AB  - Diets high in fat and sugar lead to metabolic syndrome (MetS) and related chronic diseases. We investigated the effects of commercially available, cold-pressed polyphenol-rich black currant (BC) and cornelian cherry (CC) juices on the prevention of MetS in Wistar rats induced by a 10-weeks high-fat high-fructose (HFF) diet. Juice consumption, either BC or CC, with a HFF diet resulted in lower serum triglycerides compared to only the HFF consumption. Both juices also mitigated the effects of HFF on the liver, pancreas, and adipose tissue, by preserving liver and pancreas histomorphology and reducing visceral fat and adipocyte size. Furthermore, supplementation with both juices reduced glucagon and up-regulated insulin expression in the pancreas of the rats on the HFF diet, whereas the BC also showed improved glucose regulation. BC juice also reduced the expression of IL-6 and hepatic inflammation compared to the group only on HFF diet. Both juices, especially BC, could be a convenient solution for the prevention of MetS in humans.

AB  - A Western-style diet, rich in fat and simple sugars, is the main risk factor for a significant number of chronic diseases and disorders, as well as for a progression of metabolic syndrome (MetS). One of the key mechanisms involved in MetS development is increased oxidative stress caused by the accumulation of body fat. Some dietary polyphenols have shown a protective role in preventing oxidative-stress-induced damage. We investigated the difference in the oxidative response of plasma, liver, and visceral adipose tissue in rats fed with a high-fat high-fructose (HFF) diet for ten weeks, and the effectiveness of polyphenol-rich juices (black currant (BC) and cornelian cherry (CC)) in HFF-diet-induced oxidative stress prevention. The most prominent impact of the HFF diet on redox parameters was recorded in the liver, whereas adipose tissue showed the most potent protection mechanisms against oxidative stress. Consumption of both juices decreased advanced oxidation protein product (AOPP) level in plasma, increased paraoxonase1 (PON1) activity in the liver, and significantly decreased total oxidative status (TOS) in adipose tissue. BC exerted stronger antioxidative potential than CC and decreased the superoxide anion radical (O2•−) level in the liver. It also reduced TOS, total antioxidative status (TAS), and malondialdehyde (MDA) concentration in adipose tissue. The multiple linear regression analysis has shown that the best predictors of MetS development, estimated through the increase in visceral adiposity, were superoxide dismutase (SOD), AOPP, TOS, and TAS. The consumption of polyphenol-rich juices may provide a convenient approach for the systemic reduction of oxidative stress parameters.

Deciphering ciprofloxacin-induced neurotoxicity: behavioral and molecular profiling of ciprofloxacin treatment in rats

AB  - Introduction: Ciprofloxacin is a fluoroquinolone antibiotic commonly used to treat various bacterial infections, with a potential to induce adverse mood effects in patients. Since the molecular mechanism of ciprofloxacin-induced neurotoxicity is poorly understood, we aimed to identify behavioral changes and corresponding neurotransmitter pattern after its prolonged administration in rats. We screened for untoward effects of ciprofloxacin on locomotor activity, despair, anhedonia, object recognition memory, and anxiety, as behavioral domains affected in various psychiatric diseases. Methodology: Three-month old male Sprague-Dawley rats were orally gavaged with ciprofloxacin (20 or 100 mg/kg) or solvent (0.5% methyl cellulose solution) each day for 4 weeks (n=80). One group of animals (n=40) passed the open field (OF), novel object recognition test (NORT), and forced swimming test (FST). Another group (n=40) underwent elevated plus maze (EPM) and sucrose preference test (SPT). After the completion of behavioral battery, the prefrontal cortex and cerebrospinal fluid (CSF) were collected. The neurotransmitters and metabolites of the kynurenine pathway were determined in the prefrontal cortex (PFC) through HPLC-MS/MS. Additionally, levels of interleukin-2 (IL-2) in CSF were quantified with Luminex. Behavioral and molecular parameters were analyzed by one-way ANOVA followed by Dunnett post hoc test in GraphPad Prism 9. Results: In FST, the treatment with high dose of ciprofloxacin decreased the swim time compared to control, which could be related to induction of despair-like behavior (p<0.05). The ciprofloxacin treatment did not affect object memory in NORT. In OF, the distance travelled and the number of rotations were not changed after treatment with ciprofloxacin compared to the control group. Further, animals treated with ciprofloxacin did not show changes in parameters in EPM and SPT. The acetylcholine levels in PFC were increased after ciprofloxacin treatment (p<0.05) in comparison with controls, which could be associated with depressed mood states. In line with that, high dose of ciprofloxacin treatment showed the tendency to decrease and increase levels of GABA and dopamine, respectively, but without reaching the statistical significance (p=0.07 and p=0.06). No changes in kynurenine pathway were observed after the treatment. The IL-2 concentration in CSF was increased after prolonged administration of low dose of ciprofloxacin treatment compared to the control levels (p<0.05), which could imply immunological stimulation of T lymphocytes and potential neuroinflammation. Conclusion: The despair behavior after treatment with high dose of ciprofloxacin was accompanied by increased levels of acetylcholine in PFC. Furthermore, the high dose of ciprofloxacin treatment showed tendency to decrease GABA levels, and increase dopamine levels in PFC, which could be connected to psychiatric adverse effects. Nonetheless, further studies are essential to confirm these neurotransmitter changes. On the other hand, the low dose of ciprofloxacin treatment elicited the increase of IL-2, which could be a marker of neuroinflammation-related neurotoxicity. In the future, efforts should be made to examine the role of IL-2 in the interaction of the immune system and the central nervous system, as its potential significance as a biomarker.

