenic and rosmarinic acid (23.35–33.46 and 3.53–17.98 mg/g, respectively).Methanol extracts expressed moderate to weak antioxidant activity (DPPH IC50= 56.04–199.89μg/mL,FRAP = 0.667–0.959 mmol Fe2+/g). Hyssop preparations significantly reduced DNA damage in humanwhole blood cells, induced by pretreatment with hydrogen peroxide. Methanol extracts exhibited selectiveand potent dose- and time-dependent activity against the HeLa cell line.  Results of the current studydemonstrated notableH.officinalismedicinal potential, which calls for further investigation.