AB  - The disposal of waste generated in the agri-food industry is one of the greatest challenges
in achieving sustainable development. Although agri-food residues are a potential source of
bioactive compounds with proven health benefits, they are largely unused and disposed of as
organic waste. The recovery of bioactive compounds from agri-food waste to obtain products
with high biological value, such as functional foods and nutraceuticals, is an idea that stems from
the concept of bioeconomy and combines environmental issues with economically viable
production. Some of the main agri-food wastes in Serbia that have the potential to be recycled
into value-added products are apple, plum, grape, tomato, and beet pomace, and oilseed cakes.
Bioactive compounds isolated from these wastes include polyphenols, fibers, essential fatty acids,
minerals, various volatiles and pigments. This article focuses on the most common food wastes
and the potential reuse of these undervalued material to produce value-added products such as
functional foods, nutraceuticals or food additives.
AB  - Odlaganje otpada koji nastaje u prehrambenoj industriji jedan je od najvećih izazova u
postizanju održivog razvoja. Iako su nusproizvodi koji nastaju u prehrambenoj industriji
potencijalni izvor bioaktivnih jedinjenja sa dokazanim pozitivnim zdravstvenim efektima, oni se
uglavnom odlažu kao organski otpad. Iskorišćenje bioaktivnih jedinjenja iz ovih nusproizvoda u
cilju dobijanja proizvoda sa dodatom nutritivnom i biološkom vrednošću, kao što su funkcionalna
hrana i nutraceutici, ideja je koja proizilazi iz koncepta bioekonomije i kombinuje ekološki aspekt
sa ekonomski održivom proizvodnjom. Neki od glavnih nusproizvoda koji se generišu u Srbiji sa
potencijalom da se iskoriste u proizvodnji proizvoda sa dodatom vrednošću su trop jabuke, trop
šljive, komina grožđa, trop paradajza, uljane pogače i dr. Bioaktivna jedinjenja izolovana iz ovih
otpada uključuju polifenole, peptide, vlakna, esencijalne masne kiseline, minerale, različite
isparljive materije i pigmente. Ovaj članak se fokusira na najčešće otpade prehrambene industrije
i potencijalnu ponovnu upotrebu ovog još uvek neiskorišćenog otpadnog materijala za

in achieving sustainable development. Although agri-food residues are a potential source of
bioactive compounds with proven health benefits, they are largely unused and disposed of as
organic waste. The recovery of bioactive compounds from agri-food waste to obtain products
with high biological value, such as functional foods and nutraceuticals, is an idea that stems from
the concept of bioeconomy and combines environmental issues with economically viable
production. Some of the main agri-food wastes in Serbia that have the potential to be recycled
into value-added products are apple, plum, grape, tomato, and beet pomace, and oilseed cakes.
Bioactive compounds isolated from these wastes include polyphenols, fibers, essential fatty acids,
minerals, various volatiles and pigments. This article focuses on the most common food wastes
and the potential reuse of these undervalued material to produce value-added products such as
functional foods, nutraceuticals or food additives., Odlaganje otpada koji nastaje u prehrambenoj industriji jedan je od najvećih izazova u
postizanju održivog razvoja. Iako su nusproizvodi koji nastaju u prehrambenoj industriji
potencijalni izvor bioaktivnih jedinjenja sa dokazanim pozitivnim zdravstvenim efektima, oni se
uglavnom odlažu kao organski otpad. Iskorišćenje bioaktivnih jedinjenja iz ovih nusproizvoda u
cilju dobijanja proizvoda sa dodatom nutritivnom i biološkom vrednošću, kao što su funkcionalna
hrana i nutraceutici, ideja je koja proizilazi iz koncepta bioekonomije i kombinuje ekološki aspekt
sa ekonomski održivom proizvodnjom. Neki od glavnih nusproizvoda koji se generišu u Srbiji sa
potencijalom da se iskoriste u proizvodnji proizvoda sa dodatom vrednošću su trop jabuke, trop
šljive, komina grožđa, trop paradajza, uljane pogače i dr. Bioaktivna jedinjenja izolovana iz ovih
otpada uključuju polifenole, peptide, vlakna, esencijalne masne kiseline, minerale, različite

AB  - Dietary supplements (DS) are manufactured products consisting of one or more dietary
ingredients; they are intended to supplement the diet and provide additional nutrients or other
beneficial compounds that are lacking or insufficient in a regular diet. Dietary supplements
containing antioxidant compounds have been shown to have positive effects in various
(pato)physiological processes, i.e., any condition that is fundamentally redox imbalanced
(cardiovascular diseases, cancer, aging, intense exercise). The most common antioxidants in
dietary supplements are clearly antioxidant micronutrients such as vitamin C, vitamin E, zinc, and
selenium, but also various secondary plant compounds, including polyphenols and carotenoids.
The dosage of antioxidants administered through dietary supplements may not always be optimal,
so some dietary interventions through supplementation with antioxidant compounds have been
shown to have an effect that it is limited, or completely absent. Therefore, any dietary
supplementation should be done only under appropriate guidance from health care professionals
to ensure that it is safe, effective, and appropriate for the individual's condition and needs.
AB  - Dijetetski suplementi (DS) ili dodaci ishrani su proizvodi koji sadrže jedan ili više sastojaka
i primenjuju se kao dopuna ishrani, odnosno imaju posebnu nutritivnu namenu. Brojni su naučni
dokazi koji sugerišu da DS koji sadrže antioksidativna jedinjenja imaju blagotvorno dejstvo u
različitim (pato)fiziološkim procesima, odnosno bilo kom stanju koje u osnovi ima narušenu
redoks ravnotežu (kardiovaskularne bolesti, rak, starenje, intenzivno vežbanje). Najčešći
antioksidansi u dodacima ishrani su antioksidativni mikronutrijenti kao što su vitamin C, vitamin
E, selen, i cink, ali i različiti sekundarni biljni metaboliti, uključujući polifenole i karotenoide.
Posebna pažnja mora biti usmerena na doze i dužinu suplementacije. Neadekvatna primena
antioksidanasa putem dijetetskih suplemenata često ishoduje time da dijetarne intervencije
suplementacijom antioksidativnim jedinjenjima imaju ograničen efekat ili on kompletno izostane.
Stoga ove ali i sve druge dijetarne suplementacije treba sprovoditi isključivo u skladu sa
uputstvima zdravstvenih radnika kako bi se osigurali njihova efikasnost i bezbednost, ali i
prikladnost za stanje i potrebe pojedinca.

AB  - Semenke predstavljaju najvredniji deo ploda vinove loze. Polifenolna jedinjenja se primarno
koncentrišu tamo, zbog čega semenke poseduju jaku antioksidativnu aktivnost. Zahvaljujući tome,
ekstrakti semenki mogu delovati kao antimikrobni agensi. Ekstrakcija bioaktivnih jedinjenja se
obično vrši pomoću isparljivih, organskih rastvarača. Poslednjih godina, zajedno sa povećanjem
svesti o značaju zaštite životne sredine, različiti „zeleni“ rastvarači su se pojavili kao alternativa
konvencionalnim.
Ova studija je imala za cilj ispitivanje razlika između semenki različitih sorti grožđa u pogledu
njihove antimikrobne aktivnosti prema Staphylococcus aureus. Takođe je procenjen afinitet
eutektičkog rastvarača za ekstrakciju polifenola iz semenki grožđa. Kao referentni rastvarač
korišćen je etanol.
Semenke su izolovane iz pet različitih sorti crvenog grožđa koje se široko gaje u Srbiji.
Ultrazvučna ekstrakcija izvedena je korišćenjem eutektičkog rastvarača (holin hlorid:limunska
kiselina, 2:1, 30 % vode; ChCit) i 70 % etanola. Ukupan sadržaj polifenola (eng. Total Phenolic
Content; TPC) je određen Folin-Ciocalteu metodom. Antimikrobna aktivnost uzoraka je ispitivana
je na standardnom soju Staphylococcus aureus ATCC 6538 bujon-mikrodilucionim testom.
TPC vrednosti su se kretale od 91,75 do 116,71 i od 84,79 do 135,5 mg GAE/g suve mase (za
ChCit i etanolne ekstrakte, respektivno). Semenke sorte Prokupac imale su najveći sadržaj ukupnih
polifenola, bez obzira na upotrebljeni rastvarač. Vrednosti minimalnih inhibitornih koncentracija
(MIK) su se kretale između 0,04 i 0,15 mg/ml. ChCit ekstrakti su bili slični ili čak efikasniji protiv
ove Gram-pozitivne bakterije u poređenju sa etanolnim ekstraktima. Ovo bi moglo biti delimično
objašnjeno antimikrobnom aktivnošću samog rastvarača, pošto je primećeno da ChCit inhibira rast
Staphylococcus aureus (MIK=0,3 mg/ml).
Imajući u vidu da su ekstrakti pokazali znatno jaču aktivnost u odnosu na rastvarač i da su
rezultati ispitivanja antimikrobne aktivnosti bili u značajnoj korelaciji sa sadržajem polifenola,
može se zaključiti da je sinergizam između prisutnih polifenola i ChCit rezultirao snažnom
antimikrobnom aktivnošću protiv Staphylococcus aureus u ekološki prihvatljivijim ekstraktima.

AB  - Wine industry generates enormous quantities of solid organic waste consisted of
stems, skins and seeds. Grape seeds are considered the most valuable part of a pomace, since
it is rich in oil and containing numerous bioactive compounds. Grape seed oil (GSO)
composition depends mainly on grape variety, but also on environmental factors and
maturation degree. The aim of this study was to investigate the diversity of chemical
composition among seed oils obtained from different grape varieties. Eight varieties were
collected from the same wine region and at the same maturity phase. Investigation of fatty
acid composition was done using GC/FID, while HPLC/FD was employed for vitamin E
analyses. Linoleic acid was the most abundant in all samples, followed by oleic acid.
Saturated fatty acids, such as palmitic and stearic acid, were also present (up to 20 % of the
total fatty acid methyl esters). Vitamin E concentrations were significantly affected by grape
variety (p<0.01). α-tocopherol was found in high concentration in all samples. GSO from
Shiraz variety had about 25 mg α-tocopherol per kg of oil, while Gamay GSO contained more
than six times less amounts of this vitamin E isoform. Sum of β and γ tocopherol also varied
considerable, although Shiraz again stood out with the highest content. Finally, δ tocopherol
was found in four varieties, in minor quantities. Generally, considering variety diversification
on vitamin E composition of GSO, investigations that will include as much varieties as
possible, are needed to single out ones with the highest bio-oil potential.
AB  - Industrija vina ostavlja za sobom ogromne količine čvrstog organskog otpada koji se
sastoji od peteljki, pokožice i semenki grožđa. Semenke se smatraju najvrednijim delom
komine, jer su bogate uljem i sadrže brojna bioaktivna jedinjenja. Sastav ulja iz semenki
grožđa zavisi pre svega od sorte vinove loze, ali i od faktora sredine i stepena zrelosti ploda.
Cilj ovog rada bilo je ispitivanje raznolikosti hemijskog sastava ulja dobijenog iz semenki
različitih sorti grožđa. U tu svrhu, prikupljeno je osam sorti u istoj fazi zrelosti i iz istog
vinskog regiona. Ispitivanje sastava masnih kiselina vršeno je korišćenjem GC/FID, dok je
HPLC/FD korišćen za analizu koncentracije vitamina E. Linolna kiselina je bila
najzastupljenija u svim uzorcima, zatim oleinska kiselina. Zasićene masne kiseline, kao što su
palmitinska i stearinska kiselina, takođe su bile prisutne (do 20 % od ukupnih metil estara
masnih kiselina). Sorta vinove loze je značajno uticala na sadržaj vitamina E (p<0,01). α-
tokoferol je pronađen u visokim koncentracijama u svim uzorcima. Ulje iz semenki sorte
Širaz sadržalo je oko 25 miligrama α-tokoferola po kilogramu, dok je u ulju sorte Game
kvantifikovana šest puta manja koncentracija ove izoforme vitamina E. Zbir β i γ tokoferola
takođe je značajno varirao, iako se Širaz ponovo istakao sa najvećim sadržajem. δ tokoferol je
pronađen u ulju četiri sorte, u manjim količinama. Generalno, s obzirom na raznovrsnost
sastava vitamina E u ulju iz semenki grožđa, potrebna su opsežnija istraživanja koja će
obuhvatiti veći broj sorti vinove loze kako bi se izdvojile one sa najvećim potencijalom bio-
ulja.

composition among seed oils obtained from different grape varieties. Eight varieties were
collected from the same wine region and at the same maturity phase. Investigation of fatty
acid composition was done using GC/FID, while HPLC/FD was employed for vitamin E
analyses. Linoleic acid was the most abundant in all samples, followed by oleic acid.
Saturated fatty acids, such as palmitic and stearic acid, were also present (up to 20 % of the
total fatty acid methyl esters). Vitamin E concentrations were significantly affected by grape
variety (p<0.01). α-tocopherol was found in high concentration in all samples. GSO from
Shiraz variety had about 25 mg α-tocopherol per kg of oil, while Gamay GSO contained more
than six times less amounts of this vitamin E isoform. Sum of β and γ tocopherol also varied
considerable, although Shiraz again stood out with the highest content. Finally, δ tocopherol
was found in four varieties, in minor quantities. Generally, considering variety diversification
on vitamin E composition of GSO, investigations that will include as much varieties as
possible, are needed to single out ones with the highest bio-oil potential., Industrija vina ostavlja za sobom ogromne količine čvrstog organskog otpada koji se
sastoji od peteljki, pokožice i semenki grožđa. Semenke se smatraju najvrednijim delom
komine, jer su bogate uljem i sadrže brojna bioaktivna jedinjenja. Sastav ulja iz semenki
grožđa zavisi pre svega od sorte vinove loze, ali i od faktora sredine i stepena zrelosti ploda.
Cilj ovog rada bilo je ispitivanje raznolikosti hemijskog sastava ulja dobijenog iz semenki
različitih sorti grožđa. U tu svrhu, prikupljeno je osam sorti u istoj fazi zrelosti i iz istog
vinskog regiona. Ispitivanje sastava masnih kiselina vršeno je korišćenjem GC/FID, dok je
HPLC/FD korišćen za analizu koncentracije vitamina E. Linolna kiselina je bila
najzastupljenija u svim uzorcima, zatim oleinska kiselina. Zasićene masne kiseline, kao što su
palmitinska i stearinska kiselina, takođe su bile prisutne (do 20 % od ukupnih metil estara
masnih kiselina). Sorta vinove loze je značajno uticala na sadržaj vitamina E (p<0,01). α-
tokoferol je pronađen u visokim koncentracijama u svim uzorcima. Ulje iz semenki sorte
Širaz sadržalo je oko 25 miligrama α-tokoferola po kilogramu, dok je u ulju sorte Game
kvantifikovana šest puta manja koncentracija ove izoforme vitamina E. Zbir β i γ tokoferola
takođe je značajno varirao, iako se Širaz ponovo istakao sa najvećim sadržajem. δ tokoferol je
pronađen u ulju četiri sorte, u manjim količinama. Generalno, s obzirom na raznovrsnost
sastava vitamina E u ulju iz semenki grožđa, potrebna su opsežnija istraživanja koja će
obuhvatiti veći broj sorti vinove loze kako bi se izdvojile one sa najvećim potencijalom bio-
ulja.",

AB  - Besides iodine deficiency, autoimmune Hashimoto thyroiditis is the leading cause of
hypothyroidism globally, characterized by the increased titer of thyroid autoantibodies and
destruction of thyroid cells. Graves' disease is the most common etiology of hyperthyroidism
worldwide. Patients with thyroid dysfunction often require dietary modifications. Popular
interventions include supplementation with certain vitamins and minerals, as well as trace
elements such as iodine and selenium. The intake of food containing goitrogens should be limited.
Goitrogens are substances of plant origin that interfere with the production of thyroid hormones,
increasing the risk for goiter and hypothyroidism. The primary dietary sources of goitrogens are
cruciferous vegetables, soy products, starchy plants, and some fruits. Beyond essential nutrients,
there has been an increasing interest in using specific nutraceuticals, including myoinositol, L-
carnitine, melatonin, and resveratrol, as potential preventive and therapeutic agents in thyroid
diseases. Even though current evidence promotes some beneficial outcomes of these
nutraceuticals, further investigations are needed to clarify dose-dependent effects, duration of
supplementation, combination in different clinical settings, and the exact mechanism of their
action in thyroid disorders.
AB  - Pored nedostatka joda, najčešća etiologija hipotireoze u razvijenim zemljama je Hašimoto tireoiditis, koji karakteriše povišen nivo serum autoantitela i limfocitna infiltracija štitaste žlezde. Grejvsova bolest je vodeći uzrok hipertireoza na globalnom nivou. Pacijenti sa oboljenjem štitaste žlezde često zahtevaju modifikaciju dijetarnog režima. Popularne intervencije uključuju suplementaciju određenim vitaminima, mineralima i mikroelementima kao što su jod i selen. Preporučuje se ograničen unos namirnica koje sadrže goitrogene supstance jer ometaju normalnu sintezu tiroidnih hormona, povećavajući rizik za nastanak strume i hipotireoze. Primarni izvori goitrogena u ishrani su kruciferno povrće, proizvodi od soje, skrobne biljke i pojedine vrste voća. AB  - Winemaking generates large quantities of grape waste consisting of seeds, skin and stalks. Given that grape seeds are a rich source of different bioactive compounds, the main goal of this research was to optimize grape seed phenol extraction using a Box–Behnken design. The following conditions were derived from the optimization process: sample:solvent ratio of 1:10 w/v, extraction time of 30 min and extraction temperature of 50 °C. In addition, a sustainable (green) approach for obtaining extracts was developed by comparing choline chloride:citric acid-ChCit (natural deep eutectic solvent (NADES)) and ethanol extraction methods with respect to phenol profiles and antioxidant activity. This study was conducted on seeds from eight different red grape varieties. Phenolic acids, flavan-3-ols and procyanidins were characterized using HPLC–MS/MS, and the concentration of procyanidin B1 was above 1 mg/g of dry weight in all analyzed samples. The contents of all phenol classes and antioxidant activities were found to not differ significantly between the solvents, but NADES was found to offer valuable advantages. Importantly, ChCit showed a strong affinity toward procyanidins and a strong correlation between antioxidant activity and quantified phenolic compounds.

AB  - The immune system defends the host from many pathogen-
ic microorganisms such as viruses, bacteria, parasites and
fungi, including a large number of specific cell types, inter-
related molecules, and biological responses. Due to infec-
tions, heightened immune system activity is accompanied
by expanded metabolic activities, requiring appropriate
energy supply, precursors for biosynthesis and regulatory
molecules. Numerous vitamins and minerals play a crucial
role in supporting body’s immunity and fighting against
viral infections. Other bioactive compounds like omega-3
fatty acids, probiotics and antioxidants (alpha-lipoic acid,
quercetin) are also important in the immune response. CO-
VID-19 may develop mild symptoms to severe damage of
the respiratory epithelium followed by a cytokine storm.
Many studies show that vitamin C, vitamin D, zinc and selenium are critical in defending against SARS-CoV-2 infection.
Intestinal dysbiosis is a feature of many infectious diseases, including COVID-19, so dietary approaches to establishing a
healthy microbiota are essential for improving immune function. This paper reviews the data on the roles and potential
effectiveness of selected nutraceuticals in the prevention and treatment of COVID-19.
AB  - Imunski sistem štiti organizam od brojnih patogena (bakterija, virusa, gljivica, parazita) uključujući veliki broj specijalizovanih tipova ćelija, komunikacionih molekula i
funkcionalnih odgovora. Pojačana aktivnost imunskog si
stema usled infekcija praćena je povećanim metaboličkim
aktivnostima, što zahteva izvore energije, supstrate za biosintezu i regulatorne molekule. Brojni vitamini i minerali
imaju ključnu ulogu u podršci imunskom sistemu i smanjenju rizika od infekcija. Ostale bioaktivne komponente kao omega-3 masne kiseline, probiotici i antioksidansi (alfa-lipoinska kiselina, kvercetin) takođe su od značaja u imunološkom
odgovoru. COVID-19 karakterišu kliničke slike od blagih simptoma do teške infekcije respiratornog epitela praćene citokinskom olujom. Pokazano je da starije osobe sa hroničnim bolestima imaju smanjenu aktivnost odbrambenog sistema
i neadekvatan nutritivni status, zbog čega postoji veći rizik za pojavu fatalnih ishoda. Ispitivanja ukazuju da su vitamin
C, vitamin D, cink i selen posebno važni u odbrani od infekcije SARS-CoV-2. Disbioza creva je karakteristika mnogih zaraznih bolesti uključujući COVID-19, zato su dijetetski pristupi za uspostavljanje zdrave mikrobiote važni u poboljšanju
imunoloških funkcija. U ovom radu prikazan je pregled literature o ulozi i potencijalnoj primeni odabranih nutraceutika u
prevenciji i tretmanu COVID-19.

AB  - Cardiotoxicity is a frequent undesirable phenomenon observed during oncological treatment that limits the therapeutic dose of antitumor drugs and thus may decrease the effectiveness of cancer eradication. Almost all antitumor drugs exhibit toxic properties towards cardiac muscle. One of the underlying causes of cardiotoxicity is the stimulation of oxidative stress by chemotherapy. This suggests that an appropriately designed diet or dietary supplements based on edible plants rich in antioxidants could decrease the toxicity of antitumor drugs and diminish the risk of cardiac failure. This comprehensive review compares the cardioprotective efficacy of edible plant extracts and foodborne phytochemicals whose beneficial activity was demonstrated in various models in vivo and in vitro. The studies selected for this review concentrated on a therapy frequently applied in cancer, anthracycline antibiotic—doxorubicin—as the oxidative stress- and cardiotoxicity-inducing agent.

Combinations of cocoa antioxidants: what they tell us about the chemopreventive relevance of interactions between food components?

AB  - Antioxidant properties of polyphenols are believed to underlie cocoa chemopreventive potential. However, it has been not recognized if these effects are mainly caused by the most abundant components or result from concerted action of major and minor cocoa bioactives as proposed by food synergy concept. This study was aimed at resolving this question. Initially, the cocoa extract composition was determined by HPLC-DAD-MS. Then, bioactivities of cocoa extract and a series of artificial mixtures of cocoa phytochemicals were tested to compare their redox properties in cell-free system and redox-associated biological effects in human colon cancer HT29 cells serving as a model of human alimentary tract. Under cell-free conditions, DPPH test as well as differential pulse voltammetry showed the highest antioxidant activity for cocoa powder extract (CE), but surprisingly, did not reveal any dose-dependent differences between mixtures despite growing concentration and complexity of antioxidants. Basically, to the same conclusion lead determinations of cellular antioxidant activity; CE was the most efficient in cell protection against ROS whereby concentration of catechins in studied solutions had to be above 10 μM to override cellular redox homeostasis. Cell growth inhibition was dose-dependent only for mixtures that consisted of main catechins at narrow range of low concentrations (0.01 – 1 μM C+EC). Neither clear relationship between composition of cocoa phytochemicals and nutrigenomic activity of CE and matching mixtures was spotted. Therefore, our study indicates that the bioactivity of non-toxic complex natural mixtures such as cocoa is strongly affected by interactions between their components, as predicted by food synergy.

AB  - Grape seeds contain a wide range of phenolic compounds responsible for its health promoting
effects. Interest for grape seed utilization has increased significantly along with a growing
recognition that present biologically active compounds were not completely isolated during the
extraction process. Numerous studies have been conducted in order to achieve the best
extraction recovery. Nevertheless, there is still a question concerning the pretreatment of grape
seeds. The aim of the present study was to investigate the impact of defatting process on total
polyphenol content and antioxidant activity of grape seed extracts. For that purpose seeds were
obtained from eight different grape varieties. Extraction with 70 % ethanol was performed on
both, crude and defatted seeds (lipid fraction was removed by Soxhlet method of extraction).
Determination of total phenolic content (TPC) was done using Folin-Ciocalteu assay.
Antioxidant activity was investigated through four different tests (FRAP, CUPRAC, DPPH and
ABTS) and obtained results were combined in unique Antioxidant Composite Index (ACI). TPC
values ranged from 50.48 to 121.06 and from 38.04 to 108.17 mg GAE/g dry weight for crude
and defatted grape seed extracts, respectively. Higher phenolic content determined in extracts
obtained from crude seeds could be explained by the presence of lipophilic biologically active
compounds in non-removed lipid fraction. Discrepancies between varieties are presumably
present due to different morphological properties of seeds, environmental and agricultural
conditions. Concerning antioxidant activity, all tests were significantly correlated with TPC,
suggesting the strong contribution of phenolic compounds to this biological activity.

Extraction has been usually performed using petrochemical and volatile organic solvents, but nowadays, increased recognition of environmental pollution has prompted the utilization of green solvents as alternatives. Therefore, the aim of the present study was to exploit deep eutectic solvents (DES) (choline chloride: citric acid and choline chloride: glucose) as solvents for extracting valuable phenolic antioxidants from grapes. Investigation was conducted on ten grape varieties, observing seeds and skin as different matrix. Total polyphenol content (TPC) was determined by Folin-Ciocalteu spectrophotometric microassay. Antioxidant activity was investigated using four different tests and results were combined in a unique Antioxidant Composite Index (ACI) to reveal comprehensive information about this biological activity. Polyphenol compounds were identified and quantified with the aim of HPLC-diode array detector (DAD). Overall results support that DES (particularly choline chloride: citric acid) were comparable to conventional solvent, and in most cases even outperformed acidified aqueous ethanol (concerning extraction efficiency and antioxidant activity). Regardless of varietal distinctions, grape seeds have higher antioxidant capacity compared to grape skin, and such findings are according to their phenol compound concentrations.

AB  - Due to the presence of numerous bioactive compounds, including polysaccharides and polyphenols, mushroom-based food supplements are claimed to have many beneficial health effects. Despite their popularity, concerns have been raised in recent years over the quality of mushroom products, particularly regarding their non-standardized chemical composition. In this study, the β-glucan and total phenolic contents, as well as the antioxidant potential of mushroom-derived supplements available on the Serbian market were analyzed. The obtained results, revealing considerable differences in β-glucan and total polyphenol contents among these products, reflect variations in mushroom species, forms and recommended dosing regimens. A correlation between the total phenolic content and antioxidant activity was observed. The presence of other active ingredients, such as vitamin C, has contributed to antioxidant variability among the analyzed products. The obtained results indicate the need for the standardization of mushroom-derived food supplements to ensure their claiming effects.

Због присуства бројних биоактивних састојака, укључујући полисахариде и поли-феноле, додаци исхрани на бази гљива имају бројне позитивне здравствене ефекте. Поред популарности, последњих година се велика пажња посвећује и квалитету производа од гљива, посебно у погледу њиховог не стандардизованог хемијског састава. У овом раду анализиранје садржајβ-глукана и укупних полифенола, као и антиоксидативни потенцијал додатака исхрани на бази гљива који су доступни на тржишту Србије. Добијени резултати су показали велике разлике у садржају β-глукана и укупних полифенола што се може објаснити различитим врстама гљива, облицима и режимима дозирања. Уочена је корелација између укупног садржаја полифенола и антиоксидативне активности. Присуство других биолошки активних састојака, као што је витамин Ц, допринело је варијабилности антиоксидантне активности између анализираних производа. Добијени резултати указују на потребу за стандардизацијом дoдатака исхрани на бази гљива, како би се осигурао њихов ефекат.

Због присуства бројних биоактивних састојака, укључујући полисахариде и поли-феноле, додаци исхрани на бази гљива имају бројне позитивне здравствене ефекте. Поред популарности, последњих година се велика пажња посвећује и квалитету производа од гљива, посебно у погледу њиховог не стандардизованог хемијског састава. У овом раду анализиранје садржајβ-глукана и укупних полифенола, као и антиоксидативни потенцијал додатака исхрани на бази гљива који су доступни на тржишту Србије. Добијени резултати су показали велике разлике у садржају β-глукана и укупних полифенола што се може објаснити различитим врстама гљива, облицима и режимима дозирања. Уочена је корелација између укупног садржаја полифенола и антиоксидативне активности. Присуство других биолошки активних састојака, као што је витамин Ц, допринело је варијабилности антиоксидантне активности између анализираних производа. Добијени резултати указују на потребу за стандардизацијом дoдатака исхрани на бази гљива, како би се осигурао њихов ефекат.",

Grape Seed Oil Characterization: A Novel Approach for Oil Quality Assessment

AB  - The amount of organic pomace, left behind agricultural processes, is continuously rising in accordance with industrial progress. Grape pomace, generated in the wine industry all over the world, represents a raw material for obtaining valuable products. Grape seeds are especially rich in oil containing bioactive compounds that can have various health-related effects. The aim of the study is to compare the quality of seed oils obtained from six white grapes, including two Serbian autochthonous varieties. Linoleic acid, associated with numerous health benefits, is the major fatty acid in all samples (≈66% of total); α-tocopherol is the main tocopherol homologue. Total polyphenol content ranges from 73.4 to 104.3 mg of gallic acid equivalents per 100 g. In order to provide comprehensive information about antioxidant capacity of grape seed oil (GSO), three tests are performed (ferric ion reducing antioxidant power; 2,2’-diphenyl-1-picrylhydrazyl, and 2,2’-azino-bis(3-ethylbenzthiazoline-6-sulphonic acid) radical scavenging). Antimicrobial activity is investigated against different strains; however, GSO inhibits the growth of Staphylococcus aureus and Candida albicans. Obtained results are used to develop a novel approach for oil quality assessment. Calculated oil quality scores (OQS) reveal no significant difference between international and autochthonous varieties, although Smederevka stands out as the most potent one. Practical applications: Considering the progressive waste increase in the wine industry and keeping in mind all health-promoting effects of grape seed oil (GSO), it is clearly observed that oil production represents a profitable and sustainable utilization of grape seeds. The results of the present study show that GSO is a rich source of compounds with antioxidant and antimicrobial properties. In addition, this work provides deeper insight into a quality of Serbian autochthonous grape varieties that are still insufficiently explored. Furthermore, the proposed oil quality score could be used as a comprehensive and unbiased method that enables quality assessment of oils. This tool can find practical application in comparing different plant oils regarding their compositional and functional properties. Finally, it would contribute to making some general oil intake recommendations.

AB  - Numerous studies have shown, rather disappointingly, that isolated bioactive phytochemicals are not as biologically effective as natural plant products. Such a discrepancy may be explained by the concept of food synergy, which was verified in this research for cocoa extract versus its major components with regard to cancer chemoprevention. The evaluation embraced the relationship between redox properties evaluated in cell-free systems with the aid of free radicals scavenging method and differential pulse voltammetry, and redox associated anticarcinogenic activities (cellular antioxidant activity, cytotoxicity, nutrigenomic activity) in human colon adenocarcinoma cell line exposed to either cocoa powder extract or artificial mixtures of cocoa bioactives at matching concentrations. In contrast to expectations, our results showed that the stepwise enrichment with antioxidants caused no gradual increase in the antioxidant activity of the model mixtures; also, these model mixtures did not reach the reducing potential of cocoa in the cell-free systems or cellular model employed. Further, the biological activities examined in colon adenocarcinoma cells did not alter in a stepwise manner that could reflect the gradual changes in composition of bioactive ingredients. In conclusion, the experiments presented here showed that the growing complexity of a mixture of phytochemicals seems to create a new redox bioactive substance rather than enrich the mixture with new activities, characteristic of the compound added. It follows that no simple, predictable relationship can be expected between the chemopreventive potential and the composition of real food items containing a complicated set of non-toxic redox active ingredients. Our observations suggest that the interactions between different bioactive compounds and food matrix components are cooperating factors determining the final bioactivity of foods.

Sve češće se svrstava u veoma popularnu grupu „funkcionalnih namirnica“. Visok sadržaj biološki aktivnih jedinjenja omogućava fiziološke efekte kakao praha koji prevazilaze uobičajenu nutritivnu ulogu namirnica. Specifičan polifenolni profil uz prisustvo purinskih alkaloida čine ovu namirnicu od posebnog interesa u brojnim studijama i dosadašnji nalazi afirmativni su u kontekstu antioksidativnog i antimikrobnog potencijala, hepatoprotektivnog delovanja, zatim delovanja biološki aktivnih jedinjena kakao praha na rad kardiovaskularnog i nervnog sistema.Prvi eksperimentalni cilj ove disertacije bio je hemijska karakterizacija kakao praha i ispitivanje njegove in vitro antioksidativne i antimikrobne aktivnosti kao i uticaja tehnološke obrade kakao praha na iste. Drugi deo disertacije imao je za cilj ispitivanje uloge biološki aktivnih jedinjenja kakao praha na bihejvioralni fenotip zdravih miševa soja C57BL/6 i procenu in vivo antioksidativne aktivnosti u pogledu enzima antioksidativne zaštite hepatocita suplementiranih miševa.HPLC-DAD-MS karakterizacijom kakao praha identifikovano je i kvantifikovano 17 biološki aktivnih jedinjenja od kojih su najzastupljeniji bili metilksantini (teobromin (14,10 mg/g) i kofein (5,84 mg/g)), zatim monomerni flavan-3oli (epikatehin (1,00 mg/g), katehin (0,51 mg/g) i galokatehin (0,25 mg/g)), nakon čega su sledili oligomerni procijanidini i derivati hidroksibenzoeve kiseline. Prirodni kakao prahovi imali su značajno veći sadržaj ukupnih polifenola, flavonoida, proantocijanidina, i monomernih flavan-3ola u poređenju sa alkalizovanim kakao prahovima i analiziranim grupama čokolada (crne čokolade sa ili bez maline i mlečne čokolade). AB  - Cocoa powder is an industrial product obtained by processing cocoa beans (Theobroma cacao L.) and has a unique flavor and aroma. High content of several biologically active compounds allows various physiological effects of cocoa powder that exceed the usual nutritional role of this food, so it is often classified into a very popular group of "functional foods". Specific polyphenol profile in the presence of purine alkaloids make this food stimulating research topic, and the findings so far are affirmative in the context of antioxidant and antimicrobial potential, hepatoprotective action, as well as the effects on cardiovascular and nervous system.The first experimental goal of this dissertation was the chemical characterization of non-nutritive compounds in cocoa powder, evaluation of its in vitro antioxidant and antimicrobial activities, with the emphasis on the difference between natural and processed cocoa powder properties. The second part of dissertation was focused on examination of the role of cocoa powder or methylxanthines supplementation in doses that were dietary relevant on behavioral phenotype of healthy C57BL/6 mice and on the assessment of in vivo antioxidant activity in regard to antioxidant enzymes in mice liver.HPLC-DAD-MS characterization of cocoa powder has identified and quantified 17 biological active compounds, the most abounded were methylxanthines (teobromine (14,1 mg / g) and caffeine (5.8 mg / g)), followed by monomer flavan-3ols (epicatechin (1.0 mg / g), catechin (0.5 mg / g) and galocatechin (0.26 mg / g)), oligomeric procyanidins and hydroxybenzoic acid derivatives. AB  - Začini su aromatični delovi začinskih biljaka, karakterističnog mirisa i uku-
sa, koji se dodaju tokom pripreme hrane radi postizanja odgovarajućih
organoleptičkih osobina, kao i zbog produženja roka trajanja namirnica.
S obzirom na to da predstavljaju izvore prirodnih antioksidanasa, začini
se smatraju i funkcionalnim sastojcima hrane. Osnovni cilj ovog rada jeste
analiza sadržaja ukupnih polifenola i fl avonoida odabranih začina sa na-
šeg tržišta, kao i komparativna procena njihove antioksidativne aktivnosti.
Istraživanje je sprovedeno na komercijalno dostupnim uzorcima deset ra-
zličitih vrsta začinskog bilja. Nakon ekstrakcije etanolom, sadržaj ukupnih
polifenolnih jedinjenja (Total Polyphenol Content, TPC), kao i sadržaj fl a-
vonoida (Total Flavonoid Content, TFC) određen je spektrofotometrijskim
metodama. Procena antioksidativnog potencijala izvršena je korišćenjem
tri različita testa (FRAP, DPPH, ABTS). Na osnovu dobijenih rezultata, račun-
skim putem određene su vrednosti antioksidativnog kompozitnog indeksa
(ACI). Najveći sadržaj TPC utvrđen je za cimet (61,3 ± 3,1 mg GAE/g), slede
ruzmarin (30,2 ± 3,6 mg GAE/g) i origano (21,0 ± 0,8 mg GAE/g), dok je naj-
manji sadržaj bio prisutan u uzorku vlašca (4,3 ± 0,0 mg GAE/g). Sadržaj TFC
kretao se u rasponu od 3,2 ± 0,4 μmol CE/g (kim) do 133,7 ± 6,1 μmol CE/g
(cimet). U pogledu antioksidativnog potencijala, sva tri testa su pokazala
konzistentne rezultate. Utvrđena je statistički značajna povezanost između
sadržaja TPC i ACI vrednosti (r= 0,976; p< 0,01). Na osnovu dobijenih rezul-
tata može se zaključiti da cimet, ruzmatin i origano predstavljaju bogat
izvor polifenolnih jedinjenja i poseduju izražen antioksidativni potencijal.

are added to food in order to achieve the appropriate organoleptic proper-
ties, as well as to extend their shelf life. Since they are sources of natural an-
tioxidants, spices are considered as functional food ingredients. The main
goal of this research was determination of total polyphenol and fl avonoid
content in selected spices from our market and comparative assessment
of their antioxidant activity. The study was conducted on ten different
commercial samples of herbs. After extraction with ethanol, total polyphe-

AB  - Many factors can influence antioxidative and antimicrobial characteristics of plant materials. The quality of cocoa as functional food ingredient is influenced through its processing. The main aim of this study was to test if there is difference in polyphenol content, antioxidant capacity, and antimicrobial activity between nonalkalized and alkalized cocoa powders. To estimate polyphenol and flavonoid content in cocoa samples the spectrophotometric microassays were used. Flavan-3ols were determined with reversed-phase high-performance liquid chromatography (RP-HPLC). Antimicrobial activity against 3 Gram positive bacteria, 4 Gram negative bacteria and 1 strain of yeast was determined using broth microdilution method. Total polyphenol content was 1.8 times lower in alkalized cocoa samples than in natural ones. Epicatechin/catechin ratio was changed due to the process of alkalization in favor of catechin (2.21 in natural and 1.45 in alkalized cocoa powders). Combined results of 3 antioxidative tests (DPPH, FRAP, ABTS) were used for calculation of RACI (Relative Antioxidant Capacity Index) and GAS (Global Antioxidant Score) values that were consistently higher in natural than in alkalized cocoa extracts. Obtained results have shown significant correlations between these values and phenolic content (0.929  lt = r  lt = 0.957, P  lt  0.01). Antimicrobial activity varied from 5.0 to 25.0 mg/ml (MICs), while Candida albicans was the most sensitive tested microorganism. Cocoa powders subjected to alkalization had significantly reduced content of total and specific phenolic compounds and reduced antioxidant capacity (P  lt  0.05), but their antimicrobial activity was equal for Gram-positive bacteria or even significantly enhanced for Gram-negative bacteria.

Enriched environment alters the behavioral profile of tenascin-C deficient mice

AB  - Tenascin-C (TnC) is an extracellular matrix glycoprotein implicated in a variety of processes ranging from brain development to synaptic plasticity in the adult vertebrates. Although the role of the TnC gene in regulation of behavior has been investigated, it remained elusive how TnC deficiency interacts with the environment in shaping the behavioral phenotype. To address this, 3-week-old TnC+/+ and TnC-/- male mice were housed over an 8-week period in standard conditions (SC), or enriched environment (EE). A comprehensive battery of tests was used in behavioral phenotyping. When housed in SC, TnC-/- mice showed spontaneous nocturnal hyperactivity, as well as poor sensorimotor coordination and low swimming velocity. However, housing of TnC-/- mice in EE abolished hyperlocomotion, led to faster habituation to novel environment, strengthened the grasp of fore limbs and partially improved movement coordination, while the swimming ability remained deficient. Conversely, TnC deficiency attenuated both the beneficial effects of EE on learning/memory capacity and the anxiolytic effect of EE in reducing the level of acrophobia. This study expands the existing knowledge about the phenotype associated with TnC deficiency, and reveals that the effect of genetic background on the behavioral response could be altered by post-weaning housing in a highly stimulating environment.

AB  - The aim of this study was to determine biologically active substances (BAS) in the samples of Cichorium intybus L. leaves from different sources (wild and cultivated) in Montenegro and to investigate the potential influence of location and origin on the BAS. Fiber and fatty acid composition, amount of pigments, total phenols and flavonoids and some phenolic acids were analyzed. Antioxidant activity was also determined by three methods (DPPH, FRAP and ABTS) and the results obtained from all tests were used to calculate the antioxidant potency composite index (ACI). The dietary fiber profile confirmed chicory leaves as an important source of fiber. The majority of fats in chicory leaves consist-of unsaturated fatty acids, while saturated fatty acids were represented mainly by palmitic acid. Chlorophyll a and b, lutein and beta-carotene were the main pigments in chicory leaves. ACI index had a good correlation with the total phenolic and total flavonoid content. All these features reinforced the interest of including chicory in modern diet as a healthy alternative to the variety of commonly used vegetables.

AB  - This paper reports the physicochemical (density, dynamic viscosity, electrical conductivity and refractive index) and the thermodynamic (thermal expansion coefficient, molecular volume, lattice energy and heat capacity) properties of several choline chloride (ChCl) based deep eutectic solvents (DESs), with 1:2 mole ratio, respectively:ChCl:propylene glycol, ChCl:1,3-dimethyl-urea and ChCl:thiourea, at atmospheric pressure as a function of temperature over the range of 293.15-363.15 K. Their properties were also compared with those of some already characterized ChCl-based DESs, namely ChCl:ethylene glycol, ChCl:glycerol and ChCl:urea (1:2 mole ratio). Density, viscosity and refractive index of all DESs decrease with the increasing temperature while the electrical conductivity increases. Viscosity and conductivity of the tested DESs were fitted by both Arrhenius-type and Vogel-Tamman-Fulcher equations. The changes of molar enthalpy, entropy and Gibbs energy of activation, determined using the Eyring theory, demonstrated the interactional factor as predominant over the structural factor for all DES systems. The fractional Walden rule, used to correlate molar conductivity and viscosity, showed an excellent linear behaviour. It was shown that ChCl:propylene glycol DES had properties similar to ChCl:ethylene glycol and ChCl:glycerol DESs. However, the properties (density, viscosity and electrical conductivity) of ChCl:1,3-dimethylurea and ChCl::thiourea DESs were inferior to those of the ChCl:urea DES.

AB  - The leaves of chicory (Cichorium intybus L.) plant have been used for centuries in Montenegro and other Mediterranean countries as a vegetable in salads, sauces and other types of appetizers and meals. The wild and cultivated chicory leaves from different locations in Montenegro were analysed regarding several nutrients, major and trace element as well as vitamin composition, using standard methods of analysis. The results of the study indicated that chicory leaves were rich in total dietary fiber and mineral content and had low energy value. Also, they were potential sources of useful nutrients such as potassium, calcium, manganese, iron, and vitamin A, with the average content of 391.9, 164.7, 0.55, 2.33 and 0.47 mg/100 g in fresh leaves, respectively. Wild plants were superior to the cultivated ones regarding carbohydrate, calcium and manganese content. Origin of the chicory leaves significantly influenced most of the analyzed parameters.

AB  - A heterogeneous reaction process using propylene glycol (PEG), ethyl acetate and diethyl ether as cosolvents for the transesterification of sunflower oil with ethanol in the presence of calcium oxide as a catalyst has been developed. Significant results were obtained with propylene glycol as a cosolvent. Under determined reaction conditions (CaO concentration, based on the oil weight 1.3736 mol∙dm-3; temperature 70°C; and ethanol-to-oil molar ratio 12:1), the conversion of sunflower oil to fatty acid ethyl esters (FAEE) exceeded 98% after 120 min, which was 2 times faster than transesterification of sunflower oil without a cosolvent. After initially enhanced ethanolysis, after 180 min ethyl acetate and diethyl ether negatively influenced the reaction rate and the FAEE yield.
AB  - U radu je opisana heterogena transesterifikacija suncokretovog ulja sa etanolom i kalcijum oksidom kao katalizatorom u prisustvu polietilen glikola (PEG), etil acetata i dietil etra kao kosolvenata. Najpovoljniji rezultati su dobijeni sa polietilen glikolom kao kosolventom gde je, pod određenim reakcionim uslovima (koncentracija CaO, računata u odnosu na masu ulja 1.3736 mol∙dm-3, temperatura 70°C i molarni odnos etanol:ulje 12:1), konverzija suncokretovog ulja u etil estre masnih kiselina (FAEE) dostigla vrednost od 98% nakon 120 minuta, što je 2 puta brže od transesterifikacije suncokretovog ulja bez prisustva kosolventa. Etil acetat i dietil etar poboljšavaju reakciju etanolize na početku, ali, kako reakcija napreduje, posle 180 minuta, njihovo prisustvo u reakcionoj smeši negativno utiče na brzinu reakcije i prinos etil estrara masnih kiselina (FAEE).
